D ps Those mid-morning and mid-afternoon lulls are the perfect time for snacking, but not all snacks are created equal. We all know we should be eating more fruits and vegetables, but sometimes it can be hard to get excited about another raw veggie snack. These homemade, flavor-packed dips are the solution. Boring vegetables are elevated to become the perfect vehicles for these tasty dips!

HUMMUS INGREDIENTS • • • • • • • •

Two (15-ounce) cans chickpeas (garbanzo beans) drained, liquid reserved 2 cloves garlic, minced 11/2 teaspoons kosher salt 1/2 teaspoon ground cumin 1/ 3 cup tahini*, stirred well 5 tablespoons freshly squeezed lemon juice 1/4 cup extra-virgin olive oil, plus extra for serving Smoked paprika to taste, optional

Place the chickpeas in the bowl of a food processor along with the garlic, salt, and cumin. Process for 20 to 30 seconds. Scrape down the sides of the bowl, add the tahini and process for another 15 seconds. Add the lemon juice and 1/4 cup of the reserved bean liquid and process for 20 seconds, then scrape down the sides of the bowl. With the processor running, drizzle in the olive oil and process another 20 seconds or until smooth. To serve, transfer the hummus to a bowl and drizzle with additional olive oil and sprinkle with smoked paprika if desired.

*TAHINI is a condiment made from toasted ground hulled sesame. You can find it in your local Price Chopper in the condiments aisle near the olives.

Preheat the oven to 450° with a rack in the upper third of the oven. Line a large, rimmed baking sheet with parchment paper to prevent the eggplant from sticking to the pan. Halve the eggplants lengthwise and brush the cut sides lightly with olive oil. Place them in the prepared pan with the halved sides down. Roast the eggplant until the interior is very tender throughout and the skin is collapsing, about 35 to 40 minutes. Set the eggplants aside to cool for a few minutes, then flip them over and scoop out the flesh with a large spoon, leaving the skin behind. Place a mesh strainer over a mixing bowl, then transfer the flesh to the strainer and discard the skins. Pick out any stray bits of eggplant skin and discard. Remove as much moisture from the eggplant as possible; let the eggplant rest for a few minutes and shake/stir the eggplant to release some more moisture. Discard all of the eggplant drippings, drain and wipe out the bowl, and dump the eggplant into the bowl. Add the garlic and lemon juice to the eggplant and stir vigorously with a fork until eggplant breaks down. Add the tahini to the bowl and stir until it’s incorporated. While stirring, slowly drizzle in the olive oil. Continue stirring until the mixture is pale and creamy, and use your fork to break up any particularly long strings of eggplant. Stir in the parsley and cumin. Season to taste with salt and more lemon juice, if you’d like a more tart flavor. Transfer the baba ganoush to a serving bowl and lightly drizzle olive oil on top, then sprinkle parsley and smoked paprika on top. Serve with accompaniments of your choice.

In a large bowl, whisk together red wine vinegar, lime juice, olive oil, salt, and pepper. Add black beans, corn, tomato, red onion, and cilantro and mix to evenly combine. Gently fold in avocados. Chill in the refrigerator for one hour before serving to allow flavors to combine.

WHITE BEAN DIP with Herbs INGREDIENTS

Heat olive oil in a pan over medium heat. Add garlic, thyme, and rosemary and sauté for 2-3 minutes, or until garlic is fragrant and begins to soften. Transfer sautéed mixture to a food processor, then add beans, red wine vinegar, salt, and pepper. Blend on high until dip is smooth and creamy. Taste to adjust salt and pepper if needed.

If Serving Warm

Pour dip into a bowl and top with a drizzle of olive oil and any additional optional toppings. Serve with toasted baguette slices.

If Serving Cold

Pour dip into a bowl, cover and place in the refrigerator for at least an hour. Remove from the refrigerator when ready to use and top with a drizzle of olive oil and any additional optional toppings.

Spaghetti Squash

In the quest to replace carbs, few stand-ins are as delicious as spaghetti squash. When roasted, it transforms to a buttery, spaghetti-like texture that can be paired with a variety of flavors. These recipes contain fatty ingredients like heavy cream and cheese, but they're balanced with the removal of pasta carbs.

Spaghetti Squash CHICKEN PARMESAN INGREDIENTS • • • • • • • • • • • •

1 medium spaghetti squash 2 tablespoons olive oil Kosher salt and freshly ground black pepper, to taste 1 cup vegetable oil 3/4 cup Italian style breadcrumbs 1/4 cup freshly grated Parmesan 2 boneless, skinless chicken breasts, cut crosswise in half 1/2 cup all-purpose flour 2 large eggs, beaten 11/2 cups tomato sauce 1 cup shredded mozzarella cheese 2 tablespoons chopped fresh parsley leaves, optional

Preheat oven to 375°. Lightly oil a baking sheet or coat with nonstick spray. Cut the squash in half lengthwise from stem to tail and scrape out the seeds. Drizzle with olive oil and season with salt and pepper, to taste. 3. Place squash, cut-side down, onto the prepared baking dish. Place into oven and roast until tender, about 35-45 minutes. Remove from oven and let rest until cool enough to handle. 4. Using a fork, scrape the flesh to create long strands. 5. Heat vegetable oil in a large skillet over medium high heat. 6. In a large bowl, combine breadcrumbs and Parmesan; set aside. 7. Working one at a time, dredge chicken in flour, dip into eggs, then dredge in breadcrumbs mixture, pressing to coat. 8. Add chicken to the skillet and cook until evenly golden and crispy, about 3-4 minutes on each side. Transfer to a paper towel-lined plate. Let cool before dicing into bite-size pieces. 9. Preheat oven to broil. Lightly oil a large oven-proof skillet or baking dish or coat with nonstick spray. Add spaghetti squash to the prepared skillet or baking dish and layer with chicken and tomato sauce; sprinkle with cheese. 10. Place into oven and cook until cheese is melted and golden brown, about 2 minutes. Serve immediately, garnished with parsley, if desired.

1 medium spaghetti squash 2 tablespoons olive oil Kosher salt and freshly ground black pepper, to taste 1/2 cup onion, chopped 2 garlic cloves, minced 1/2 cup red pepper, chopped 1 jalapeño pepper, chopped (remove seeds for less spice) 1/2 cup canned corn, drained and rinsed 1/ 3 cup canned black beans, drained and rinsed 1/2 pound lean ground turkey 2 tablespoons taco seasoning 1/2 cup Mexican Blend shredded cheese Optional toppings: cilantro, sour cream, salsa

Stir in the taco seasonings and spices, and then add to the cooked vegetable and pepper mix. Scoop the vegetable and turkey mixture into each squash boat and top with cheese (optional). Place in the oven on low broil for 2-4 minutes until slightly browned. Top with cilantro, sour cream, salsa, or your favorite toppings!

Place both halves on a baking sheet, cut side up, stabilized by a small foil ring wrapped around the bottom of each half. Sprinkle fresh cracked pepper over each half. In a large bowl, combine minced garlic, heavy cream, water, crumbled bouillon cube, chives, and fresh thyme. Mix well. Sprinkle half of the shredded cheese in the cavities of each squash halves. Divide the cream mixture on top of the cheese in each half, then top each half with remaining cheese. Roast in the oven for 40 to 50 minutes, or until the flesh of the spaghetti squash is very tender when poked with a fork. Remove from oven and serve immediately.

cauliflower Cauliflower is such a versatile vegetable and can be manipulated in different ways to create a variety of meals without sacrificing flavor. The recipes in this section are intended to provide a base for you to build your own ideas from. Add your choice of toppings to the Cauliflower Pizza Crust, mix your favorite proteins into the Cauliflower Fried Rice, and try a variety of sauces on the Cauliflower Gnocchi.

cauliflower pizza crust INGREDIENTS • • • • • • •

1 head cauliflower, chopped 2 large eggs 1/2 cup shredded mozzarella cheese 2 tablespoons freshly grated Parmesan 1 tablespoon Italian seasoning Kosher salt, to taste Freshly ground black pepper, to taste

Preheat oven to 425°. Line a baking sheet with parchment paper; set aside. To make the cauliflower crust, add cauliflower to the bowl of a food processor and pulse until finely ground, yielding about 2-3 cups. Transfer cauliflower to a microwave-safe bowl. Cover loosely and place into microwave for 4-5 minutes, or until softened; let cool. Using a clean dish towel or cheese cloth, drain cauliflower completely, removing as much water as possible. Transfer cauliflower to a large bowl. Stir in eggs, mozzarella, Parmesan, and Italian seasoning; season with salt and pepper, to taste. Spread cauliflower mixture into a 15- by 10-inch rectangle onto the prepared baking sheet. Spray lightly with nonstick spray and bake for 12-15 minutes, or until golden. Add desired toppings. Return for 3-5 minutes to allow toppings to warm. Serve immediately.

1 head cauliflower 2 tablespoons sesame oil, divided 1 large carrot, cubed 2 garlic cloves, minced 1 cup frozen edamame 2 eggs, beaten 3 tablespoons low sodium soy sauce 1 bunch green onions, sliced thin

Shred cauliflower using the largest side of a grater or by pulsing some rough cut pieces in a food processor; the end product should resemble smallish grains of rice. Heat 1 tablespoon sesame oil in a large skillet over medium low heat. Add the carrot and garlic and stir fry until fragrant, about 5 minutes. Add the cauliflower, edamame, and remaining sesame oil to the pan; stir fry quickly to cook the cauliflower to a soft (but not mushy) texture. Make a well in the middle, turn the heat down, and add the eggs. Stir gently and continuously until the eggs are fully cooked. Stir in the soy sauce and green onions just before serving.

1 head cauliflower, chopped 2 cups shredded mozzarella 2 egg yolks 1 cup grated Parmesan, plus more for serving 1/ 3 cup almond flour Kosher salt Marinara sauce, warmed, for serving Freshly chopped parsley, for garnish

Divide dough into 4 balls and refrigerate until firm, about 10 minutes.

Add cauliflower to the bowl of a food processor and pulse until finely ground, yielding about 2-3 cups. 2. Add an inch or two of water to a saucepan and insert a steamer basket lined with a clean dish towel or cheese cloth. The surface of the water should be under the basket; pour out some water if necessary. Bring the water to a boil over high heat. 3. Place riced cauliflower in the lined steamer basket and steam for approximately 25 minutes. 4. Let cool slightly, then use the dish towel or cheese cloth to drain cauliflower completely, removing as much water as possible. 5. Transfer cauliflower to a large bowl. 6. Melt mozzarella in the microwave for 1 minute. 7. Stir egg yolks, Parmesan, and almond flour into riced cauliflower, then season with salt. Stir in melted mozzarella. You may need to use your hands to fully incorporate all ingredients. 8. Divide dough into 4 balls and refrigerate until firm, about 10 minutes. Preheat oven to 350°. Heat oil in a large skillet over medium heat. Add onion and cook, stirring, until soft, about 5 minutes. Add garlic, cumin, and chili powder and season with salt. Cook until fragrant, about 1 minute. Add chicken and 1 cup of enchilada sauce and stir until coated.

On a cutting board, use a vegetable peeler to peel thin slices of zucchini. Lay out 3 slices, slightly overlapping, and top with a spoonful of chicken mixture. Roll up and transfer to a baking dish. 4 slices bacon 1/2 medium lemon 1/4 cup reduced-fat mayonnaise 4 large basil leaves, finely chopped 4 large Bibb lettuce leaves 2 medium Roma tomatoes, thinly sliced 2 large hardboiled eggs, peeled and sliced 1/ 8 teaspoon freshly ground black pepper

Cook bacon to desired doneness. Set aside on a paper towel-lined plate to drain excess fat. Grate 1/4 teaspoon zest from the lemon into a small bowl. Squeeze about 1 teaspoon lemon juice into the bowl. Stir in mayonnaise and basil.

Tips To remove leaves from head of cabbage, cut approximately 1/4" off the bottom of the head and place the whole head of cabbage in boiling water. Boil about 2 minutes. Remove from water and peel off the softened leaves. Place remaining head back in the boiling water and repeat until all of the leaves are removed. Remove any tough stems from cooked leaves. If you have some smaller leaves and still have filling leftover just overlap the leaves as needed. The rolls will still cook up perfectly.

1 head green cabbage 1 cup uncooked rice 1/2 pound ground beef 1 pound ground pork (or ground turkey) 2 small onions, diced 3 cloves garlic, minced 1/2 teaspoon dill weed 3 tablespoons fresh parsley One (14-ounce) can diced tomatoes 1/ 3 cup plus 11/2 cups tomato sauce, divided Kosher salt, to taste Freshly ground black pepper, to taste 1 egg 1 can Campbell's condensed tomato soup

Boil cabbage leaves about 2 minutes or until soft (see TIPS above for removing leaves). Set aside to cool. Preheat oven to 350°. Cook rice according to package directions but reduce cooking time by 5 minutes so the rice is slightly underdone. Set aside. Cook beef, pork (or turkey), onions, garlic, and seasonings until meat is cooked through. Drain fat. Add in rice, diced tomatoes, 1/ 3 cup of tomato sauce, salt, and pepper. Stir in egg. Mix 11/2 cups tomato sauce and tomato soup in a bowl. Spread a very thin layer of the tomato sauce mixture in a 9- by 13-inch baking dish.

Remove or thin any thick stems on cabbage leaves. Lay a cabbage leaf flat and add 1/ 3 cup filling to the center of the leaf. Fold in the sides and roll the cabbage up. Place seam side down in the pan (see TIPS above for small leaves). Repeat with remaining cabbage. Pour remaining sauce over the cabbage rolls and cover tightly with foil. Bake 75-90 minutes. Let cool 15 minutes before serving.

In a large bowl, stir together shrimp, cumin, lime juice, cilantro, garlic, and 2 tablespoons oil and season with salt and pepper. Toss until combined, then let marinate in the refrigerator 10 minutes. In a large skillet over medium heat, heat remaining tablespoon oil. Add shrimp and marinade and cook until pink, 2 minutes per side.

Add shrimp and avocado to lettuce, drizzle with sour cream, and garnish with cilantro.

Bring water to a boil. Once boiling, add rice and cover. Let simmer for 20 minutes. In separate saucepan, slowly bring to boil coconut milk, sugar, and salt. Once boiling, remove from heat, and gently stir into cooked rice. Simmer until liquid is absorbed and rice is sticky. Refrigerate for 1 hour.

Place fruit roll on sushi mat.* Add a thin layer of coconut rice to fruit roll. Add fruit in an even layer. Add another thin layer of rice and use sushi mat to wrap fruit roll around rice. Enjoy immediately.
