DRINK RECIPE OF THE WEEK DEEP SOUTH COCKTAIL Sweet peaches infused with earthy, smoky mezcal add a summery spin to this whiskey sour from Houston bartender Sean Beck. 1¾ oz rye whiskey 3 dashes peach bitters 1 oz. fresh lemon juice 1 oz. mezcal peach syrup Tools shaker, fine strainer Glass: Old Fashioned Garnish: lemon slice, peach slice In a shaker, combine all ingredients with ice and shake well. Fine strain into an Old Fashioned glass over a large ice cube and garnish with the lemon and peach slices.

Mezcal Peach Syrup 2 ripe peaches 2 oz. mezcal (Beck uses Del Maguey Vida) 3 oz. light agave nectar or simple syrup (1:1) 4 oz. peach nectar (such as Kern’s or Jumex) Remove pits and cut the peaches into halfinch cubes. Pour the mezcal into a saucepan and carefully burn off some of the alcohol (takes about 1 minute). Add the peaches and the simple syrup or agave nectar. (For extra spice, an optional ¼ teaspoon of chili powder can be added). Bring to a boil over mediumhigh heat for 5 minutes, then reduce to a simmer for another 15 minutes. Remove from heat and let cool. Add the mixture to a blender and purée with the peach nectar until smooth. Keep refrigerated for up to 1 week. Makes about 12 oz.

Delicious Thing You Should Eat In August INGREDIENTS Servings: 12 Tacos 2 pounds shrimp, deveined & tails removed 1 teaspoon paprika 1 teaspoon garlic powder ½ teaspoon dried oregano 1 teaspoon cumin ½ teaspoon red pepper flakes ½ teaspoon salt 24 bamboo or metal skewers 4 tablespoons olive oil Creamy cilantro sauce: 1 cup sour cream 3 tablespoons cilantro, minced 1 teaspoon lime zest ¼ teaspoon salt 2 tablespoons lime juice 1 ½ cups green cabbage 1 ½ cups red cabbage 1 tablespoon jalapeño, minced 24 corn tortillas Toppings: Lime wedges Cilantro
PREPARATION 1. In a large bowl, season shrimp with paprika, garlic powder, oregano, cumin, red pepper flakes, and salt. Toss gently to combine. 2. Using 2 bamboo or metal skewers poke through the top and bottom of the shrimp and push down to the bottom of the skewer. Add 3 more shrimp to the same skewer and repeat until all of the shrimp are used. 3. Right before you put the shrimp on the grill, brush each skewer with a generous amount of olive oil, to prevent sticking. 4. Grill over high heat for 3 minutes, brush the top side with more olive
oil, flip, and let cook for an additional 3 minutes. Remove from skewers & set aside for taco assembly. 5. In a bowl, combine all creamy cilantro sauce ingredients. Stir well to combine. 6. In a large bowl, combine green cabbage, red cabbage, and minced jalapeño. Pour half of the sour cream mixture over the cabbage, saving the other half for extra sauce to put on the tacos. 7. Assemble the tacos on corn tortillas. Add the cabbage mixture, followed by the shrimp. Top with the creamy cilantro sauce, cilantro, and a squeeze of lime juice.

INGREDIENTS
3 eggs Handful fresh chives, finely chopped ½ tbsp olive oil 30g goat's cheese
Method Whisk the eggs until well combined. Add the chives and season with black pepper. Place the oil in a small omelette pan over a medium heat. When the pan is hot, pour in the eggs. Swirl the pan gently over the heat to ensure the base of the pan is coated evenly. Use a spatula to slowly push the uncooked mixture to the edges. When the omelette starts to set on the bottom, sprinkle over the goat’s cheese. Leave until almost entirely set, then fold over in the pan and slide on to a plate. Serve with a cherry tomato salad.

SALI INTERNATIONAL HOSPITAL ANTIBIOTIC RESISTANCE: WHAT YOU NEED TO KNOW Non-compliance with recommended treatments: This occurs when one forgets to take medication, prematurely discontinues the medication as they begin to feel better, or cannot afford a full course of therapy. Inappropriate use of antibiotics by doctors: Sometimes doctors, because they lack all the necessary information to make an accurate diagnosis, may prescribe an antibiotic that is not specific to the infection being treated. When that antibiotic is taken, susceptible bacteria are killed, and the resistant bacteria are left to grow and multiply.
WHAT CAN YOU DO TO PREVENT THE SPREAD OF ANTIBIOTIC RESISTANCE? Do not take an antibiotic when it is not prescribed for you by your doctor. Antibiotics do not treat viral infection like a cold or the flu.

f you get an infection today – even a serious one that results in you being admitted– you probably feel confident you will be prescribed some medicine that will cure you. Antibiotics are those medicines used to treat infections caused by germs, called bacteria. They are used to treat infections such as urinary tract infections, skin infections and infected wounds. Antibiotics have saved millions of lives since they were first introduced in the 1940s. However, because they have been overused and/or misused, bacteria have developed RESISTANCE to many of them, that is, they are no longer effective against the bacteria they once killed or inhibited from reproducing.
WHAT CAUSES BACTERIA TO DEVELOP RESISTANCE TO ANTIBIOTICS? It is inevitable that any medicine will lose its ability to kill bacteria over time since bacteria naturally, through genetic adaptation, become resistant to antibiotics. We are however speeding up this process by our bad medicine use habits such as: Self-Medication: This is when medicine is used to treat self-recognized symptoms without consulting a doctor. This can cause bacteria to continue multiplying irrespective of presence of the medicine as the medicine taken may be unnecessary, inadequate, or used in incorrect doses.
Do not save some of your antibiotic for the next time you get sick. Return any leftover medication to the pharmacy once you have completed your prescribed course of treatment. Take an antibiotic exactly as your doctor or pharmacist tells you. Do not skip doses. Complete the prescribed course of treatment even if you are feeling better. If the concern is about the cost, ask your doctor to recommend a cheaper similarly effective alternative. Do not take antibiotics prescribed for someone else. They may not be appropriate for your illness. If your doctor determines that you do not have a bacterial infection, ask for ways to help relieve your symptoms.
