Take the Plunge Kick off 2018 with an icy dip for a good cause There’s no better way to start the new year than with a freezing romp in the Atlantic with hundreds of other thrill seekers. Luckily South County has no shortage of polar plunges. Laid Back Fitness (LaidBackFitness.com) hosts their Frozen Clam Obstaplunge – a combination obstacle course and traditional Day One dip – at Goddard State Park in East Greenwich, the RI CAN Ocean House Marina Polar Plunge (RhodeIslandCAN.org) meets at Charlestown Beach and the Special Olympics Rhode Island Penguin

Plunge (SpecialOlympicsRI.org) will be diving at Roger Wheeler State Beach in Narragansett. There’s also the Block Island Polar Plunge at Fred Benson Town Beach (BlockIslandInfo.com) and the Polar Bear Plunge for A Wish Come True (AWish.org) at Easton’s Beach in Newport. So you’ve got options. Very, very cold options. Knowing that you’ll be doing something so crazy for a good cause ought to warm you right up, but bring some hot cocoa for afterwards. Compass Leads the Way A big grant – and national attention – allows Compass School to innovate its outdoor education programs

Kingston’s Compass School will use its Newman’s Own grant to boost its outdoor, hands-on STEAM initiatives

Since opening in 2002, the Compass School (CompassSchool.org) in Kingston has been teaching students to become problem solvers, critical thinkers and active learners. One of its most valuable tools in these endeavors has been the Compass School Farm. The farm teaches kids about environmental sustainability, and has grown enough to be nationally recognized as a Green Ribbon School by the US Department of Education, and to receive a grant of $35,000 from Newman’s

Own Foundation to continue their environmental sustainability educational programs. Director of the Compass School Brandee Lapisky describes the grant as a huge boost to the school’s farm and Science Engagement Center – an outdoor lab designed to teach STEAM concepts in a hands-on setting. “We can’t thank Newman’s Own enough for their support in implementing model solutions to provide fresh food access and nutrition education,” she says. Thanks to the grant, the

school’s garden has become the largest in the state and will begin to host visitors for workshops and summer camps focused on learning about the environment. Ultimately the Compass School wants the garden to become a model and host for others in Rhode Island. “We are eager to share what we’ve learned,” Brandee says, “and to make a significant impact on our greater community in the area of environmental sustainability education.” -Emily Lemieux

Belly’s Back Gen X rockers with Rhody roots are making a new record with some help from their fans

Belly, which formed in Newport in the ‘90s, is working on their first new record in over 20 years

We’re getting a new Belly record this year, and there’s a way for you to get up close with the band while they make it. The alt-rock quartet, which formed in Newport in the early ‘90s, came to an important conclusion while on tour in 2016. If there was ever going to be a new album, it was “sort of now or never,” says Belly founder Tanya Donelly, who still calls Newport home. The greatest hits package was 15 years ago; the five US alternative radio hits, including the number-one single “Feed the Tree,” came out between 1992 and 1995. Now the band members – Tanya, bassist Gail Greenwood and brothers Tom and Chris Gorman – are ready to birth new Belly music. A third LP will be released April 6, 2018. “Originally it was just going to be the tour,” Tanya says. “I wanted to play

together again.” But after the band began writing new songs to play live, the idea of a new album started to come into focus. Tanya and the band write mostly remotely, sending each other a whole skeleton song, a chorus or just a riff to which other members then contribute. This setup is especially helpful when, as with most DIY bands, the rest of life is constantly calling. All four members run businesses and two have kids. “Sitting around waiting for inspiration to strike still absolutely happens,” Tanya says, “but now I have to find the two hours a day, tops – tops – to get it done.” Tanya credits Tom with being organized enough to “stitch it all together like Doctor Frankenstein.” The band’s first two records were released in the traditional way, through a record company. This new record finds

Everybody Knows Her Name

One of the island’s favorite bartenders, Annie Hall, is always ready to hear your story

In addition to holding court behind the bar, Annie works to protect the island’s outdoor spaces and support local education

Annie Hall was just five when she had her first island summer, and at 21 she moved there forever. Years later, all of that easy, seasonal joy has evolved into being integral to a yearround community of volunteers, parents, preservationists and characters. Everyone on Block Island knows Annie Hall. Yellow Kittens Tavern, where she’s tended bar for 32 years, is where she met her husband (islander Glen Hall, with whom she has four children) and where she’s watched so many faces come and go, for reasons cheerful and tragic. It’s also a second home. Annie can be tough, holding court behind her bar, tending to the requests and needs – but never the demands – of customers, local and otherwise. She’ll greet you with a smile and lean on the rail to hear your story, but she’ll ignore you until dehydration makes you lightheaded if

you don’t remember your manners. She’s also passionate about maintaining the island’s outdoor spaces. Seeing a need for an island playground, she and Adrian Mitchell went for a drive to find the perfect spot. “There was no place for the kids to play when school was in session,” she says. A year later, with typically generous donations of volunteer hours, the park was open and busy. Annie and others also protested a crowded summer house development that threatened to overtake squat, sufficient cottages and swing sets off Corn Neck Road, carrying a sign proclaiming, “Keep Our Fields Wild.” For twenty years she’s supported children and adults on the School Committee, all while volunteering with the Lions Club and the Recreation and Special Education Advisory Boards. “I leave the island more now that I have kids

but before them, I hardly ever left,” she says. Island families are special, rich with that opportunities that closeness presents. Annie’s favorite place might just be her own home, right next door to Glen’s family’s house, where his mother Barbara still bakes pies and waits for her grandson Jaixen, who visits for lunch five days a week. Always busy, Annie also tends the cozy bar in The Barn at The Spring House, serving cocktails and dinner from an applewood grill to islanders. Four children, three cats, two dogs, one hamster and countless pet turtles later, Annie Hall leads an enviable life: parenting, working, serving, and enjoying and loving those who surround her. Forever is a long time indeed, but such is Annie’s connection to the people and places of Block Island. -Todd Corayer


Meadowbrook Waldorf School The Running Man Seven marathons. Seven continents. Seven days. Nick Wishart is ready.

The World Marathon Challenge is no simple feat: seven marathons on seven continents in just seven days. 183.4 miles of running. 58 hours of air travel. A few runs in the middle of the night. For the avid runner, even just one marathon will require months of physical preparation. So, why run a daily marathon for a week? For Nick Wishart of Pawtucket, the response would be: “It’s going to be a ball.” This month, Nick will be the first Rhode Islander to compete in the annual adventure-seeking competition, beginning in Antarctica and touching down in each continent with a final run in Miami. Each day is likely to follow the same rhythm: “Get in, change, run, take a shower, relax a little bit, spend a few hours in town, eat and get back on the plane. The whole thing really is as much about learning how to recover so I can get back up and do it again the next day.” Fewer than 60 runners have finished the race, now in its fourth year. “It’s a little overwhelming. Makes it a little more special,” Nick says. “It’s that appealing combination of the travel and the running. I’ve been a runner since high school, and then you throw in all these amazing cities. And I’m getting to take my wife.” The couple plans to extensively document their journey together on Nick’s website and through social media (NickWMC.com). Nick and his wife will give back the love they’re receiving from family, friends and supporters by donating portions of his sponsorship funds to the RISPCA, March of Dimes and Rhode Island Community Food Bank. “I’ve got so much built-up energy,” Nick says. “I’m ready.” –Emily Buonaiuto

or months, buzz was steadily building on my Facebook feed around Pump House Music Works (PumpHouseMusicWorks.com) in Peace Dale. More and more friends were popping up as “interested” on their event listings, and reliably great musicians from the Rhode Island scene – like Ian Fitzgerald, Will Houlihan and Arc Iris – were among the billed performers. Judging from social media alone, it was certainly a neat-looking space – a cozy bar area, lots of exposed wood, big round windows and doorways that give it a very hobbit-hole kind of vibe. Plus the space serves as a guitar-makers’ workshop by day, which means the walls of the bar area are lined with tools and guitars in various stages of construction. But Peace Dale seemed like an unlikely home for what was clearly becoming a go-to weekend destination for music lovers and a must-play spot for local and regional performers. I’m not saying I was hesitant to believe the hype, but I’m willing to cop to the fact that I wasn’t prepared for the hype not do it justice. Long story short: this place is downright magical. This past November marked a year since owners Ariel Rose Bodman and Dan Collins officially reopened the historic building – an actual pump house in the late 1800s that drew water from the reservoir for the surrounding towns, later a restaurant for a few decades starting in the 1960s – as a venue for live music, though that was far from their original goal for the space. “We came in as a joke to look at it,” Bodman confesses. “But when we saw this room, the cogs really started turning.” Luthiers by trade, Bodman and Collins are the craftspeople behind Shady Lea Guitars, but after expanding beyond capacity in their old home, they were looking for a place to grow. Curiosity brought them to Peace Dale’s empty pump house, but a maker’s imagination helped them see the potential beyond a larger workshop and educational space for students looking

to learn the art of guitar making. And they weren’t complete strangers to hosting performances, having run successful open mics in their previous space. “We had open mics once a month, and it brought in a lot of people,” says Collins. “It wasn’t our mission to do all of this at first, but when we walked through and saw the room we said, ‘This is a perfect space for music.’” At first the occasional open mics at Pump House were intended as a side hustle to bring people in and show off the work that they and their students had been doing. But they grew quickly to four shows a week, bringing in everything from folk to bluegrass to jazz, punk and the URI student big band. Between the local bands, emerging performers and touring acts looking for a stop between Boston and New York, there’s been no shortage of artists making their way to the Pump House stage. The crowds have been making their way there too. Having a bar is certainly a draw, but the quality of performances have carried Pump House’s reputation beyond its tiny, South County village and made it a destination for Rhode Islanders looking to catch a great show. “I don’t think we realized that when we started doing it,” says Bodman. “But I’ve been told by so many different people that there was a hole where this should have been, and I’m so glad people feel that way about it.” Bob Kidd is a local artist who lives a mile from Pump House and has become the space’s official photographer, documenting the performers who have come through as well as the evolution of the space. “Music is a big piece of my life, so I asked if they needed a photographer and I’ve been doing it ever since,” says Kidd. “It’s been fabulous. It’s this lovely music that you don’t hear on the radio, but it’s a level of music that’s so good. It’s community changing.” On the night I visited, Maine folk singer Dan Blakeslee was performing. It was his first time there as well, and it was clear that there was something about the space that struck him. “I came in the other day to put up posters and I was blown away by the vibe,” he told me. “I play a lot of rooms, and this is the exact essence of what I look for in a venue or a space. Instantly when you walk in you feel changed.” “When we set this place up, we wanted our students’ instruments to be on display,” Collins says. “It adds great ambience to the room.” The not-quite-finished guitars add an authentic character to the room during performances, and the performances bring attention – and curious potential guitar-makers – to the work Bodman, Collins and their students do by day. “We’re just super lucky and grateful to be here,” says Collins. “When I look back to what we were doing a year ago, it’s just incredible how far we’ve come. Every time we have a show, we make a point to ask how many people are new. We keep seeing new faces.” I’m not surprised to hear that new people keep discovering it. Like I said, this place is downright magical.

The former Miss Universe teamed up with her father, her cousin and their business partner to bring next-level dining to North Kingstown. Named for the back 40 acres of a farm, considered to be remote and untamed, the restaurant is designed to look like a renovated barn, complete with red paneling and big barn doors. The interior of the restaurant is massive (3,800 square feet) and additional patio seating is available during the warmer months. Dan’s Carriage Inn & Saloon Rocco’s Bistro Rocco’s Bistro is one of the newest establishments to make its home on Main Street in East Greenwich, Rhode Island’s own version of restaurant row. The lively spot opened last spring, but there are some new changes for the new year. Owner Rocco Quarttrocchi has recently taken over the kitchen and is in the process of making the environment a bit more casual. Quarttrocchi is no stranger to the restaurant business – his Rocco’s Pub & Grub in Smithfield has been dishing out comfort food to appreciative diners for many years now. Rocco’s Bistro, Quarttrocchi says, “a relaxing vibe, and a comfortable atmosphere where you lose track of time.” The bar has a well-crafted beer list, four different types of sangria, creative craft cocktails and a well-priced wine list. The Carriage Inn is a local landmark. It was abandoned for several months, but Dan Hebert, owner of Dan’s Place in West Greenwich, has reopened the space as Dan’s Carriage Inn & Saloon. The interior has been renovated, but has maintained its rustic charm. The menu contains just as much variety as his West Greenwich location, but skews more upscale. If you’re looking for Dan’s famous pizza, you won’t find it here. Instead, there’s slow-roasted prime rib, surf and turf, sesame tuna and French onion soup, as well as a variety of sandwiches, chicken wings (in 13 flavors), pastas and salads to be had. Wilcox Tavern Sometimes something old becomes new again, which is the case with the Wilcox Tavern in Charlestown. The Tavern was constructed in 1730 as the residence of Joseph Stanton on a bluff overlooking Route 1. It was reopened this summer by Mia Byrnes, who has more than 30 years of experience in the hospitality industry and is the owner of Mia’s Cafe in Westerly. Byrnes describes the food at the Wilcox Tavern as “simple American cuisine,” and while the dining room still retains its historic charm, it has been cleaned up and modernized. From the appetizer section of the menu, you can enjoy Crispy Prosciutto-Wrapped Shrimp with a gorgonzola drizzle or Tavern Garlic Bread with a gorgonzola fondue. In the entree section, you might choose the Chef’s Dry-Aged Steak with braised garlic, mashed potatoes and wilted spinach, or the Baked Sea Scallops with balsamic garlic herbs, spinach and roasted peppers, farro and citrusy white wine. In the 1700s and 1800s, the tavern was a place for people to rest on the journey from Boston to New York. Adrak 2 Indian Cuisine & Bar has recently opened on Canal Street in Westerly and Adrak will be opening soon in South County Commons, both featuring authentic Indian menus. Adrak 2 serves a tremendous buffet so diners can sample its many Indian specialties. To start, you won’t want to miss one of their five different varieties of naan bread – the Garlic Naan, for example, is topped with fresh minced garlic and cilantro. The Gobi 65 is also an excellent starter: spicy, breaded and twice-fried cauliflower florets. Beware: they’re addicting. There are a variety of curries to try which come with chicken, lamb, goat, fish or vegetables, including the classic Tikka Masala and a very spicy Vindaloo. They also have a variety of biryanis with all of the meats slowcooked in the tandoor, seasoned with saffron and served with basmati rice. The Flatts recently opened in Peace Dale in the former home of Giro’s. A local legend, Giro’s opened 150 years ago and was the first restaurant in South County to be granted a liquor license. Neighbors are ecstatic to have the beloved spot open again. The restaurant is run by Jane LeBlanc, a South Kingstown resident with a degree in anthropology and a real estate license. Though she’s relatively new to the restaurant scene, she’s excited to “roll up her sleeves” and “bring back a beloved part of Peace Dale’s history.” The menu features local products including meats from East Greenwich’s Pat’s Pastured and Sons of Liberty barbecue sauce, and lays into the burgers and smoked meats segments of the food pyramid. Peninsula of Paradise A unique home designed for entertaining by the water is a serene retreat in Wickford

Fifteen years ago, Tim Conlon was on a quest to find the perfect piece of water view or waterfront property on which he could build the home he had been envisioning for quite some time. His patience paid off when he spotted an ad in the newspaper for a unique, peninsula-like parcel on Wild Goose Point, just south of Wickford Village. He called his realtor and when the two pulled up to the property, Tim knew his long search was over. “It was stunning,” he says. “I wasn’t sure what I’d get when I came here and I was just struck by the unique layout. You can walk onto a beach and it’s basically a peninsula jetting out into the ocean… it was just a question of what I was going to be able to do versus what I wanted to do.” Concerned about CMRC and DEM regulations, Tim called a friend familiar with local building codes and by the end of the day, Tim’s offer was submitted and accepted.

Tim knew the tiny beach bungalow that stood there would have to go, but he also knew it would be a lengthy process before he’d be able to break ground with all the permits and permissions required when building on the Rhode Island waterfront, so he made himself at home in the 900-square-foot cottage. “It was almost comical,” he says. Over the years, Tim patiently navigated the often-frustrating process of building regulation approvals, but it gave him time to hone in on exactly what he wanted in a home. He turned to the architecture firm 3SIX0, based in Providence, to both execute his vision on the macro level and bring forth their ideas, experience and solutions on the micro level. Tim says that principals Kyna Leski and Chris Bardt, along with senior associate Jack Ryan, led the project

and together, there was “a very constructive collaboration” along the way. “The creativity they brought to this – I would have never had that insight in design and the patience to work through it.” “The way I explained it to the architects, I wanted a bar and restaurant on the first floor… the second floor to be the entertainment and guest bedrooms, and third floor to be the master suite and a private area,” he explains. Tim says it was very important that guests feel welcome and that they would have their own space, but that he would have his own space as well. “I wanted guests to have their own floor,” he says. On the first floor, “bar and restaurant”-style meant Tim wanted an open space where he could host guests for dinner and be part of the conversation while preparing

a fabulous meal. “A tremendous amount [of planning] was driven by my desire to entertain,” he explains. One lengthy debate with the team at 3SIX0 was Tim’s desire to have the “monstrous” kitchen island be situated so that guests seated there would enjoy the panoramic water views, but the architects thought Tim should have the view while cooking. “[But] I have the view every morning when I sit down for breakfast,” says Tim, who won out in the end. Today, the modern marvel of a home serves as a comfortable respite from the demands of his busy and demanding work life. “For me it was about finding a place that was peaceful and serene [where I can] escape from my work,” he says, and on his little peninsula of paradise, it is home sweet home.

What’s a good winter skin care regimen? Put on a humidifier in your home, at least in your bedroom. Your skin needs the moisture that all the indoor heat is taking out. You need to exfoliate two times a week to get rid of the dead skin cells that are acting as a barrier for your moisturizer, but don’t over exfoliate or you could end up dehydrating your skin, which is the last thing you want to do in the winter. Use serums – I can’t say

that enough. My favorites are CoQ10, a powerful antioxidant, which helps with environmental stressors, wrinkles and tighter, firmer skin; and Hyaluronic, which helps with moisture, elasticity and tissue repair. I also recommend a heavier moisturizer to protect skin from the harsh cold and indoor heat. Lastly, wear a sunscreen. What’s your favorite spa indulgence? I love body wraps and sauna. A Raw Start to 2018 Fully Rooted is serving raw, cold pressed juice, just in time for New Year’s resolutions Last month was all about holiday spirit - or, for some of us, holiday spirits and lots of them, along with parties, merrymaking and food that was mostly sugar topped with sugar. It’s time for a fresh start in January. For Fully Rooted Juice (FullyRooted.com), the farmer’s market darling that’s been making a big impression with whole foods enthusiasts, it’s about a raw, cold-pressed start. “We wanted to offer an alternative that’s totally different from your typical cocktail, with beautiful, living enzymes that fuel your body as opposed to depleting your nutrients,” says co-founder Amanda Repose, who runs Fully Rooted with Steve Carlson, Angelo Mollis and Ben Aalvik. They offer flavors like the refreshing Green Lemonade (with apple, cucumber, spinach, celery and lemon) and bright orange Rise and Shine (with carrot and green apple)

Never the Same Meal Twice Stoneacre Brasserie’s move to Washington Square didn’t need a lot of hyping up. Thanks to Stoneacre Tapas and Stoneacre Wine and Spirits, Newport knows Stoneacre makes good food, and for months watched the aptly named Yesterday’s transform behind plywood-covered windows. And while the scale and finish of the newly opened Brasserie are impressive, it’s the attention to design details that really works. The front is a refined dining room, with sweeping banquettes, a mosaic-tiled floor and views of Washington Square. In the back is a larger open room with dark woods, a mast, a clamming rake and other allusions to the sea. Wherever you’re sitting, your eyes are drawn to the long central bar’s series of metal arches, which echoes the Stoneacre Estate’s long-gone porch and separates the restaurant from the small cafe and deli. On this night, however, we only had eyes for dinner. Our group was a good test: my wife and I are unrepentant omnivores, but we brought my vegetarian sister-in-law Carley and her meat-and-potatoes husband Mike along. Like the old Stoneacre, the menu

is a constantly changing one-sheeter with something for everyone. Likewise the drinks, favoring curation over quantity, but with a hefty wine list. After some negotiation we split a dry sparkler, Gruet’s Sauvage ($32). Service, even on this packed night, was quite rapid, a testament to the bandwidth and efficiency of the large open kitchen. I would say, however, that this open kitchen isn’t set up for viewing, and it tends to increase the noise level in such a large space. Carley began with a sweet corn soup appetizer ($16), followed by heirloom carrot gnocchi ($24). The soup had just enough sweetness and body, some acidity from a drizzled sauce, and intrigue from some brown beech mushrooms. Hazelnuts and the unmistakable flavor of maitake mushrooms offset the sweet carrots and perfectly textured gnocchi, and I had as many bites as possible without being rude. Mike placed the most authentic Brasserie order of the night: a classic French onion soup ($9) followed by steak frites ($24). The nicely herbed and beefy soup is on the cafe menu at the moment, and I’ll get it myself some crisp fall

day. The fries were touched with truffle butter and when dabbed into the juice from the steak and caramelized shallots, they needed nothing else. I had a smoked bacon and cranberry bean appetizer ($14) that welcomed me into fall – formidable house-smoked bacon, unsliced and fork tender, and al dente cranberry beans over a bed of wilted Swiss chard. Some mandolin-sliced pickled butternut squash was a clever addition. I followed with pull-apart braised pork over a wild nettle polenta ($32), which explored the bright notes of nettles far more than any dish I’ve had before. My wife did a steak tartare ($14), served with bread, cornichons, mustard and capers. Her salmon main ($26) was superb and the corn and quinoa were a perfect delicate accompaniment, as was the basil paste – summer waving goodbye. The real goodbyes are sweet. For dessert, a friend from the old Stoneacre: salted caramel on

Since peaches are good this time of year, I had the cobbler ($7), which in keeping with modern trends was more on the deconstructed side. I wouldn’t mind some order, but it’s a tough argument to make with an empty plate. Stoneacre Brasserie is of immense significance to Newport’s dining scene, in large part because it has decided to do so much more than just be a special night for some. I’ll know I’ll be in there for cured meats, countless lattes, the odd lunch, and of course some great dining. Stoneacre has transformed a building into something remarkable, and alongside the opera, is helping restore Washington Square to its former glories. All that is dandy, but the food must be worthy. It certainly is.

A Shining Anniversary George’s of Galilee celebrates 70 years in style

Platinum is the traditional gift for a 70th anniversary, but George’s of Galilee (GeorgesOfGalilee.com) is celebrating in a different – and more delicious – way. The venerable Point Judith restaurant is offering their original 1948 prices on George’s favorites, like clam cakes ($0.50 for a half dozen) and chowder ($0.25 for a cup and $0.50

for a bowl), $4 fish and chips, $4 lobster roll, $5 fried clams and a $6 seafood platter. No Bones About Bone Broth In the middle of cold season, Lily Scott was snowed in with a sick family. So she started making soups. And not just any soups. Lily’s Ladle (LilysLadle.com) was born. A year ago, East Side Market was the first store to carry the broth. Now, Lily stocks stores all over the state with her broths, including Back to Basics in East Greenwich and Roch’s Fresh Foods, and offers home subscriptions. Flavors are chicken (made with Baffoni’s Poultry), vegetable mineral (with kelp from Pt. Judith Kelp Company), and grassfed beef (from New England Grass Fed bones). Bone broth, known for its probiotic benefits, as well as boosting healthy skin and the immune system, is having a bona fide moment. “I have two toddlers in day care and I try to get in a good soup for dinner about twice a week to battle the colds that the kids bring home,” Lily says. “Are we healthier than the rest of our friends? No mamma. Does it make me feel better, like I am doing something to actively help us? Yes. And when I’m feeling run down, I just sip some.”

Farm-to-Fork Insanity Crazy Burger’s Matt Reagan talks about their craziest plan yet – an off-season gourmet bistro menu Farm-to-fork food in a dressed-down diner sound crazy to you? Who else to do it then but Narragansett’s famed Crazy Burger. Entrée dinner service is back Thursday through Mondays and Matt Reagan is back in the kitchen, with a small bistro menu as an accompaniment to all of Crazy Burger’s normal offerings. I talked to Matt about mushroom demi-glace in the land of the moo-moo melt. How did you end up doing a bistro menu at Crazy Burger? I’ve been working with Mike Maxon for the better half of ten years now. I had been working for him at Bed and Bistro, but the costs were just too much. It was an expensive location, but we were only open for dinner from 5pm to 9pm. We couldn’t really go later because we would have guests

upstairs. It was kind of a funky situation. The thinking was, Crazy Burger is successful on its own, let’s refocus the energy back over here. So that was the point with this menu; to bring the farm-to-fork bistro to Crazy Burger, so the people that missed what we were doing over there can come here again. What was your approach when making the bistro menu? The focus is to do as many local, sustainable items as we can. There are 30 different burgers on the menu, so we keep the bistro menu much smaller: seven entrees and two appetizers. We try and get as much locally as we can. I’m the only person working the bistro menu. I’ll go to Galilee to pick up the fish, and I get a lot of stuff from Casey Farm.

What’s a local product you feature, and how do you showcase it? We get maitakes for a chicken and wild mushroom risotto from Rhode Island Mushroom Company. They’re gorgeous, and I really don’t do much to them. I just break them up and throw them into the risotto and let that process cook them down.

This menu is alongside the regular menu. How do your regulars match to the menu? I’d say the bistro menu is more geared for an older crowd, or people really into food. It’s mostly couples as opposed to getting a burger with your family. It’s almost like a date night kind of thing, you know, you plan to have meals like this at Crazy Burger, as opposed to just going to get something we normally offer.

Book your Kid’s Camps for There’s no sautéing beforehand or anything like that. And then I’ll take a nice chunk of the mushroom and just slightly blanch it when I’m putting the dish out. The maitake is almost like a flower opening, so it has that visual appeal. It’s a dish that would be quite dark and rustic looking with the mushroom demi-glace, so I make a carrot-cayenne coulis to brighten up the bottom of the plate and then we use swiss chard as a vegetable to get that rainbow of color under the chicken. It’s pretty.
