More than the dirt beneath our feet As a chef, food writer, restaurateur, author and farmer Matthew Evan is also well known for his television series Gourmet Farmer documenting life on his Fat Pig Farm in southern Tasmania, along with other SBS documentaries The Love of Meat and What’s the Catch. The author of thirteen books, Matthew’s latest, Soil, delves into this finite resource – as what we do to the soil we do to ourselves. On a recent tour of Victoria for Gaia EnviroTech and the Committee for Ballarat, Matthew conducted a workshop, Hungry for Knowledge on the Surf Coast, highlighting what connects us all to the soil. Far from being just the dirt beneath our feet we need to know how soil works, what we’ve lost, how it can be repaired and that good soil will reward us with the best tasting produce. Matthew is a captivating raconteur and in Soil he inspires with the incredible story of what keeps the earth and us healthy.

“Fat Pig Farm is a mixed farm of around 28ha with a market garden of 60-70 species of vegetables and 30 perennial fruit and nut trees, chooks, ducks, goats, two dairy cows and a small beef herd. We grow all that food on-site to serve on our restaurant table and we now also like to think of ourselves as soil farmers. My job on the farm is to watch grass grow as the growth of the grass represents what’s happening in the soil. I get really excited about soil, how we treat it, how it effects the growth of the plants and also the flavour. I became obsessed with soil, what happens in soil effects my garden, my harvest, my dinner table, which effects my guests, my family – my soil is intrinsically tied to what happens in my community. If a cow eats the grass it tears it in a different way to when you mow it and triggers it to grow faster and bovine saliva is a growth promotant for grass that has a hormone effect on the grass to put roots down quicker and grow faster.
At present we are losing top soil, which is the magic bit that does all of the world’s growing, 3040 times faster than nature can make it. Australia has lost half its topsoil since Europeans arrived and will lose the other half in about the next thirty years. Over half the antibiotics used in human medicine originated in soil so it matters not just to feed us but to keep us heathy.” Thankfully Matthew’s publisher was finally convinced and this book will hopefully inspire us to what really matters – to make a practical difference in the way we treat our soil and inspire us with hope for the future. “When I think of soil I think of how much we’ve got, how much is in our control, how fast we’re losing it and how we can nourish it. One of the things we can do to nourish the soil is to never see it. Soil doesn’t like to be cut open, it has its own self-regulating ecosystem that allows nutrients that fall on the top to be drawn into the soil and as worms come up they take those nutrients down. Our job on our farm is to grow top soil. If we’re growing food and not topsoil we’re virtually trashing a national asset.” Gail Thomas
