FRESH BITES
Ingredients
• 2-1”-thick sliced country bread
• 2 clove garlic, minced
• 1/4 c. extra-virgin olive oil
• 2 medium cucumbers, thinly sliced
• 4 c. diced tomatoes (heirloom, cherry, or grape)
• 1 medium red onion, cut into 4 wedges
• 2 tbsp. capers
• 3 tbsp. red wine vinegar
• 1 1/2 c. cubed fresh mozzarella

• 1/2 c. fresh basil leaves, small bite-size pieces
• Kosher salt
• Freshly ground black pepper
Instructions
1. Heat the grill to medium-high and oil the grates. Brush bread and onion with oil and season with salt and pepper.
2. Grill bread and veggies until bread is lightly toasted, 30 seconds to 1 minute per side, and onions are lightly charred and crisp-tender, 3 minutes per side.
3. Transfer grilled bread and onion to a cutting board. Rub garlic on both cut sides of the bread, then let everything cool slightly.
4. Next, cut bread into bite-size cubes, thinly slice cucumber, and chop onion.
5. Whisk together oil, vinegar, and season with salt and pepper in a large enough bowl. Add bread cubes, cucumber, onion, tomatoes, mozzarella, capers and basil.
