balanced BOWLS Chicken Ramen Bowl
Prep:10 mins Cook: 20 mins Serves: 4
ingredients:
2 eggs 4 cups chicken broth, low sodium 1 ½ tsp soy sauce, reduced sodium 2 chicken breast fillets, boneless and skinless (approx. 5-6 oz. each) 6-8 oz. ramen noodles (or thin spaghetti) ½ cup red cabbage, sliced ½ cup green cabbage, sliced 1 cup carrots, shredded 2 green onions, chopped hot chili oil or sriracha, to taste
directions:
1. Add whole eggs (shell on) to a medium size saucepan and add enough water to cover eggs by 1 inch. Bring to a boil, then remove from heat. Cover saucepan and let sit for 7 minutes. Remove eggs with tongs or a slotted spoon and submerge in a bowl of ice water. Set aside. This process will yield soft set eggs which are typically used in ramen bowls, if you prefer you can use hard boiled eggs instead. 2. Meanwhile, in a separate soup pot (or medium saucepan) add chicken broth and soy sauce and bring to a boil. Add the chicken breasts and continue cooking until thoroughly cooked (about 8-10 min.). Remove chicken breasts from broth, let cool to touch, and shred with two forks. Return shredded chicken to broth. 3. Add ramen noodles to pot with broth and shredded chicken. Cook noodles according to time indicated on package (approx. 3-5 min.) Add additional chicken broth or water as necessary. Add salt/pepper to taste. 4. Peel and halve eggs, set aside. 5. Remove soup from heat. Add cabbage and carrots. Serve immediately. Garnish with one egg half and chopped green onions. Drizzle chili oil according to taste.

½ cup dried quinoa ½ cup black beans, drained and rinsed ½ red pepper, diced ½ avocado, sliced Pinch of parsley, chopped ¼ cup corn ½ red onion, diced 6 cherry tomatoes, halved 2 tbsp rice wine vinegar
directions:
1. Cook quinoa according to package instructions. 2. Top with black beans, red pepper, avocado, parsley, corn, onions and cherry tomatoes. 3. Splash with the rice wine vinegar.

Greek Chicken Bowl Prep:1 hr Cook: 30 mins Serves: 5
ingredients:
1 cup brown rice 1½ lbs cherry tomatoes, halved
for the chicken:
2 lbs boneless, skinless chicken breasts ¼ cup olive oil 3 cloves garlic, minced Juice of 1 lemon 1 tbsp red wine vinegar 1 tbsp dried oregano Kosher salt and black pepper, freshly ground 2 tbsp olive oil
for the cucumber salad:
2 English cucumbers, peeled and sliced ½ cup red onion, thinly sliced Juice of 1 lemon 2 tbsp olive oil 1 tbsp red wine vinegar 2 cloves garlic, pressed ½ tsp oregano, dried
for the tzatziki sauce:
1 cup plain Greek yogurt 1 English cucumber, finely diced 2 cloves garlic, pressed 1 tbsp fresh dill, chopped 1 tbsp lemon juice, freshly squeezed 1 tsp lemon zest 1 tsp fresh mint, chopped Kosher salt & black pepper, freshly ground 2 tbsp olive oil
directions:
1. In a gallon size Ziploc bag, combine chicken, ¼ cup olive oil, garlic, lemon juice, red wine vinegar and oregano; season with salt and pepper, to taste. Marinate for at least 20 minutes to 1 hour, turning the bag occasionally. Drain the chicken from the marinade, discarding the marinade. 2. Heat olive oil in a large skillet over medium high heat. Add chicken to the skillet and cook, flipping once, until cooked through, about 3-4 minutes per side. Let cool before dicing into bite-size pieces. 3. To make the cucumber salad, combine cucumbers, onion, lemon juice, olive oil, red wine vinegar, garlic and oregano in a small bowl; set aside. 4. To make the tzatziki sauce, combine Greek yogurt, cucumber, garlic, dill, lemon juice, lemon zest and mint in a small bowl; season with salt and pepper, to taste. Drizzle with olive oil. Refrigerate for at least 10 minutes, allowing the flavors to meld; set aside. 5. In a large saucepan of 2 cups water, cook rice according to package instructions; set aside. 6. Divide rice evenly into serving bowls. Top with chicken, cucumber salad, tomatoes and tzatziki sauce.
Southwest Quinoa Bowl Prep: 5 mins Cook: 20 mins Serves: 2
ingredients:
½ cup quinoa ¼ tsp adobo seasoning (or a southwest flavor seasoning) ¼ tsp salt 2 tsp olive oil 1 medium sweet potato, chopped ¼ cup onion, chopped ½ cup canned black beans, rinsed 1 medium red bell pepper, sliced 1 medium avocado, sliced Cilantro for garnish
honey lime dressing:
2 tbsp canned coconut milk* 1 tbsp water 1 tsp olive oil Juice of 1 lime, about 3 tbsp 1 tbsp raw honey tsp salt, or more to taste
directions:
1. Rinse quinoa in fine mesh strainer and place in small pot of water with 1 ½ cups of water. Allow pot to come to a boil, add in your seasoning and simmer for about 15 minutes, until quinoa is tender and water has mostly gone. 2. While the quinoa is cooking, cook chopped sweet potato and onion in medium pan with olive oil. Add salt and pepper, or more seasoning if you wish. Cook on medium heat until tender, about 10-15 minutes. 3. In a medium bowl whisk together all ingredients. 4. Distribute quinoa, potatoes and onions, black beans, bell pepper, and sliced avocado in two serving bowls. Dress with honey lime dressing and garnish with cilantro if you wish, enjoy! *can sub plain greek yogurt for coconut milk

1. Buy the freshest medium roast coffee beans possible, roasted locally if you can find them. The fresher the bean, the better the coffee. 2. Start with a ratio of ½ cup coarsely ground coffee beans to 1 ½ cups filtered water (or any 3:1 ratio of water to grounds will work). 3. Pour your grounds and water into a large glass jar. Stir with a plastic or wooden spoon (metal can affect the taste of the coffee). Cover and let steep for 24 hours at room temp. After the 24 hour period, you can either finish the coffee at the base strength, or you can move it to the fridge and let steep for another 24-48 hours for a stronger brew. 4. Once your coffee has reached the desired strength, use cheese cloth, a fine mesh sieve, or a paper filter to separate the grounds from the coffee concentrate. 5. Store your coffee in the refrigerator for up to a week. After that, discard the coffee, as it will start to break down and the flavor will begin to degrade.

Chocolate Chip Cookie Dough Truffles Prep: 1hr Cook: 30min Total Time: 1hr 30min | Yields: 4 Servings
Ingredients 2 tbsp. Chobani® Plain Non-Fat 1 1/4 cup all-purpose flour Greek Yogurt 1/2 tsp. salt 1/2 cup (1 stick) unsalted butter, 1/2 cup mini semi-sweet room temperature chocolate chips 1/2 cup light brown sugar, packed 1/2 cup granulated sugar 1 tsp. vanilla extract
8 oz. dark chocolate candy coating (you can also try milk or white chocolate)
Preparation STEP 1 In a large bowl, beat the butter and sugars with an electric mixer on medium speed until light and fluffy, two to three minutes. Mix in the Chobani® Greek Yogurt and vanilla. Stir in the flour and salt and mix on low speed (or by hand) until incorporated. Stir in the chocolate chips. Cover and chill dough for 30 minutes or until firm enough to handle.

Tap the fork on the edge of the bowl to shake off the excess coating, and return the truffles to the baking sheets to set. Feel free to sprinkle with an extra topping, like toasted coconut, cocoa powder or sprinkles. STEP 4 Refrigerate in an airtight container. Truffles will keep for up to one week.

Orange Vanilla Ice Cream Cubes Makes 1 ice cube tray • 2 floats
ingredients:
¾ cup whole milk 1 cup heavy cream 4 tbsp sugar 2 tsp orange extract ½ tsp vanilla extract Pinch of salt Orange zest
directions:
1. Combine milk, heavy cream, sugar, extracts & salt straight into a medium sized pot. 2. Place pot over high heat. Continue to stir while the milk heats and the sugar dissolves (continual stirring prevents your sugar from burning on the bottom of the pot). 3. Continue stirring until the mixture comes to a boil, then remove from the heat entirely and let the mixture cool to room temperature. 4. Add orange zest. 5. Once the liquid is cooled, pour into ice cube tray. 6. Freeze in ice cube tray for 4 hours +. 7. Serve cubes in a glass with 7up or Sprite. Top with whipped topping, orange slices or sprinkles. Add a straw and enjoy!
