Mushroom and Rice Soup
Serving: 4 people
Ingredient List • 2 Tbsp. butter • 1 onion, diced • 16 oz. sliced mushrooms • 2 garlic cloves, minced • 1 cup quick cooking brown rice
Ingredient List • 3 cups low sodium chicken broth • 1 cup dry white wine • 1 tsp. salt • 3/4 tsp. black pepper • 2 Tbsp. heavy cream
THE STEPS 1. Add the butter to a stockpot over medium heat. 2. Add the onions and saute for 5-8 minutes until translucent. Add the garlic and mushroom and saute for 2 additional minutes. 3. Add the rice, chicken broth, wine, salt, and pepper.
4. Bring to a boil, reduce to a simmer and cover for 20 minutes, or until the rice is tender. 5. Finish by mixing in the cream, and serve.
