Brewing creekside in the mountains high above Aspen would have made legends John Denver and Hunter S. Thompson jealous. With a few fishing poles, some fine reggae jams and the equipment needed to fill a five-gallon fermenter with a saison, Aspen Brewing Co. owner Duncan Clauss joined head brewer P.J. Goudreault and marketing master Willis Brown to show staffers from Thirst Colorado how it’s done in the high country.

The crew rallied for a chilly, rainy August afternoon of brewing a pine saison along Lincoln Creek off Independence Pass. Goudreault, who cut his teeth at Odell Brewing and Oskar Blues, was certain the beer would turn out better and more aromatic than the fishing (skunked). However, nothing worthwhile is easy. There were a few challenges to the most basic part of the brewing process. Trying to boil several gallons of water in
40-degree temperatures at an elevation above 10,000 feet requires patience, Goudreault pointed out. Because of the slow boil, the creekside afternoon brew turned into an evening fireside party. The Aspen crew provided smooth-drinking Blonde and bombers of 10th Mountain Imperial Stout and Biere de Garde, a collaboration produced with Casey Brewing and Blending. Peering through his rain jacket hood, Clauss talked about graduating from CU Boulder and launching the brewery

within a year. His love of the area’s backcountry had locked in his desire to stay in Colorado and launch his business. He eventually nailed down the Aspen location. Located across from the Aspen/Pitkin County Airport with billions of dollars in jets lined up, Aspen Brewing Co. is the only brewery in town and features a tap room downtown. Aspen plans to produce 5,000 barrels this year and upwards of 10,000 in 2016, with additional fermenters scheduled for purchase. Clauss said three-fourths of the beer produced ends up in cans. Eventually, the fireside stories slowed down, as did the rain. During the afternoon, Goudreault had prepared the mash with barley and pine and added it to about seven gallons of water. After heating, the wort was then strained off the grain and brought to a boil. Goudreault said he would “have to eyeball it” before adding hops at the right time. The mix was soon sealed in a stainless steel fermenter, where it would be stored for about two weeks with saison yeast. And the results? Stay tuned. It was mid-May in an uncertain year of the 1990s. Being too early in the season to saddle up the horses and head to the high country, fishing partner Theodore and myself were anxious and elected to pursue Rainbow on the plains of the lower Arkansas River. The heavy spring run-off that year created a silty, murky water and the limited success we experienced came from utilizing a now exhausted supply of crawlers. My angling friend was silent as we walked back to our campsite. Suddenly, in the path before us, was a stretched-out rattlesnake – with a grasshopper in its fangs. Theodore’s face lit up. “I’ve seen ’bows feed on hoppers many times – that feller is not coiled – I’ll grab his head and you steal the hopper.” Mission accomplished. “Now what do we do?” Seeking a solution, I dashed the last 100 feet to camp and grabbed a bottle of the future guv’s signature Rail Yard Ale, dashed back and was able to pour most of it in the mouth of the rattler, which then disappeared in the grass. Before I could retrieve my gear, Theodore had that still-alive grasshopper on his hook and four pounds of dinner on the end of his line. He was whooping and celebrating, when I felt a tapping on my left boot. There was that same darned snake bringing us another grasshopper. Bufford T. Clapsaddle (aka Wilbur Flachman) is a retired newspaper and magazine publisher who has guided hundreds of horse pack trips into the Rocky Mountains for family, friends and business associates during the past 45 years. In the summer of 2013, Clapsaddle logged his 10,000th mile in the saddle on those sojourns. Majority of his tales are revealed only at timberline. ThirstColorado.com

A Vintage Approach to Modern Cocktail Creation By Connie Leaf

As a bartender at one of the busiest restaurants in a world-class ski resort, I have an intimate first look at the needs and interests of imbibers from all over. What I’ve noticed probably won’t surprise anyone. Just like the food revolution, people are moving toward drinks with wholesome ingredients they can pronounce. Seasonal fruits and vegetables, real sweeteners, and quality base spirits and modifiers are on the rise. This awareness and desire for conscious consumption affects the supply and demand sides of the beverage industry. If less is more for the consumer, the producer must look to the past, when cocktail building prospered through simplicity. Interestingly, the modern movement toward wholesome ingredients in drink composition sends us straight back to early 20th century America – way before the rise of sweet and sour mix, frozen drink machines and GMOs. The rebirth of the classic cocktail is upon us. All hail the mint julep! “Can you make that margarita skinny, please?” is a question I hear at least once a week. Little does the average consumer know, all of our drinks would be considered skinny because at our bar, we only use fresh ingredients, and adhere to the classic preparation of such vintage cocktails as the margarita, old fashioned and julep. We don’t carry sweet and sour mix or chemically-sweetened liqueurs. If we feature a “flavored” rum, vodka, gin or whiskey, it’s an infusion using fresh fruit we batch in-house. Just like the hyper-seasonal, localized food revolution, the insurgency of complex, richly flavored cocktails relies on the freshest, highest quality ingredients one can find. In the drink world, this translates to fresh preparations and craft spirits. Vintage spirits, recipes and techniques are making a huge comeback. Bartenders

are paying homage to the contributions of the past. As a result, diners and imbibers are experiencing mainstream cocktails like the gimlet and the daiquiri the way they were originally intended to be enjoyed – as fresh and minimalistic as possible while still maintaining the perfect balance of flavors. Furthermore, drink builders are experimenting with modifiers that were once considered esoteric archives of the past. Back bars across Colorado are plush with varieties of amaro, sherry, fruit brandies and aperitifs, adding complexity to cocktails without increasing size and sweetness. The liquor industry has seen a departure from global consolidation and a rise of the hand-crafted small batch. Less is more, and succinct, decipherable ingredients are the way to go when it comes to the food and beverage industry. It’s the healthful alternative and what a growing number of consumers seek out. But it also is what drives the passionate members of the beverage industry to continue their unique, inspired craftsmanship. The good news is that the garden-tobar concept actually makes it easier to compose a delicious cocktail. Whether you’re simply a natural-born host that wants to impress her friends at next week’s dinner party with a dangerously delicious pitcher of rum punch, or the full-time working bartender who has access to a variety of spirits, modifiers and tools at any given time, each cocktail creation should be sparked by a desire for something well-balanced that satisfies each taste bud and is delicious enough to drink again and again. The Peach Fuzz Drink by Connie Leaf 2 ounces Palisade Peach/Cinnamon Shrub 2 ounces Breckenridge Bourbon 1/4 ounce Overproof Rum of your choice (I used Plantation Dark) Give ingredients a shake and pour out into a tulip-shaped beer glass. Garnish with a peach wedge. That’s all you need for a light and bright, thirst-quenching cocktail using seasonal ingredients close to home. You don’t even need to squeeze a half a lemon or lime, as the vinegar in the shrub is tart enough to balance out the sweetness of the fruit and sugar without the help of citrus. This cocktail works well with just about any spirit (I wouldn’t recommend gin, though. That sounds rough.)

North Denver Welcomes Call to Arms During the summer 2015 opening of Call to Arms Brewing Co., Denver’s Berkeley neighborhood welcomed a walkup brewery that’s positioned between Berkeley Park and the Tennyson Street shopping and dining area. “Call to Arms Brewing Company is a modern craft brewery steeped in oldworld tradition,” according to owner Jesse Brookstein “We brew beers of all styles and categories, with a particular focus on reviving lost styles and imparting our own modern take on them, while still brewing the hoppy and experimental beers that make American brewing so great.” Among them: a dunkelweizen, a Vienna lager, a quaffable pale ale with mosaic and chinook hops, and a Belgian wit infused with cardamom and grapefruit. 10th Mountain: Great Spirits, Great Place to Relax The 10th Mountain Whiskey & Spirit Co. opened in Vail Village with the hope of delivering a “mountain lifestyle” brand to locals and tourists who work and play hard. The tasting room seats about 30 people and is open every day of the week. Bay windows overlook Mill Creek, which drops down Vail Mountain. “It’s an extremely cozy, personal environment that is a great place to relax after a big day on the mountain or a stressful day at work,” says Ryan Thompson, co-owner of 10th Mountain. “We intentionally didn’t put TVs in the tasting room in order to encourage conversation and connection among our guests and spirit guides.” In addition to the moonshine, bourbon, whiskey, vodka and cordials, look for the soon-to-be-available Alpenglow Cordial, which is Colorado Sage and Palisade Peach infused. “It’s sweet, along the lines of Grand Marnier or Tuaca, but has Colorado influenced flavors,” Thompson said. A true lover of craft beer would have to plan more than 300 stops to visit all Colorado breweries this fall. Who wouldn’t want to jump aboard that train? Some would argue that it’s no coincidence that the Super Bowl of the beer world – The Great American Beer Festival – is held in the state that is absolutely crazy for new tastes in crafted beverages. Will the growth trend continue? There’s not much doubt, says John Carlson, executive director of the Colorado Brewers Guild. “At the end of the day, if the operator is brewing flavorful ales and lagers, I think that it can go on in perpetuity.” Creating a great product is part of the equation, but as Carlson points out, the breweries are also serving a greater purpose. “Breweries are creating a sense of place and community – it’s wonderful.” This fall the Brewers Guild, which is a trade group that advocates for breweries, reported 309 licenses had been issued to breweries within the state. But the explosion of crafted drinks isn’t limited to beer. Cocktails, once a

and bars. Although beer sales overall have been flat nationally, craft beer sales have shown double-digit increases in recent years. As a result, the state’s economy has received a boost because of our crafty nature. According to the Beer Institute, a national trade association in Washington D.C. that represents all sizes of breweries, the industry in Colorado represents more than 5,000 jobs ($422 million in wages), which doesn’t include those employed in wholesaling and retailing. Without a doubt, our small breweries and distilleries have become big business.

The ingredients found in those drinks often consist of the offerings from more than 80-plus distilleries that are in operation. Maybe the train ride should include 400 stops. In Durango, where the population is less than 18,000, there are six breweries and two distilleries operating. In Fort Collins, 15 locations are brewing beer and three distilleries are operating in the city of 155,000 residents. The libations craze also has spilled into other aspects of our business communities. Gone are the days of massproduced beer sufficing at restaurants

Preheat oven to 425 degrees and grease a 9-inch baking dish. Combine olive oil, ParmigianoReggiano and garlic in a small bowl and set aside. Roll out pizza dough into a 15” x 9” rectangle and cut into 24 squares. Mix marinara, mozzarella and pepperoni in a bowl and disperse evenly onto the squares. Fold corners up and pinch to seal. Place all of the rolls into the greased baking dish, seam side down. Spoon the olive oil mix on top of the rolls and bake for 15-20 minutes or until golden brown on top. a run club Lucrezi started: Upslope’s Lee Hill Run Club. “I wanted to start a fun run to get people more active and on the trail and Upslope has a great location close to trails. I enjoy having a beer and it’s a nice reward after the run, she says. “It’s a great way to bring people together and get them motivated.” During the fun-run events, Upslope gives participants a discount on beer, while Lucrezi’s other sponsors rotate setting up tents to show runners samples of their products. The partnership between Lucrezi and Upslope also has a charitable feature. During a recent run club event, Upslope donated a dollar from every beer sold to Rocky Mountain Rescue Group to recognize Dave Mackey, a local runner who was injured. “It is the integrity of the brand and the people that make you feel a part of the family,” she says. Other runners apparently agree because the club continues to grow. So when the run ends and the sweat begins to dry, what will we find in Lucrezi’s glass? “It’s always the IPA,” she says without hesitation. “It’s my go-to. Anytime of the day, it’s awesome.” Boulder resident Tiffany Lutke works with Upslope Brewing Co. and is usually stuck between a rock and a beer place.

you ask Coloradans about their hobbies, chances are they might include enjoying the outdoors and drinking craft beer. For professional ultrarunner Gina Lucrezi, the two fit together like a sock and shoe. Among Lucrezi’s sponsors such as New Balance and Pro-Tec Athletics, is Boulder-based Upslope Brewing Company. That’s right — a craft brewery sponsors an ultrarunner; it doesn’t get much more Colorado than that. Lucrezi, 32, says the partnership is perfect in numerous ways. “Trail running fits hand in hand with craft beer. Craft, to me, is rugged, independent and out there on its own. It’s not made for the mass market and neither is trail running. Both are unique in their own way,” she says. “Craft brewers are constantly searching for new styles and techniques, while trail runners are looking for new vistas. It’s freedom for creativity.” That creativity takes place over distances greater than a marathon (26.2 miles). While Lucrezi’s resume is filled with 50-kilometer runs (31.07 miles) and a few 100-mile trail races, her glass is filled with craft beer. So how did her partnership with Upslope Brewing begin? “I consider Upslope as my living room. I lived across the street and my boyfriend and I would always go over,” she says. “I thought to myself, ‘Upslope is a really outdoorsy brewery. I wonder if they would support my trail-running career?’” A partnership was struck. Upslope, which began pouring beer in 2008, supports Lucrezi by providing her with Upslope products, but it goes beyond the beer. “It’s more than just beer or verbal support,” she points out. “They care, even if I don’t have my best day.” Additionally, the brewery provides a venue at their Lee Hill brewery for

As Helen Keller once said, “Life is either a daring adventure, or nothing at all.” Heather Larsen, a local slackliner, chooses to live by these words. As fearless as she is petite, the young athlete has devoted her life to pushing limits within herself and her sport. The little-known but growing sport is rooted in the climbing community and dates back to the mid-1970s. Climbers in Yosemite walked across rigged climbing rope low to the ground as a way to improve balance and tighten their core. It passed the time when they weren’t on a rock face. Now, slacklining has its own following with different techniques evolving each year. Yoga-lining, anyone? How about incorporating trampoline-like flips, twists and jumps for a trick-lining routine? Tandem-lining requires a partner, and water-lining is performed over a body of water. Possibly the biggest thrill comes from highlining, which is performed up to several hundred feet off the ground. Strap yourself in for some of Larsen’s favorites: highlining, yoga-lining and tandem-lining. She stepped off the line long enough to share some of her expertise and adventures with us.

How do you mentally prepare yourself for slacklining and highlining?
So, you mentally prepare for a highline just by understanding that you have the skills and ability to do what it is that you’re about to do. It’s just a slackline. So what it really is, is managing it mentally. Staying calm and breathing is going to be your best bet for going after it and preparing yourself. Stretching doesn’t hurt either.
Q. A.
Tell me more about highlining.
Oh, where should I start? Highlining is a form of slacklining. You go high into the air and you rig it quite a bit differently than a normal slackline. So you have a redundant system with multiple anchor points, so if anything in your system for some reason fails, you always have a backup. It’s actually one of the safest things that I’ve ever done, as long as your rig is redundant and rigged properly. It’s more of a mental game when it comes to going up high.
Q. A.
Do you get scared?
Fear is always there in highlining. You just learn to manage it a little bit differently, or maybe a little bit better, every time. So the more you put
yourself in an environment that’s scary, the more your body is going to get used to it.
Q. A.
What goes through your mind while you’re up on the highline?
In order to walk a highline you can’t be two steps in the past or two steps in the future, you just have to fully be right where you are and manage that moment and nothing else.
Q. A.
What other sports or hobbies do you enjoy?
I love rock climbing and yoga. Those two activities combined with slacklining keep me in great shape physically and mentally. It also keeps me outside, which is why I live in Colorado anyway!
Q.
You were featured on Fabletics (actress Kate Hudson’s athletic-wear website). What started it all?
A.
I have sponsorships and affiliations with a lot of different companies. Fabletics has a program called Masters that supports people who are excelling in what they do, whether it’s teaching yoga, cycling, running or whatever. But they noticed me on Instagram; we got connected and it’s been really cool. So I do events and I promote them and they (continued on page 26...)

promote me, and we have a really good partnership. Being able to share my love with a community that big is a really big blessing in my life.
Q. A.
Would you ever walk a highline without being strapped in?
I used to say that I would probably never walk a highline, now it’s like my biggest passion. And so I don’t ever want to say that I’ll never do that, like that’s way crazy. But it’s not really that crazy. Like, I have a lot of friends that free-solo things and when you have not only the confidence, but the ability and the background, to do something like that, you feel comfortable with it. If it’s something I feel comfortable with at some point, and I feel like that’s what I wanna do, I’ll do it. I don’t see that happening like anytime super soon, but it’s in my mind, more often then I imagined it would be.
Q. A.
What are your favorite breweries to go to when you’re done slacklining?
So I live in Golden and we have a lot of breweries, but one of my favorite breweries is Golden City Brewery. They have a nice garden to just hang out after a day of climbing, or slacklining, or highlining. Then we go to Mountain Toad a lot, too.
Q. A.
Everyone has that one beer that got them into the crafts. What was yours?
That is a good one. Oh, man. Ya know, probably, I would say it would be Golden City’s Legendary Red. I like mixing activities with beer and just chilling out. Yeah, I mean you don’t have to get drunk. You can just have one and hang out and have a good time.
