NON ALCOHOLIC SANGRIA

M

y favorite thing about sangria is the luscious assortment of fruit that gets ladled into each glass. I love how refreshing it is to sip, and munch, on a warm day.

Ingredients for serves of 8 2 cups boiling water, 2 black tea bags (or 2 teaspoons loose-leaf tea in an infuser; decaf tea is fine), 2 cinnamon sticks, half cup sugar, 3 cups pomegranate juice, 1 cup freshly squeezed orange juice, 1 medium orange, sliced into thin rounds, 1 medium lemon, sliced into thin rounds, 1 medium lime,

sliced into thin rounds, 1 medium apple, cored and cut into half-inch chunks, 3 cups carbonated water.

Procedure Pour the boiling water over tea bags and cinnamon sticks and steep for 5 minutes. Discard tea bags and stir in sugar to dissolve. In a large jar or pitcher, combine tea, cinnamon sticks, pomegranate juice, orange juice, orange, lemon, lime, and apple. Refrigerate for at least 1 hour and preferably overnight. Just before serving, stir in carbonated water. Serve in glasses over ice.

ooking for a new tasty side-dish? Kelewele (pronounced Kay-layway-lay) is a popular Ghanaian dish made with plantains that is often accompanied with a bean stew or rice dish. Ingredients: 4-6 plantains, ripe but not past ripe, peeled and cut into bite-sized cubes, 1-2 teaspoon Cayenne pepper or ½ teaspoon of red-pepper, half teaspoon peeled grated fresh gingerroot, 1 teaspoon salt, 2 tablespoons water, palm oil or vegetable oil to fry.

Directions: Grind together grated ginger root, pepper, and salt and mix them in water. In a glass bowl toss together the plantain cubes and spice mixture. In a deep skillet, heat oil (just deep enough to allow plantains to float) to 350 degrees. Fry plantains, turning once, until golden brown on both sides. (Don’t fry them all at once; they should not touch each other while frying). Drain on absorbent paper, keep in warmed oven until all the plantains are fried. Serve kelewele immediately and enjoy!

But here's one major dining-out don't: It's unsanitary to set used utensils on the table plus, you risk staining table linens. If your server clears a course and asks you to hold on to your fork and knife, you can request fresh ones or rest used silverware on a butter plate or paper napkin.
