INGREDIENTS 2.5-3 lb. Yukon gold potatoes
1/3 cup nutritional yeast
1/4 cup ghee
1 tbsp. garlic powder
3 tbsp. cassava flour
1 tsp thyme leaves chopped
1 1/2 cup full-fat coconut milk
1/2 tsp rosemary chopped
1/2 cup your choice in bone broth/ vegetable broth
1 tbsp. sea salt 1/2 tsp ground black pepper
METHOD 1. Preheat oven to 375 degrees F and grease a 9×13 baking sheet. 2. Use a mandoline slicer or a sharp knife to slice the potatoes thinly and set aside. Heat ghee in a saucepan over medium heat and whisk in cassava flour until thick, about 1 minute. 3. Add coconut milk, broth, nutritional yeast, garlic powder, thyme, rosemary, salt, and pepper. Whisk constantly for 5 minutes or until the sauce thickens and turns opaque. Remove from heat. 4. Place 1/3 of the potato slices on the baking dish in an overlapping layer. Then, pour 1/3 of the sauce over the potatoes. Repeat this process two more times. 5. Cover the baking dish with foil and bake for 40 minutes. 6. Remove the foil and bake for an additional 30 minutes. They are done when the potatoes are tender, and the top layer is golden brown and crispy. 7. Serve topped with chives/green onions, and ENJOY!

METHOD Put half of the cooked macaroni in the bottom of a slow cooker. Layer on cheese and butter cubes, then the rest of the macaroni, then more cheese and butter. Cover and cook for 2 hours on high or 4 hours on low. Halfway through, stir and add the milk. Cook until the cheese has melted.

METHOD Preheat the oven to 375°. Place the ham on a rack set in a large roasting pan. Pour 1 cup of the apple juice over the ham, cover with foil and roast for 1 hour, basting with 1/2 cup of apple juice every 15 minutes. Continue roasting for 1 hour longer, basting twice with the pan juices. I a small bowl, whisk the honey with the brown sugar, mustard, black pepper and cayenne, if using. Remove the foil from the ham and brush it all over with the glaze. Roast the ham for about 30 minutes longer, until the glaze is caramelized and an instant-read thermometer inserted in the thickest part of the meat registers 140°. Transfer the ham to a platter and let rest for 10 minutes before slicing and serving.

METHOD Add all ingredients into a mixing bowl and with a bread hook, mix until it balls together. Remove from bowl and knead by hand for 5-10 minutes until fully incorporated. Let rest for 1 hour. Topping: One stick of butter (melted) 2 cups sugar ½ cup cinnamon Fresh ground nutmeg to taste (I use one whole nutmeg) Part out dough into equal portions about the size of a ping pong ball. Roll into cylinders about 8-10 inches long Dip cylinders into melted butter, then into sugar/cinnamon mixture Knot and place into a foil-lined cake round or cake pan. Let sit for one hour.

Turn into a greased 9x9x2 inch baking pan. Combine nuts, brown sugar, and 1tbs. butter, and cinnamon; sprinkle over batter. Bake in a 375 oven about 25 minutes, make 1 coffee cake - Enjoy!

METHOD 1. In a bowl, mix the dry ingredients thoroughly. 2. Add the eggs and pumpkin, and mix. 3. Gradually add the evaporated milk, mixing constantly. 4. Preheat oven to 350°F (180˚C). 5. With a jar lid, cut 12 4-inch(10 cm) circles out of the pie crust. Press into each of the cups of a greased muffin tin. 6. Pierce the bottoms of the crust gently with a fork. 7. Fill each pie crust to the top with filling. 8. Bake for 20-30 minutes, until the top of the crust becomes golden brown. 9. Add your favorite ice cream or whipped cream with a pinch of cinnamon powder. 10. Enjoy!

METHOD In a large mixing bowl, stir the flour, sugar, baking powder, and salt. Make a well in the center. Combine egg, milk, and oil. Add the egg mixture all at once to the flour mixture. Stir just till moistened; the batter should be lumpy. Grease muffin cups or line them with paper bake cups; fill 2/3 full. Bake in a 400 oven for 20 to 25 minutes or until golden. Remove from pan; serve warm.
