MEDITERRANEAN EGG MUFFINS Prep Time: 10 min Cook Time: 20 min Number of Servings: 6 Serving Size: 2 muffins

Ingredients

• 6 eggs

• ½ cup unsweetened almond milk

• ¼ tsp salt

• 1/8 tsp pepper

• ¾ cup FF Feta Cheese crumbles

• ¾ cup chopped asparagus

• ¼ cup chopped red bell pepper

• ¾ cup chopped mushrooms

• sriracha for topping

Directions

• Heat oven to 350 degrees

•M ix egg, almond milk, feta cheese, asparagus, red pepper and mushrooms with salt and pepper in blender until smooth.

• Spoon evenly into mini muffin tin.

• Bake 20 minutes, cool on rack 5 minutes and remove from muffin tin.

• Top with sriracha

PROFILE CHEDDAR AND BROCCOLI SOUP Prep Time: 10 min Cook Time: 10 min Number of Servings: 2 Serving Size: 2 cups

Ingredients

• 1 pkg. Profile Noodles

•1 pkg. 25g Profile Cheddar and Broccoli Soup, mixed according to package directions

• 1 pkg. Steamers Broccoli Flowerets

• Salt and black pepper to taste

Directions

•P repare Profile Noodles according to package directions, drain and add to a serving bowl.

•P repare Profile Cheddar and Broccoli Soup according to package directions and pour over Profile Noodles.

• In microwave steam broccoli and add to soup and noodle mixture

• Season with salt and pepper to taste and serve.

STUFFED PORTABELLA MUSHROOMS Prep Time: 15 min Cook Time: 25 min Number of Servings: 1 Serving Size: 1 stuffed cap

Ingredients

• 1 pkg. Profile Sloppy Joe mixed according to package directions

• 5 grape tomatoes-cut in half

• 1 large portabella mushroom cap, washed, dried, gills and stem removed

•1 tsp. to 1 Tbsp. fresh oregano, or jarred minced oregano, or ½ tsp. dried Oregano

•1 tsp. to 1 Tbsp. minced garlic, or use granulated garlic, or minced garlic from a jar

• Salt and pepper to taste

• ¾oz to 1 and ¾ Tbsp. shredded part-skim mozzarella cheese

• 1 tsp. olive oil

Directions

• Preheat oven to 400 degrees

• Spray a sheet pan with vegetable oil spray or line with parchment paper.

• Place prepared portabella cap and grape tomatoes on sheet pan.

• T oss all with 1 tsp. olive oil; add garlic, basil, and oregano to tomatoes and toss.

• Season with salt and pepper.

•R oast vegetables for 10-15 minutes, hold in oven while you prepare the Profile Sloppy Joe mix.

• Combine roasted tomatoes into the Sloppy Joe mixture and mix to combine.

• Top the roasted portabella with the Sloppy Joe and tomato mixture.

• Top with shredded mozzarella cheese.

• Broil a few seconds to melt the cheese and serve.

•P late over a bed of mixed salad greens, ½ cup cucumber, and ¼ cup red onion; dress with Profile Salad Dressing of your choice.
