Ingredients
4 fluid ounces rum, 1 cup fresh coconut-pineapple juice, 4 cubes ice
Directions
Fill 2 tall glasses half full with ice. Pour 2 ounces of rum in each. Fill the glasses with fresh coconut-pineapple juice. Stir and enjoy the sunset.
Amar al-Deen
Pours well and looks great in a glass. The smell is a very basic malt and hops with more emphasis on the former rather than the latter. Drinking this beer is enjoyable. Light, crisp, refreshing example of a macro lager. It is best served on tap from a tall, ice-cold Peroni glass. Nice creamy white head with fair retention. Page

heets of apricot are cut and soaked in water for hours. The solution is then mixed with enough water to make it smooth. Amar-el-deen (colloquially pronounced more like “amar-ideen”), an apricot drink that my eldest aunt – Dad’s oldest sister – would serve at the beginning of the iftar. The apricots are dried and made into a paste, then rolled into sheets and wrapped; these sheets are the amar-el-deen. When soaked overnight, the paste turns into a rich nectar, and when mixed with a drop of rosewater, becomes a sweet and refreshing drink. Amar-el-deen can be prepared in a variety of ways. It’s lovely when chilled and layered (like a trifle) with rich, orange-blossom milk pudding. Or, it can be enjoyed on its own, like an all-fruit roll-up.

rozen peas are available year round, but fresh garden peas are in season from early June until late July. Mangetout are undeveloped garden peas, picked while the pod is still edible. Similarly, petits pois are young garden peas that are picked and shelled when small, young and tender. Unlike mangetout pods, the pods of garden peas are too tough to eat, but popping fresh peas straight from the pod into your mouth remains one of life's great pleasures.

Have carefully handpicked the finest and freshest
Peas don't need fussy preparation when they're in season. Boil them briefly until just tender, add a knob of butter and season with black pepper, perhaps crushing them lightly with a fork before serving alongside grilled fish fillets or slices of boiled ham hock. Alternatively, cook up a prawn risotto, stirring in the peas, a sprinkle of chopped fresh mint and a squeeze of lemon juice just before serving. For picnics, prepare a cold pasta salad and add peas or mangetout, a crumbly, tangy cheese such as feta, chopped mint and plenty of olive oil. Or make a Spanish-style tortilla and add fresh peas and leftover vegetables. When the weather's hot, cool down with chilled pea soup, garnished with a swirl of cream. Page

Fish And Chips with Crushed Garden Peas
Lemon sole is a misnomer since it's neither a real sole, nor does it taste of lemon. It's actually a flounder (the family that includes plaice and turbot). It has delicate, sweet white flesh and is best cooked simply, either grilled or fried, and served with a light sauce. Homemade fish and chips is guaranteed to be good. Try it with cold, crushed chili peas, for a new twist on an old favorite. Ingredients Vegetable oil, for deep-frying, 15g per half oz. fresh yeast, pinch sugar, 300ml per 10fl oz. beer, 1 tsp cider vinegar, 200g per 7oz plain flour, 1 large plaice or lemon sole, skinned, pin-boned and cut into strips,
300g per 11 oz. floury potatoes, peeled, cut into 1cm per 1 in thick chips and rinsed in cold water, half lemon, cut into wedges, for serving. For the crushed garden peas, 50g per 2 oz. frozen peas, defrosted, 50g, 2 oz. natural yoghurt, pinch chili flakes, 1 tbsp. chopped fresh mint, salt and freshly ground black pepper Method For the fish and chips, heat the oil in a deep-fat fryer to 190C, or half fill a deep heavy pan with oil and heat until a breadcrumb sizzles and turns brown when dropped in. (Caution: Hot oil can be dangerous. Do not leave unattended.) Sprinkle the yeast and sugar into a mixing bowl.
Pour over the beer and vinegar and whisk in the flour and salt. Leave to ferment. It is ready to use when the mixture starts to bubble. Dip the fish in the batter and deep-fry until golden-brown and cooked through (about 3-4 minutes). Remove with a slotted spoon and drain on kitchen paper. Add the potatoes to the deep-fat fryer and fry for 3-4 minutes, or until golden-brown and crisp. Remove from the pan using a slotted spoon and set aside to drain on kitchen paper. For the peas, place the peas, yoghurt, chili flakes, salt and pepper into a blender and blend until almost smooth. Mix in the mint just before serving and serve immediately with the fish and chips.

When teaching your tot how to count, it is always best not to make a production out of the fact that they are counting, but simply initiate the counting, model it and most of all, have fun with it!
