MUSHROOM RAGOUT A favourite time of year foraging for wild mushrooms that pop up around the Victorian country side. Walking through pine plantations finding saffron milk caps or slippery jacks hiding under pine needles. This ragout is a favourite dishes on our autumn menu at the garden feast we serve it with crisp fried polenta bar, truffle oil and a chive kefir on the side of the plate. 1 brown onion 4 garlic cloves 300g Swiss brown caps, quartered 300g field mushroom 200g pine mushroom (optional) 150g black fungi mushrooms 8 sprigs of thyme 200ml white wine 1 Tbsp Dijon mustard 100ml balsamic vinegar
Finely dice onion and slow cook in a medium pot with a little oil for 5 minutes. Add mushrooms to the pot and cook until they start to get a little colour. Slice you pine and field mushrooms and add to the pot and cook for 5 minutes until all the mushrooms start to break down. Add thyme, garlic and mustard and increase heat – you want the mushrooms to start to catch a little on the bottom of the pan. Pour in wine and turn heat down and using a wooden spoon, remove the colour from the bottom of the pan. Reduce the wine to almost nothing then add balsamic vinegar and salt and pepper and bring to the boil. Add a couple of knobs of butter to thicken the sauce and serve.
