ITINERARY Day 1 Ushuaia, Argentina Embark in Ushuaia, the southernmost city in the world. Settle in onboard and prepare yourself for the adventures ahead. Days 2-3 Cruising the Drake Passage The journey southward towards Antarctica features fast flowing southern ocean currents squeezing between land masses. ouis Vuitton Malletier was born to working class parents in rural France in 1821. At the age of 14, desperate to leave home, he set out on foot to walk to Paris nearly 300 miles away to seek employment. Two years later, he arrived in the City of Light and started working as a trainee clothes packer or layetier, for the rich Parisians. His skills became well known and he was appointed by Napoloeon III to pack the dresses of his wife, the Empress Eugenie. In 1854 Louis left his employer and founded Louis Vuitton Malletier with his first shop on Rue Neuve des Capucines. His, by now, considerable experience led him to design a new range of travelling trunks and steamer luggage. Instead of the usual leather trunks with domed tops (which, although the shape allowed the rain to run off, were heavy and could not be stacked on top of each other), these were flat and rectangular, fashioned not from leather but from grey canvas, strengthened with beechwood slats. Light, hard wearing and stackable made them perfect for travelling by train or ocean-going liners. Most importantly, they were beautiful to look at.
The monogrammed canvas, designed by Vuitton’s son Georges in 1896, is probably what most people associate with the LV brand and was hugely popular with the rich and famous then, as it is now. The Speedy, so named for its practicality and ease of use, was launched in 1930. A similar piece to the Keepall range of soft luggage that all folded flat for ease of storage, this was smaller and could be carried as a handbag. The actress Audrey Hepburn loved the design but thought that the original was still a little bigger than she needed, so she asked Henri-Louis Vuitton to make one of a smaller size. The iconic Speedy 25 was born. For the more energetic the 245m (806ft) summit of Sugarloaf Mountain has a dominant view of the surrounding islands. Getting There ‘The Virgin Island that still is’. Guana Island is a natural Caribbean haven providing a superior, luxury castaway experience.
The closest airport to Guana Island is Terrence B. Lettsome airport (EIS) on Beef Island, British Virgin Islands. Most visitors will have to connect via San Juan (SJU), St. Thomas (STT), or Antigua (ANU). There is then a short transfer to Guana Island via water taxi. All persons entering the BVI must have a valid passport with at least six months remaining. Upon initial entry, a stay of no more than 30 days will be granted. At the end of 30 days, visitors must report to the Immigration Department’s main office in Road Town, Tortola to request an extension. There is a $15 USD departure tax and $5 USD security charge (per person) payable on leaving the BVI by air. A $5 USD security charge (per person) is payable on leaving the BVI by sea.

Getting there The nearest airport is Naples International Airport (NAP), linking Italy’s Campania region with other national and international airports. If you cannot fly direct to Naples, most airlines fly to Rome International airport (FCO). The island of Capri is hugely accessible by a wide range of transports from many different locations. Boats, Hydrofoils and Ferries transfer to the island daily from ports all along the coast. Napoli Central Railway Station is an obligatory stop for nearly all trains heading up or down the italian peninsula providing easy access to the ports. Taxis are available. Method
Slip a knife between the shells and cut through the large white muscle. Pry open the shell and gently remove everything. Remove the skirt and roe and pat dry with a tea towel. avoid running under a tap as you will lose a lot of the flavour. Clean and wash shell and keep for serving. Slice the chilli thinly on the angle and mix together with the lime juice, red onion and tomato. Slice the scallop very thinly with a very sharp filleting knife, if you have one. mix through the rest of the ingredients gently and allow to sit for 2 minutes. in this process you are curing the scallop with the acid from the lime and infusing with all the other mouth watering flavours. When the lime juice has cured the scallops, layer the mix in the scallop shell as we have done in the picture and finish off with baby coriander cress. put some rock salt on the plate and sit your scallop shell on top and serve with a lemon cheek. A truly refreshing starter which will get your taste buds working for your main course.

I believe that a great meal is about buying great produce, cooking and preparing it simply and letting the ingredients do the talking. One of my favourite dishes on the current menu is the scallops ceviche. Served in the shell, the fresh taste is enhanced by a fusion of flavours. The scallops are cured with lime juice and served with a red onion, tomato and chilli garnish. I buy my scallops from a local fishmonger, close to the city, in Newhaven harbour. Buy from a local producer, where possible, as you can’t beat the quality, freshness and taste. To compliment this dish I would suggest a chilled glass of Viognier reserve, Montevista from Chile. I recommend you try this simple yet classic dish when you come to stay with us.

Sancerre Featuring 2010 Sancerre
‘Les Monts Damnés’ Domaine François Cotat Sancerre is one of the classic French wine regions which produces vibrant, aromatic, dry white wines from sauvignon blanc vinified in a manner which emphasises the purity and clarity of fruit flavours.
A common feature to the overwhelming majority of French wine labels is an absence of the grape varieties, in contrast to new world wines where the grape variety features prominently on the label. At the heart of the European wine ideal is the belief that the most important factors influencing a wine’s character are the soil, climate and culture of the area where the grape is grown. The idea is that Sancerre is more than just sauvignon blanc and the wines are imparted with a unique and distinctive character. This is especially important to single vineyard wines in capturing the essence of a specific patch of land. The featured Sancerre is a reflection of a single vineyard – ‘Les Monts Damnés’ from a single year’s growing season. Furthermore, note the differing font size of “Sancerre” and “Chavignol” on the label, and how the vigneron, François Cotat attaches greater emphasis to the name of his local commune (Chavignol) within the Sancerre appellation. This is a man who has very well sited vineyards and it shows in the excellence of his wines. Sancerre typically starts at around £10 per bottle, so what does this £26 wine deliver? The expectation is often one of ‘much more of everything’, ‘bigger with more force’, which is not necessarily the case. There is an increased intensity of flavour, complexity and in particular, a persistence of flavour lingering on the palate which is the key quality factor. This is a wine revealing subtleties and nuances over the course of a bottle rather than delivering an immediate upfront burst of flavour which then briskly fades away. François Cotat’s style is a very restrained, reserved and mineral expression of sauvignon blanc. This is a Sancerre with depth, complexity, great texture and power, notable for its pin-point focused purity of fruit flavour and perfumed aromas. The “secret” is steep-sided vineyards, old vines, and years of experience. François adopts a very traditional, non-interventionist approach, barrel-fermenting the juice in old demi-muids using natural yeasts. With Simon Bradfield t was in 1789 when the captain of a British Royal Navy ship crossing the vast expanse of the South Pacific spotted a small group of islands low on the horizon.
I
It’s obvious why Bligh was so taken with the place. However there’s a lot of thin, high cloud diffusing the light and though it’s been a hugely enjoyable day, photographically, it doesn’t work.
“I could not get near the shore on account of the wind,” the captain wrote in his log, captivated by what he’d seen. “Nevertheless, there appeared broken water between all the Keys and I am inclined to think they are all joined by a reef. I saw no smoke or any sign of inhabitants, it is scarcely to be imagined however, that so charming a little spot is without them.” The captain of the ship was one William Bligh, the ship was the infamous HMS Bounty and eighteen days later ship and captain would part company in the most famous mutiny in history.
The overcast weather persists and I am beginning to worry. We only have a couple of days left and I haven’t got the shot I want. That’s the thing about dream locations - if the weather’s against you, you can come away with nothing. For a photographer that can be very embarrassing, so we book another trip out onto the lagoon and I send a silent prayer skywards. As we head out onto the lagoon, I can see a bank of clouds off to the west. I’m hoping it’ll stay put, especially as we approach one of the motu to the south of the lagoon. It is looking promising...
The tale of the Bounty is full of skullduggery, daring-do and exotic, dusky maidens. On this occasion, however, I’m more interested in the islands that captivated Bligh than on what happened to him, his ship or his mutinous crew. That’s because the island is Aitutaki, one of the Cook Islands and it’s one of the most beautiful places on Earth.
We beach our small boat and whilst I don’t necessarily dash, I get ahead of the rest of the party. Gaudy beach towels don’t feature in my perceived final image. I’m using a Canon 5D Mk II with a Canon 28-70mm f2.8 L lens (with a circular polarizing filter, just to plump up the colours a bit). The camera is a sturdy full-frame affair, absolutely perfect for landscape work. However Canon stopped making this 28-70mm lens almost ten years ago and whilst it weighs a ton and the range isn’t as great as some lenses, the image quality is phenomenal.
With ukelele music still ringing in the ears, we head from the tiny airfield out onto the main island. We whizz through a sea of lush green grasses and swaying palm trees and the photographer in me starts to work out what it is I want from this trip (beyond a tan, some lobster and a bottle or two of the excellent Captain Cook beer). I shoot a lot of landscape & travel images for iStock, a subsidiary of Getty Images and one of the world’s leading stock photography libraries and I want a shot that captures some of the spirit of the place. The first European visitors to the region, explorers such as Magellan, Cook and de Bourgainville, amazed the folk back home with tales of beautiful yet remote islands on the far side of the world and I think that perception has lasted to this day, so at the first opportunity we take a cruise out onto the lagoon to explore it for ourselves. It is spectacular, with crystal clear waters filled with brightly coloured fish, and dotted with numerous deserted, palm-fringed motu (islands to you and me).

So with camera at the ready, I circle the island, looking for my shot. With the rest of the party hot on my heels, I stumble across a stretch of beach with all the elements I want. There’s the palm tree, turquoise waters (complete with waves crashing on a reef) and sunshine with dramatic clouds in the distance... feels very 'South Pacific' to me. So I set up, compose, adjust the polarizer, focus, check aperture and exposure and... click. I fire off a few shots, checking the camera’s histogram as I go. Battle against sleep deprivation and adverse weather conditions as you scale the summits of Ben Nevis, Scafell Pike and Snowdon, absorbing the breathtaking views as you climb. Many variations of the ‘Three Peak Challenge’ exist, however the primary goal is to ascend and descend all three mountains within 24hrs, finishing the challenge upon return to the beginning of the final trail. Due to its height and difficulty, Ben Nevis is the recommended starting point. Maximum climbing times are approximatley four hours for Snowdon and five hours for Ben Nevis and Scafell Pike. Target time should be at least 30mins less than the stated maximum. It’s not a gentle walk but times are achievable for relatively fit people.When three climbs are attempted in under 24hrs, the objective becomes far more difficult; draining your energy and depriving you of sleep.

Each mountain offers multiple ascents to the peak, the most popular trails start from the Visitor centre (Ben Nevis), Wasdale Head (Scafell Pike) and Pen-y-Pass (Snowdon). Route maps of each trail are available from Ordinance Survey and are a necessity for anyone attempting this challenge. The driving route between the three peaks covers approximatly 500 miles (800km). Directions are straight forward however a Sat Nav and road map are essential. WHERE ON EARTH? WITH STEVE CLARK-HALL With titles such as Calender Girls, Rocknrolla & Sherlock homes under his belt, Steve Clark-Hall is a celebrated British film producer. We caught up with Steve in the lobby of The Dorchester Hotel, London to find out where on earth his 30 plus years in the film business has taken him.
Where were you last? Los Angeles. Would you recommend it, and why? I was there for work - being in the film business Los Angeles is a necessary destination, but as a visitor it is really not an exciting place to go - all motorways and face-lifts. Describe a memorable experience from a childhood trip? Jet travel did not exist, so travel was very different. We would go to Holland every summer, travelling by train, over-night Ferry and then train again. It was a very romantic and exciting adventure, and the big surprise for a boy from London was to see police with guns! And then windmills. It was shortly after the Second World War, and travelling to Europe seemed incredibly daring and dangerous to me. Although to be fair, Holland, then as now, was a beautiful, well organised and welcoming Country. If you could turn back time where would you visit again, and why? Nepal - I was there earlier this year, and trekking in the mountains was one of the most challenging and thrilling experiences of my life. You would be advised to take training more seriously than my wife and I who pretty much restricted it to buying smart boots in Covent Garden, and this I have to tell you was not sufficient. But the people, society and majesty of the Himalayas were all worth the pain. What are your top three travel essentials? Credit Card, wet wipes and a sense of humour. Where on earth is your favourite city? Its a toss up between New York and London. If you had to move abroad where would you live? New York What is the best view you have ever experienced? Dawn and the view across the Valley from the village of Lumu in Eastern Kenya towards Maasai Land.

Where is the harshest environment you've visited? The Slums of Nairobi Who is the most interesting person you have met abroad? Aniruddha Chhetri an extraordinary lady who runs a refuge for victims of human trafficking in Kathamandu. Which is the most prestigious and luxurious hotel or resort you have stayed in? I am not a big one for Grand Luxury preferring to travel to more remote and out of the way places, however some years ago while touring in India I saw this White Marble Palace in the middle of a lake in Udaipur in Rajasthan - I took a boat to it, and was so enchanted stayed for three days. Then it was not very well used, but now I believe the Lake Palace Hotel is a prime Luxury destination. What was your longest delay, what happened? Four years ago I was scheduled to fly to Cyprus - my flight was due to leave Gatwick at 7 am so I stayed overnight at the airport hotel. The flight indicator announced a delay so I settled down to wait, and wait and wait. It was an EasyJet Flight so information was hard to come by. Around lunchtime I demanded to know what was happening, eventually someone admitted they could not find the pilot. That did not sound good to me so I went home, and am still waiting for my first trip to Cyprus. What are your three pet hates when traveling? Nothing - every time i get to travel I think it is a privilege, and try to accept the discomforts and frustrations with good grace. Although people who are rude to Cabin staff are pretty vile. Come clean, name one thing you've liberated from a hotel room? I honestly don't bother. I am much more worried about things I leave behind. Where on earth is Chisinau? Romania? Editor - Good try! The answer is Moldova. Steve's latest project 'Sherlock Homes, A Game Of Shadows', is due for UK release later this month.
