Step 1: Marinate jack fruit pieces with ingredients from 2 to 7 add enough water to coat well. Step 2: Deep fry them in hot oil on medium flame until crispy and done . Step 3: Fry some curry leaves and green chilies in the same oil and garnish it on top of fried jack fruit. Step 4:

Jackfruit seeds - 1 Cup Mustard seeds - 1/2 tsp Urad dal (black lentil) - 3/4 tsp Turmeric powder - 1/2 tsp Sambar powder - 2 tsp Chilly powder-1 tsp Curry leaves - 1 sprig Oil -2 tbsp Salt - to taste

Step 1: Clean the Seeds Remove the thin white filmlike skin and keep aside. Step 2: Cut the Seeds. Step 4: Cook the Seeds. Place the seeds in an open utensil, add 2 pinch salt and water till the seeds are immersed. Cook for 15-20 mins till the seeds get soft. You can also cook in a pressure cooker. Pressure cook for 2-3 whistles Step 4: Drain and Keep the Seeds Aside. Step 5: FryHeat a pan with oil. 1. Add mustard seeds and let it crackle. 2. Add urad dal, curry leaves and cook.

3. Put on low flame and add sambar powder, turmeric powder, chilly powder, salt and stir. 4. Now add the cooked jackfruit seeds and mix everything well. Let it cook for another 5 min. 5. Serve hot.

Step 1: Cube and boil raw jackfruit in little salted water.Discard water.Boil 1 potato and mash it with the jackfruit.Also add freshly ground bread slices.Add turmeric,red chilli powder,meat masala, garam masala, chopped coconut,gramflour (besan),salt and sugar to taste,ginger garlic paste,chopped green chillies and mash all.Heat 2 tbsp oil and fry chopped onion.Then add the mashed lump and toss till dry and well fried.Sprinkle raisins and chopped coriander and toss.

Step 2: Make cutlets out of the fried mix.Make a semi thick batter of cornflour and maida.Dip one cutlet in it and toss in breadcrumbs.Allow it to set for an hour in fridge. Then fry the cutlets golden brown.Serve with any dips of your choice or hot and sweet tomato sauce

250 grams ripe jackfruit or 1.25 cups chopped jackfruit 200 ml thick coconut milk, about ¾ to 1 cup thick coconut milk 2 to 3 tablespoon powdered jaggery or add as required ¼ to ½ cup water or as required 6 to 8 ice cubes (optional) 1 to 2 tablespoon finely chopped jackfruit for garnish (optional) 6 to 8 chopped cashews for garnish (optional)

20 Jack fruit (you will get 1 ¼ cup jack fruit puree) 1 cup Jaggery( Raw Indian sugar) 2 cup roasted rice flour ½ cup water ½ cup fresh grated coconut 5 cardamom pods( seeded) Ghee for brushing banana leaves
step 1- Soak 1 Âź cup raw rice for 5 hours and then pound it into fine rice powder. step 2- Sieve to get fine. Then roast ground rice powder in medium flame until entire moisture is removed step 3- You will be able draw a line clearly with rice powder if it is dried well. If you want you can pulse them once more to get uniform texture. I skipped that part. step 4- In blender puree the jack fruit and set aside. step 5- In a small bowl add jaggery and Âź cup water until it melted completely. step 6- Then strain for impurities. step 7- Bring back to heat and add the jackfruit puree and cook until it thickened about 3540 minutes. step 8- To this a roasted rice powder and coconut and cardamom powder. step 9- Mix everything into dough.

step 10- Cut banana leaf into small squares, and slightly wilt them in open flame, that way it will be easy pliable. step 11- Then brush the banana leaves with ghee step 12- and place small round dough in the center step13 - and spread it into in ½ inch circle. step14 - Fold it into two then fold once again to form a wrap. step15- Place it in a steamer and cook for 15-20minutes step16 - or until banana leafs color changes. step17 - Once it is cool enough to touch remove the wrapper and enjoy with hot tea.

2 cup Rice flour Both store bought or homemade is fine 1/2 cup Jaggery 15 Ripe Jackfruits pieces made into puree about 1 cup 2 Cardamom crushed ½ cup Coconut pieces you can reduce the amount of coconut or you can skip it if you don’t like it 1 teaspoon Ghee/clarified butter 6 cardamom or ¼ teaspoon cardamom powder 1/2 cup Water Peanut oil: for frying
1. skewer Grind ripe jack fruit into a fine puree without any water and set aside. 2. Melt Jaggery with Âź cup of water and sieve with a strainer, to remove impurities if any are present. 3. If you want you can fry the coconut pieces into ghee and add to the rest of ingredients, I skipped that part. 4. In a bowl add jack fruit puree, melted and strained jaggery, 5. rice flour, coconut pieces, ghee, baking soda, crushed cardamom 6. and water to make a thick pancake batter. Keep it aside for 30 minutes

7. Heat oil in appakara (similar to Aebleskiver Pan and when it ready (around 365F) 8. add batter to the mold. 9. As one side ready (after 3 minutes) turn and cook the other side also (4 minutes). Remove it from the appakara when a comes out clean. Repeat the process until the entire batter is finished.

Jackfruit(pala sulai) – 6 Jaggery – 3/4 cup Coconut milk, thick – 1 cup Ghee – 4 tsp Cashew nuts – 5 Raisins – 10 Coconut, chopped – 2 tbsp Cardamom – 1, powdered Dry ginger powder – A pinch Cumin seeds, roasted & powdered – a pinch

In a pan, heat 2 tsp of ghee, roast cashew nuts until golden. Keep aside, fry raisins in the same ghee until it bloats, set aside. Fry coconut bits until golden.

In the same pan, add remaining ghee and sautee the chopped jackfruit until soft in medium or low flame. Say for 2 mins.
4. Transfer to a heavy bottomed vessel and add 1 & 1/4 cup water. Cook in low flame or medium flame until soft.

5. In another pan, boil little water just to immerse jaggery. Heat until the jaggery melts. Filter it in the cooked jackfruit. 6.
Add more water if needed and simmer for 5 minutes. Let it boil well and get thick. 7. Add thick coconut milk and boil for 2-3 minutes in low flame. Add dry ginger powder, cardamom powder and roasted cumin seeds powder. Mix well. 8. Once thick, lastly add the ghee roasted nuts, raisins and coconut bits. Mix well.

1. Slice some coconut and chop it finely. Keep aside. Slit and open the jack fruit. Take out the seed and a thin skin over it. Finely chop the fruit.

Ripe Jack fruit flesh : 2 kg /6 cups (finely chopped) Jaggery : 1 kg /3 cups or according to the sweet requirement Water : 2 cups Ghee : 1/2-1 cup Dried Ginger Powder /Chukku : 1 tbsp Cardamom Powder /Elakka : 1/2 tbsp
step2. Pressure cook the chopped jackfruit pieces with one cup of water for 6-8 whistles or until soft. step3. Ground this cooked jackfruit in a mixer grinder to a paste and let it cool to the room temperature. step4. In a heavy bottomed pan or in wide vessel like “Uruli� transfer jackfruit paste and allow all the water to disappear stirring occasionally. step5. Meanwhile melt the jaggery with one cup of water to get a thick syrup.

. step6. Pour the melted jaggery syrup to the cooked jackfruit and stir continuously till it becomes thick and sticky. step7. Add ghee little by little and stir continuously over medium-low heat until you get a dark brown colored thick jam (Note : Stir continuously to prevent it from sticking to the vessel, If you think this is sticking to the bottom of the pan then add more ghee.) step8. Add the dried ginger powder and cardamom powder. step9. Remove from fire and let it cool to the room temperature. step10. Store in an air tight container and Enjoy!!

Remove seeds and cut into two pieces.
2. Take a bowl and mix maidha,egg,sugar,cardamom powder,salt and enough water to make a smooth semi thick batter.

Heat oil and deep fry them until a nice brown colour.

Delicious jackfruit fritters are ready now...serve it with a cup of hot tea.

Chana dal or Kadalai paruppu 1 cup Palakottai or jack fruit seeds - 20 nos Onion – 1 Green chili – 2 Whole dry red chilies – 3 Fennel or Aniseeds – 1 tsp Ginger – 1/2 inch piece Curry leaf – 1 sprig Salt – to taste Oil – to deep fry
Wash and soak dal in water for one hour.
Cut the palakottai into 2. Peel the outer thin white skin. Pressure cook palakottai in enough water with 2 pinch salt till soft. I cooked for 3 whistles. Drain water completely and transfer to mixer jar or food processor.

3. To this, add ginger piece and grind it to a smooth paste without adding any water and transfer to a mixing bowl. 4.
Drain and grind the channa dal to a smooth paste without adding any water and transfer to the mixing bowl. You can first grind the palakottai and then grind the chana dal in the same jar.

Chop the onions, green chili, curry leaves finely and add it to the ground pastes.
6. Add fennel seeds, salt, mix well and make small lemon sized balls and keep it ready. 7. Heat oil in a deep frying pan and when it is hot enough, take each ball, flatten slightly between both your palms and gently drop into the hot oil. Cook 3-4 vadais at a time and do not fill the whole pan with the fritters. Cook till golden brown and drain on a kitchen paper. 9. Palakottai Vadai is ready. 10.
Serve hot with tea or coffee.

Peel the jackfruit seeds and take off parts of the brown skin.
2. Put into a pressure cooker with water upto its level and cook for 8 to 10 whistles on medium flame. Switch off and allow it to cool completely. 3.
Drain the jackfruit seeds into a bowl. Mash well till smooth.

Add the remaining ingredients and mix well. In case the mixture is sticky, add a little roasted rice flour to adjust.

Cut your jack fruit into open pieces.
Pluck the soft yellow banana like shape flesh.
Place in a juicer, I used a manual juicer. Squeeze the fruit. Then dilute with water and lemon since it’s too sweet.

2. Melt jaggery by adding 1/2 cup water.once boiled filter this. 3.
Transfer the cooked jackfruits along with water to an Urali or big nonstick pan.cook till all the water dries up (often stirring)and the mixture looks soggy.
4. Now add the melted jaggery to this & cook on medium heat often stirring sothat it doesn’t burn.

5. Once all water dries up add 1 tablespoons ghee/dalda/oil and cook.once the ghee is absorbed and the mixture doesn’t turn smoothly while stirring,add another tbsps of ghee. 6. Continue adding ghee & stirring till you get to the stage when a small portion is thrown to the wall  doesn’t sticks to the wall but falls down. 7. When you think it’s almost done add the cardamom powder to this. Once done remove the mixture to a greased steel plate.smoothen the top with the back of a spoon. 8. Once cooled cut the halwa into squares.

When we cut Jack fruit , a thick “milk” oozes from it. This is sticky in nature and stains. So without forgetting ,before cutting rub generous amount of coconut oil to your hand and grease the cutting knife too.

Cut the raw jack fruit into half and later into medium size long pieces.Remove outer thorny green skin and the center stalk part.

Cut the clean jackfruit into small pieces and put them into water immediately,else they will dis color. Leave it in water for 5 mins. You can observe that the water would be little brownish now. Discard that water.

3. Heat oil in a kadai/pan. Add in mustard and fenugreek seeds and let them splutter . Add curry leaves , green chillies and saute for a min . Add some sliced onion ‘s , ginger - garlic paste and saute till translucent .4. Add tomatoes and saute till mushy . 5. Now lower the flame and add in chilli powder , pepper powder, coriander powder , haldi and salt . Saute this on low heat for around 2-3 mins. 6. 8. 9.
Add raw jack fruit pieces and saute for 1-2 mins Finally drizzle in a tsp of coconut oil on top Raw jack fruit curry is ready . Enjoy with rice

Step 3 Heat oil in a pan. Add cumin seeds, mustard seeds, coriander leaves, crushed green chillies with sea salt and cook for two minutes. Add cooked jackfruit cubes, turmeric powder and cook for five minutes. Add lemon juice and vinegar and stir. Remove from he Step 4 Put into sterilized glass jar and store.

Step 1 Apply oil to a knife and peel the jackfruit. Further cut it into one-inch cubes. Step 2 Pressure cook the pieces till two whistles are given taking care that they remain firm and do not get mashed. Break green chillies with hand. Add sea salt and crush.
