RI THROUGH YOUR EYES Art of the Ocean State welcomes Rhody artists to celebrate their favorite state Perception can be a funny thing, especially when you get an opportunity to experience someone else’s. This is the wonderful thing about art – it gives all of us a chance to step inside another person’s head and see the world, in all of its wonder and weirdness, through their eyes. Whatever comes to your mind when you think “Rhode Island” probably won’t be the first thing your neighbor thinks of, which is just what the Wickford Art Association is hoping for with its upcoming exhibition, “Art of the Ocean State.” Open to submissions, this juried exhibit welcomes artists across all
mediums to celebrate everything that makes Rhode Island “beautiful, unique, quirky, fun-sized, and most of all, our home.” Artists can submit their work from June 19-21, with accepted entries announced on June 22 at the exhibit’s opening reception by juror – and noted local landscape painter – Anthony Tomaselli. The show will be on display through mid-July, meaning there’s plenty of time to rediscover Rhode Island through a neighbor’s eyes. Who knows, you might just see something you’ve never noticed before. Sun and Show-Stoppers The curtain rises on another season at Theatre By The Sea The shows speak for themselves.” The season began with the Harlem Renaissance revue Ain’t Misbehavin’, which runs through June 17, then shifts to Greece for the romantic, dance-inducing Mamma Mia! (June 20-July 21) The family-friendly classic, Joseph and the Amazing Technicolor Dreamcoat (July 25-August 12) will follow, and the season will wrap up with the criminally captivating Chicago (August 15-September 9). “We’re leaps and bounds above last year,” says Hanney of this summer’s productions. “We have four blockbusters; I don’t expect this type of season every year.” TBTS always makes room for Rhode
Island’s youngest patrons of the arts, and this summer’s 2018 Children’s Festival is no different. The schedule includes performances of Sleeping Beauty, Willy Wonka Jr., and Pinocchio, as well as comedic juggling duo The Airborne Comedians and Keith Michael Johnson’s Bubbleology on Friday mornings throughout the summer. For yet another summer, the Great White Way will stretch to the Ocean State, as Theatre By The Sea kicks off its 2018 summer season. Just a quahog shell’s throw from the beach, TBTS welcomes audiences to take in top-notch performances, enjoy a bite to eat at Bistro by the Sea, and have a drink at the outdoor bar. And as the theater enters its 85th year, owner Bill Hanney and company are showing no signs of slowing down. “We do things we know people are going to like,” says Hanney, who has owned the theater since 2007 and oversees production. “We had a great turnout last year, and we’re at an all-time high for subscribers.

Wakefield RiverFire lights up the night on Thursdays all summer long
Summertime waterfront festivities are more than just late-night beach parties. Each Thursday this summer, the Wakefield Village Association will transform the Saugatucket River in downtown Wakefield into an iridescent marvel for their fourth annual RiverFire. Local vendors will line Main Street, shops and restaurants will stay open late, area musicians will keep the evenings rocking by the water’s edge, and floating fire basins on the Saugatucket will illuminate the night. “These events are truly family-oriented with something for everyone,” explains Ken Burke, who has been involved with coordinating RiverFire since 2016. “It’s kind of like a giant outdoor mall where you can come and go as you please.” The WVA starts off summer with a bang – the first RiverFire will take place on the summer solstice, June 21, and the events will continue every Thursday night until
MAURA’S the end of August. For the first time, almost every Thursday will feature themes with added programming for the whole family. Attendees will be able to channel their inner werewolf at Full Moon Night on June 28, go full-on Americana at Country & Western Night on August 30, and more. “We are loving that residents, visitors, businesses, artists, and musicians are rediscovering their Main Street in a warm and familiar setting,” says Burke. As always, the WVA will be working to extend a helping hand to Rhode Island residents in need – non-perishable food donations will be collected for the Jonnycake Center of Peace Dale every Thursday, and the Empty Bowls Stroll – happening before the first RiverFire of the season – will benefit the Jonnycake Center and Welcome House of Peace Dale. Feeding the World Navyn Salem’s North Kingstown-based company has sent life-saving foods to seven million children was going on in the world.” Then Salem learned of Plumpy’Nut, a nutrient-rich paste made mostly of peanuts, invented and patented by French company Nutriset. Each packet contains 500 calories of sustenance, along with fat, protein, and essential vitamins. Plumpy’Nut is designed to be distributed in famine-ravaged regions. Salem was inspired, and she decided to help
produce the life-saving rations. The result is Edesia, a Rhode Island-based company that manufactures Plumpy’Nut. The product is packaged in a nondescript building in North Kingstown; many locals are unaware that the plant is even there. But since 2009, Edesia has shipped its foodstuffs to seven million malnourished children in 51 countries. The company employs 70 workers, most of them

In 1994, Navyn Salem visited Tanzania, the homeland of her father. She saw poverty, of course, but she was startled to learn its full breadth: several million African children were expected to die that year as a result of malnutrition. “I thought, this is both preventable and unacceptable,” Salem recalls. “I couldn’t understand why there was not an outrage that this

On-the-Spot Laughs The Ocean State Improv Festival is back for a second year of making it up as it goes worldwide improv community, they aren’t just talking a big game. This year’s festival lineup is loaded with performers from around the globe, including troupes from Chicago, Atlanta, Canada, Switzerland, Finland, and more. Also in the mix are several Rhode Island teams, including Improv Jones and Large Mouth Bass, the latter of whom are one of the festival’s headliners. “It’s nice to build the ties within Rhode Island and see the incredible work that’s being done here, as well as expand that and introduce ourselves to a whole new group of people,” explains Cady. In the spirit of collaboration and friendly competition, the slate of performances includes four different mixer shows. Members
of different troupes will have the opportunity to mingle and improvise alongside one another in head-to-head improv competitions. The mixer shows will culminate with Sunday’s “Duo Bracket Challenge” on the CTC’s outdoor performance patio. Pairs of performers who have never worked together will compete for audience approval in a bracket-style, voting-based competition rivaling the passion and unpredictability of March basketball. With a potluck to follow, Cady says, “It’s a great way to end the festival with a big outdoor party.” Visitors will have the chance to try their hand at improv in over a dozen workshops

An improv show is like a box of chocolates: you never know what you’re going to get when the performers take the stage. For the second straight year, the Contemporary Theater Company will bring that zaniness to South County for the Ocean State Improv Festival, held from June 6-10. With one year under its belt and a packed itinerary, the CTC is eager to welcome improv enthusiasts back to Wakefield. “We had an amazing time at the first annual,” says Maggie Cady, the general manager of the CTC. “We’re trying to bring the fun and excitement we had last year for the inaugural festival and amp it up for the second year.” When the CTC says they want to create a

Marvelous Marvels Artist Miquette Bishop is connecting individuals, one sculpture at a time
For Miquette Bishop, the artist and creator of Omniscient Marvels in North Kingstown, art has always been an vital part of her life. She grew up in a free-spirited environment and came to believe that possibilities are truly unlimited. In 2009, right around the time of the economic collapse, Bishop’s daughter’s school held a holiday fair, and parents were encouraged to create art to sell. She created gnome-like sculptures in red and green. Around the same time, after the death of her first husband, Bishop wanted a way to show her young daughter that although her father wasn’t with her physically, he was there in spirit and she wouldnever be alone. From these two events, Omniscient Marvels was born. Omniscient Marvels, or OMs, are handmade sculptures in costumes, like bees and unicorns. According to the OM origins story, they creatures are made of light and are invisible to the human eye, so costumes allow

these little guides to be seen. The OMs’ purpose is to connect people with one another. One sculpture depicts two OMs holding a heart; the idea is that a person would keep one and share the other with someone special to remind them that they are loved and never truly alone. This philosophy is the driving force of Bishop’s art, that people are not separate from one another, that we are all connected. “I thought, how neat is it that my work is in people’s houses whom I’ve never met?” she says. “We are connected in that way. I found it fascinating to discover why people are buying them. Where are they going in the world?” Omniscient is the perfect name for her creations. OMs share a universal message rooted in kindness and consciousness. n Rhode Island, baseball season has always meant the Red Sox – both Boston and Pawtucket. But recently, the success of two summer collegiate teams has opened a new frontier in the state’s long history with the national pastime. For the past two decades, once final exams are taken and caps and gowns stowed away, college players seeking a ticket to the major leagues have come to Rhode Island to join in one of most elite training grounds in amateur baseball — the New England Collegiate Baseball League. All summer, the 13 teams that make up the NECBL play before crowds and scouts interested in a peek at the faces that may be gracing tomorrow’s trading cards. For

Rhode Islanders, that means a trip to the Newport Gulls or the Ocean State Waves, two teams that, like their home state, play an outsized role in the competition. Rhode Islanders unfamiliar with the local NECBL presence may still recognize Cardines Field in downtown Newport, the home of the Gulls. A stone’s throw from Goat Island, the distinctive stadium is known for its jagged homerun wall and as the best place to watch summer collegiate baseball in the country. One of the oldest ballparks in America, Cardines boasts about 3,000 seats. And on the cool summer nights in Newport, when the lights turn on and the families turn out, almost every one is filled.

The squad’s record as the winningest team in the NECBL certainly helps, as does the in-house bar, but there’s no question that a night at Cardines has grown to define collegiate summer ball at its best. Chuck Paiva, owner and General Manager of the Gulls for nearly two decades, who led the team’s migration across the Bay from its original home in Cranston, has leveraged the team’s local celebrity to establish the Gulls as one of the most dominant teams in national collegiate baseball. Since reaching Aquidneck Island, the Gulls
have racked up 11 Post-Season Division championships, 10 Regular-Season Division championships, and six League championships (with the last one coming in 2014). That’s more than any other team in the league. Those are the types of stats that get noticed – not only by fans but by the big leagues as well. “The players come here to get better. They’re here to hone their skills, and quite frankly they’re here to prepare for the draft,” said Paiva. “Summer wood bat leagues exist because these scouts want to see them hit with a wood bat.” And based on their impressive roster of Gulls gone pro, the scouts are well aware. More than 250 Gulls alumni have now been drafted into professional baseball, including 15 who have made it into Major League Baseball.
This deep bench of alumni has helped build the Gulls into a national force with a presence known far outside of RI’s narrow borders. But now, having reached the upper decks of collegiate baseball, the Gulls are facing perhaps their stiffest competition yet, and from the other side of the smallest state. For Matt Finlayson, owner and GM of the Ocean State Waves since its founding 2013, it’s no coincidence that their team has emerged in the shadows of the dynastic Gulls. “I’ve been in Chuck’s office all the time – since day one, he’s been a mentor to me,” said Finlayson. “He taught me how to build a roster, how to market, how to build a successful operation.”
The Gulls and the Waves are bringing together a community of local baseball fans
And in just the past few seasons, the Waves have already assembled a set of worthy credentials. Last season, the team tallied the best regular-season record in the NECBL and earned its first berth in the division championships before falling to the Valley Blue Sox in a 2-0 series. About 38 percent of players who have spent a season with the Waves have been drafted into the major leagues, totaling about 30 overall. And the offseason has already yielded a major victory for the franchise, as word came down in late April that Mike Gerber – of the 2013 Waves — would be the first former alum to step foot on an MLB diamond. With such a rapid accession to the heights of the NECBL, it may be fair to wonder whether the Waves have truly built

a solid enough foundation on which to compete over the long term. However, the legions of fans and supporters who have rallied to games at Old Mountain Field in South Kingstown don’t doubt that the team has achieved something special. Chris Hess, a former Ocean State Wave and URI ballplayer who grew up in South County, remembers watching Waves games while still in high school. Now, having been drafted by the New York Yankees organization and in his first season on the minor league Charlestown RiverDogs, he recalls how his summer with the Waves prepared him for the big leagues. “The league’s really good. It lets you build your confidence, and if you played well, you can get scouted,” Hess said. Melissa Perry, a baseball mom who learned about the Waves through the South Kingstown Little League listserv, quickly found herself hosting a player in her home for the

summer — then every summer after that. After the first year, she was elevated to Host Family Coordinator for the entire team, working to place each member of the incoming Waves with a host family for the season. Hosting a player can be hard, she says, but only when they leave at the end of the summer. “It’s like losing a member of the family.” Ultimately, far from dividing the state, the Waves and the Gulls are building a new baseball community that is bringing people together. Longtime coach of the Gulls, Mike Coombs, has been coming up from Florida every summer to coach in Newport, but he’ll be returning a little early this year for some extra special spring training. He’s getting married and could think of no better place to tie the knot than his adopted state. “I’ve made a lot of great memories in Newport over the years, but I’m hoping that this will be the best one yet,” he said.

As another summer of NECBL baseball gets underway this month, fans have good reason to suspect that this season will also be unforgettable. For Rhode Islanders, the only difficulty will be figuring out which of the two local powerhouses is the home team.

Last year it was decided that there was just too much fleet to bless, so the annual Blessing of the Fleet Festival expanded into a three-day affair! The seafood festival will run Thursday through Saturday in Memorial Square, followed by a 10mile race on Friday and, of course, the actual Blessing of the Fleet in the port of Galilee on Saturday. ALL IN THE FAMILY Peter Pots Pottery in West Kingston continues a legacy of functional family made art Down a country road by a babbling brook sits an old structure, Glen Rock Mill, which houses Peter Pots Pottery. Founders Oliver and Elizabeth Greene are gone now, but their son Jeffrey has picked up the mantle and continues to provide the handcrafted stoneware that has been an RI staple for 70 years. In the showroom, the gorgeous and practical pottery pieces are nestled among various antiques. The ceramic works are meant for everyday use – sturdy enough for baking, made to last forever, and lovely on your table. Each item is completely handmade, taking 5-7 days to complete. Molded, glazed,
and then heated for over 24 hours, each painstaking step results in a perfect example of the artisan’s vision. On Saturdays, you can even buy the pottery still warm, fresh out of the kiln, connecting you with the process. The iconic piggy bank is ever present, along with banks representing cats, quahogs, whales, and bunnies. Bowls and pitchers come in several styles, and Greene is making lamps again after a long absence. Accessories such as honey pots, birdhouses, and candlesticks round out the collection. Peter Pots also carries locally made honey, maple syrup, and Kenyon’s corn
meal, which can be paired with specific pottery for a spectacular gift. Durable, comforting, and reliable, this stoneware stands the test of time.

After Michelle and Pieter Snoeren bought a home in Jamestown, the two met with an architect to make some changes, then headed off to visit Pieter’s family in Europe. They walked around his father’s home in the south of France, surrounded by rolling green and serenaded by local roosters. The visit made an impression on Pieter and would dramatically change the couple’s course. “We got home from the trip and my husband was like, ‘I think I want that,’” says Michelle. As a real estate agent, Michelle is privy to properties about to hit the market. Michelle spotted a charming house surrounded by three acres

nearby, and curiosity got the best of them. “I told the showing agent we were just going to go walk the land, but as soon as we stepped into the backyard, my husband had a smile on his face I’ve never seen,” tells Michelle. There were supposed to be showings later in the day, but Michelle called the agent right away and told her to cancel them. They were going to buy the house, even without ever walking in the front door. (They would also sell the home they had just purchased). The new property was formerly part of the Carr Homestead, owned by Nicholas
Carr, son of Caleb Carr, who was governor of Rhode Island in 1695. A member of the Carr family was one of the original 100-plus buyers of Conanicut Island in 1657, and the family was allotted 285 acres – hence the Snoeren’s home is perched on “Carr Lane.” The three-bedroom home was built in 1900 in the “colonial cottage” style, and soon after the Snoerens bought it in early 2017, they started talking about renovations that would better suit their needs. A wood stove sat in the center of the home, and though practical, its location prevented the open layout the couple wanted to

A couple honed new skills as they transformed a turn-of-the-century house in Jamestown
have on the first floor. With the help of architect Mary Meagher, renovations began in August of last year. The first floor was taken down to the studs; all that remained was the original footprint, some flooring, the staircase, and an exterior load-bearing beam. By chance, a thoroughly outfitted barn was built on the property in the 1990s, so Michelle and Pieter moved in. “There were a couple of hairy nights in February when it was really windy
and cold,” says Michelle with a laugh. “We started staying here so we could keep track of who is doing what – I was the general contractor.” Soon the electrical, plumbing, and roof were removed, and new heating and air conditioning were installed. Michelle had the front door moved to the side of the house to make a lasting first impression. “Carr Lane is a cut-through on the island and I wanted more privacy and a more
grand entrance,” she explains. The newly located door offers a bright, inviting, and sun-filled welcome. Michelle says the renovation experience was beyond rewarding and she walked away with more than an extraordinary home – she also gained a whole new skill set. “We investigated every single purchase we made,” she says, including unique fixtures and design solutions even the contractors had never seen. Having renovated

a few kitchens in homes before, the couple likes the innovation and smart design of IKEA kitchens. They installed IKEA cabinet boxes, but the custom-looking doors were purchased from a company in Seattle, Washington. “We bought everything online,” says Michelle. “We were just very conscious of not paying retail for anything.” Michelle wanted the feel of the master bedroom to take its cue from one of their favorite pastimes: traveling. “I never traveled anywhere until I met Pieter, and we love traveling, so I wanted the bedroom to

feel like a nice hotel, like something in Paris or Europe – comfy and cozy so you don’t want to get out of bed,” she says. In other parts of the home, antiques are mixed with contemporary pieces for a look the couple describes as “Yankee modern.” With the renovations complete, Michelle and Pieter now awake to the sounds of horses from the neighboring farm milling about in the meadow. They’re over the moon about where they live, but Michelle’s newfound talent for renovation has made a particularly lasting impression. Says Michelle, “I can’t wait to do it again!”

The Modern Haberdasher Blueprint 5’s Jim Fortier on timeless men’s fashion and the all-important fit “I have always loved unusual and interesting clothes,” says Jim Fortier, owner of Blueprint 5. “I was very specific about what I wore. I wanted to wear things that the other kids did not have.” Cutting his teeth at chic Boston stores and Providence icons Briggs LTD and Marc Allen Fine Clothiers, Fortier now owns East Greenwich’s only dedicated menswear store, and fills it with unusual - and unusually stylish - men’s finds.

Your store has current fashions blended with vintage gifts. Tell us about your unique blend of old and new. When it was time to leave and start my own business, I knew I wanted it to look and feel fresh. I wanted a modern feel with an old school customer service approach. I call Blueprint 5 a “modern haberdashery.” We have an Italian tailor on-site doing alterations by hand, but the vibe of the store is current and new. The product mix in the store is current, not trendy.

Tell us about your tailor. Blueprint 5 offers a full tailoring service for our in-house clients as well as outside tailoring. Master tailor Antonio Palma has been hand sewing clothes for over 60 years. His craftsmanship on alterations surpasses any I have seen before in this business. I love that you have a new collection each season. What’s new for spring and summer? This spring we are featuring bold prints and patterns. Today we received our new Sundek bathing suits from Italy – they’re bold, bright and youthful. Perfect for the beaches of Rhode Island or the French Riviera. Short sleeve vintage print shirts from Beveloqua and muted floral polo shirts from Gran Sasso make the normal polo shirt feel dated. Unlined sports jackets made with lighter-than-air fabrics are a breeze to wear. Suits made from some of the finest Italian mills fit better because attention is paid to all of the details of fit and function.
What are some tips for making a suit look truly polished? If you want to look polished in a suit the first thing you need is the proper fit. An expensive suit can look cheap if it does not fit correctly, and an inexpensive suit can look rich with the correct alterations. Fit is key! What’s a trend you love this year? What’s your advice for incorporating trends without looking trendy? Trend can be a tricky word in my business. Being current is different. I think most men want to look and feel current when they dress. That goes
for business or casual. Right now men in the US are still adjusting to a trimmer fit. In keeping with what is current… watch for the return of pleated trousers, larger waistbands on pants and larger lapels on suits and sports jackets. Blueprint 5 will continue to push the boundaries of what is happening in men’s clothing. We are launching new lines each season to keep the feel fresh and to stay in front of the pack – just like our clients.

I especially loved the face oil - so much that I’m still using it - because it delivered major moisture without feeling oily at all. Once a week, I used the Purifying Clay Mask, which comes as a powder that you mix with the cleanser to make a paste and then apply with a brush. The mask, made from Moroccan clay with lavender, rose petals, chamomile, and peppermint, did this magic thing of cleaning out my pores while softening and brightening my skin. Steaming my face afterwards with the floral Facial Steam: heaven. The trouble with all-natural products is that you can never tell if you’re getting something toothless or you’re getting the real deal. I loved Herbalicious because it does a great job harnessing the power of plants while making everything super gentle. I didn’t notice any of my trademark dryness, even with the more intense products, and didn’t get any breakouts at all, which, for me, is a bit of a miracle.

Criminally Fresh Proof puts a speakeasy spin on farm-to-table dining in Narragansett Saturday nights are meant for going out, but sometimes it can be a bit ticky to find your go-to hangout spot in Southern Rhode Island. Some restaurants are only open seasonally. Other restaurants cater to college kids or senior citizens or families with small children. That’s fine if you belong to one of those groups, but what about the rest of us? Proof, a self-described “prohibition-era style pub,” seemed like the perfect place for my friends to hang out on a Saturday night. Proof is located in Mariner Square in Narragansett. It has a long, comfortable bar, and the dining room is set up with high top red leather banquettes. In the back of the restaurant, there are two pool tables in front of a gas fireplace. The walls are adorned with historic photos of Rhode Island’s shore. One of the hallmarks of Proof is its handcrafted cocktail menu. In the interests of thorough journalism, my crew sampled a couple of these concoctions. The Strawberry Basil Bourbon ($10) was a mix of 1792 Kentucky Straight Bourbon Whiskey, simple syrup, muddled strawberry, and fresh lemon. My cousin loved it. My Peach Old Fashioned ($10) was delicious: Bulleit Rye Whiskey was mixed with peach simple syrup,

angostura bitters and served on the rocks. We thought $10 for these expertly made cocktails was a veritable bargain. The beer list has rotating taps of craft beer, and we had Whaler’s Rise ($7) and Otter Creek Free Flow IPA ($7). The menu at Proof focuses on farm-to-table cuisine and emphasizes an unusual fact: they don’t have a freezer or a microwave in the kitchen, so everything has to be fresh. The menu offers small plates, so everything is made for sharing. My vegetarian cousin was excited to browse the separate Vegan Menu: Chef Joey Medeiros has one daughter who is a vegetarian and another daughter who is vegan, so he knows how hard it can be to find exciting vegan/vegetarian options. Off of the vegan menu, we sampled the Cajun Avocado Bites ($10). Slices of avocado were breaded in panko breadcrumbs, deepfried, and served with a spicy Cajun aioli. We all enjoyed these, vegetarians and carnivores alike. My cousin ordered the Vegan Pulled Pork Tacos ($12) and really liked them. She loved that there were so many menu items for her to choose from, and we didn’t have to play the age-old game, “What can Carrie eat?” Off of the regular menu, we sampled Fried

Lobster Tails (market price), Ahi Tuna Ceviche (market price) and Fried Oyster Sliders ($14). Our favorite of the three was the Oyster Sliders. They were served Po’ Boy-style on a soft house made baguette (cut into three “sliders”) with shredded lettuce and Cajun remoulade. The Matunuck oysters were breaded and deepfried. The ahi tuna ceviche was very fresh, full of wasabi flavor, and served with excellent house made pita chips. The deep-fried lobster tails were tasty, and we greedily dunked the tails in the drawn lemon butter. We also shared a side dish of Truffle Parmesan Fries ($8). The handcut fries were good, and the truffle and parmesan yielded a subtle flavor. Keeping with the theme of “everything is fresh,” desserts are all made in-house. On the night we were there, there was a choice of a berry parfait or a Guinness Brownie. We went with the Guinness Brownie ($7). It had a deep chocolate flavor and a nice fudgy interior. We

A Life in the Kitchen Marty McElroy talks New York, the Food Network, and Turtle Soup, his Narragansett restaurant
Marty McElroy is a lifer: when he was young, he worked in his uncle’s bar in upstate New York, and he’s been cooking in kitchens almost continuously ever since. He first came to Rhode Island to study restaurant management at Johnson & Wales, but after some years in the Big Apple, he came back to settle in Narragansett. Today, McElroy owns Turtle Soup, a seaside restaurant housed in the Ocean Rose Inn, and lives in town with his family. We got to talk with McElroy about his background and perspective on dining trends.

How did you cut your teeth in the industry? New York is where I really learned. I was still a little green – they teach you that awful quick. I ended up at the same place for years, a catering company that did Northern Putnam County down to Wall Street. That was an adventure. I loved that job. A couple of times it almost killed me, but it was so exciting, the logistics of it all. It was very different than just a restaurant. One day you’re doing hot dogs and hamburgers after a golf tournament, the next you’re doing a pig roast on a beach.
How did you decide to go from being a chef to owning a restaurant? I kind of grew up thinking I would own a restaurant some day and do what Uncle Joey does. But then I started to get into management positions high enough to check out the books, and I saw the profit margins, and I thought, “You gotta be kidding me. I will never own a restaurant.” I even tried to get out of the industry for awhile. I worked as a contractor for a couple of years, but I missed the restaurant industry, and it kind

A Taste of the Good Life of sucked me back in. I worked as a chef for the original owners [of Turtle Soup]. I worked there four or five years, and we became friendly with each other. Then the owners said they were moving to Florida, and I bought it. The menu at Turtle Soup is often described as “American,” but I’m impressed by its variety. That’s kind of been the trend. American means different things. It’s not just prime rib. They call it “Modern American,” if you will. Just like America itself, it has many, many influences from many different places. There’s a lot of French, there’s some Asian going on. You can’t just stick a grilled salmon on a plate, like they used to. That was kind of boring. Creatively speaking, there are things I want to do. Sometimes I present [a dish] to people and they’re like, “What the heck is that?” But that’s where The Food Network has helped. People are getting more adventurous, and I’m glad. I don’t want to flip salmon all day. If the Food Network is changing people’s understanding of fine dining, how do you think their tastes will change in the future? I wish I knew the next big trend before it happens. We close every January for a spring cleaning, to start over. This year we changed the menu as well, using more local farms, more organic and all-natural [ingrediants]. We put in all new lighting, new tables and chairs. We gave it more of a beachy vibe. The white linen restaurants are slowly fading away. I’m okay with it. You go out to dinner, it’s supposed to be fun. It’s not supposed to be stuffy. The feedback’s been pretty good so far.
