Traditional
Cooked Fish
• 1 liter water • 2-3 tbsp salt • 1 kg fish (cod/haddock) • Boil the water, add the salt . • The fish is put in boiling water. • Turn off the heat and let the fish stay in the water in 5-7 minutes. Served with butter, potatoes and vegetables. Valgeir Guðjón.

Smoked lamb
Take a good piece of lamb meat and place the meat in a salty brine for 4-7 days. To smoke the lamb you need a smoke shack. Let the lamb meat hang in the smoke shack and smoke it with light dried sheep manure and birch branches for 2-3 weeks. The lamb meat is then boiled for one hour, let it wait for one hour in the pot before serving. Serve with white sauce, potatoes, green beans and red cabbage. VĂŠsteinn Karl
White sauce Melt the butter in the pot and put the flour together and stir until the mixture thickens. Add milk, a little at a time, and stir constantly until it starts cooking and thickening. Add salt and sugar.

Yogurt drink for 4
Contents 2 dl yogurt (125 ml) 1-2 dl of your favorite juice for ex. apple juice or orange juice a few ice cubes 1 banana, chopped 1 apple (peeled and chopped) you can add more fruits such as a pear, you may also put in blueberries or strawberries, frozen or fresh, approx. 1 dl.
All put in a mixer and mixed well. Make sure that the juice is cold if you do not put in ice cubes. MagnĂşs Gunnar

Contents: 2dl milk ½ dl berry juice Utensils: shaker glass tube bowl beater Everything is beaten together in a blender or a beater. Try other flavors: Juice, ice cream sauces or 2 tsp cocoa. TobĂas Freyr.

Rhubarb-pie
1. On the bottom: 400 g chopped rhubarb placed in baking dish along with blueberries (may be omitted)
3. On top: 50 g butter 1 1/2 dl brown sugar 2 dl flour Mix everything together, put over the egg mass. Bake for 20 – 30 minutes with 200 C. Serve with whipped cream or ice cream. You can also eat this unbaked!

2. Egg mass:
2 1/2 dl sugar 2 egg 1/2 dl flour Stir thoroughly and pour over the rhubarb (and the blueberries) in the baking dish.

Lobster Dish
Lobster - butter – salt
Fry the lobster in butter for one and a half minutes each side, 3 minutes overall. Take the lobster out of the pan and sprinkle a little salt over the lobster. Sauce: 2 ½ dl cream ¼ tsp fish stock ¼ tsp soy sauce 2 tsp Rose pepper Put it all together and then put it on the pan and heat it carefully. Stir while heating. Serve with the lobster.

Omelet
Contents: 250 g flour 4 eggs 5 dl milk 50 g margarine ½ tsp salt
Method: Roast five thick omelets on a pan. Stack them
up and divide the filling between layers. You can also heat the meat and vegetables in the sauce and put between the layers.
Filling: 300-400 g cubed meat (fresh or smoked) Canned asparagus cooked vegetables such as carrots, beans, potatoes Sauce: 2-3 dl remainder of sauce or white sauce: 40 g margarine 60 g flour 2-3 dl meat broth mixed with asparagus juice parsley

BBQ chicken
Contents 1 chicken cut in 8-10 pieces Sauce:
1 bottle of BBQ sauce ½ jar apricot marmalade 1 tbsp brown sugar

Chicken pieces put in a baking dish Sauce poured over Roast in an oven at 180°C in 45 minutes Served with fresh salad and rice and the sauce poured on the rice.

Mexican cheese cups
Ingredients: 500 gr. beef 2 tbsp. bread crumbs 100 gr. shredded cheese ¼ can pineapple 4 tbsp. ketchup ½ bag Santa Maria Burrito Seasoning mix 3 dl cream thickening agent for sauce oil for frying
Method: Put beef, spices, bread crumbs and cheese in a bowl and stir. Create small balls (not larger than a golf ball) and fry them in oil until they become brown in color. Pour tomato sauce and pineapple bits into the pan. Then pour cream over and thicken the sauce with thickening agent. Serve with baguette bread, rice or potatoes and salat. You can also add basil, mint, chives and parsley or whatever you find tasty to the recipe.

Fish soup
Contents: ½ leek, diced 2 carrots, diced 2 potatoes, diced 25 g butter 1 filet of haddock, diced 1 cup shrimps 1 lobster cheese spread 2 cubes vegetables stock 2 ½ dl cream 7 ½ dl water 1 tsp turmeric 1 tsp thyme
Method:
Cut vegetables and fry in a pan. Put water, cheese and vegetables in a pot. Add turmeric and thyme. At last add the cream and fish. It is good to taste the soup while it is cooking and improve it as you like. Viktoría Eik

Healthy snack and fruit salad
Healthy snack: Utensils: bowl, spoon and grater
Crazy fruit salad: Lots of grapes, strawberries, melon, apple, orange, banana, kiwi (pick what you like, you can also choose other fruits)
Method: 2 carrots Cut down in appropriate sizes 3 tbsp raisins and put in a beautiful bowl. This 2 tbsp desiccated coconut is really good. 1. shred carrots and put in a bowl. 2. mix raisins and desiccated coconut together with carrots. 3. put in a bag and take with you on walks or serve with beautiful lettuce. Method: 1.Remove the husk and the core of the melons and cut in little pieces 2. Take a spear in one hand and thread fruit pieces on the spear 3. Put together and enjoy.

Smoked rack of lamb
1 smoked whole rack of lamb Put the rack of lamb in a pot in cold water and red wine. Bring the water slowly to a boil. It takes about 30 minutes. Cook for 10 minutes. Take the pot off the stove and let stand for 1 ½ hours. Remove the rack from the pot and put in a large oven pot with a lid. Brush the rack with the sugar glaze and cook in the oven at 200°C for 10- 15 minutes. If the rack is boiled in an oven pot it is put in cold water and red wine and baked at 175°C for about 1 ½ hours. The stock is removed (it may be used for the sauce) and the rack is glazed at 200°C for about 10 minutes.
Helgi Fannar Glaze: One part each: Sweet mustard, ketchup and brown sugar. Dilute with pineapple juice.

Ptarmigan: 1 ptarmigan per person, (only the breast used) 3 tbsp butter 3 tbsp olive oil 5 dl water 15 pc juniper berries, dried, crushed 2 tbsp Maldon salt Sauce: 8 dl stock 4dl cream 100 g butter 2 tbsp wheat Raspberry jam 1 tbsp Fisherman’s friend Salt and pepper
Christmas ptarmigan Brown the ptarmigan breasts and the innards in butter and oil on low heat until golden. Put the ptarmigan and the juniper berries in a pot and sprinkle with salt. Cook in a pot with the lid on at low temperatures for almost an hour. Turn the ptarmigan after 30 minutes. Take the ptarmigan out of the pot and keep warm. Pour the stock through a sieve into the saucepot. Make a butter roux, approx. 100 g butter and 2 tbsp flour and pour water into the stock little bit at a time and stir well, until the sauce is getting moderately thick. Let the sauce cook for 10 - 15 minutes. Season with salt, pepper, a piece of Fisherman’s Friend and raspberries jam. Serve with browned potatoes and Waldorf salad.

Lifrapylsa-liver sausage
1 kg liver 1 ½ tsp salt 5-6 dl milk 400-500 g rye 600 g minced lamb fat Stir everything together and put approx. 200 g of the mixture in a lamb gut and sew together. Repeat with the rest of the dough. Cook in water for 2 hours. Serve with turnips and mashed potatoes.

Spice bread with dates
Contents: 4 ½ dl oatmeal 3 dl flower 1 tsp baking soda 1 ½ tsp baking powder 1 tsp ginger 2 tsp cinnamon 1 tsp cloves 1 tsp cardamom 200 – 250 g dates 4 ½ skimmed milk or other milk
Method: Chop the dates. Put everything together in a bowl and stir. Bake in bread pan at 180 – 200°C ( 1 to 2 pans ). It is good to use a pin to find out if the bread is baked.

125 g butter 1 ½ dl sugar 2 eggs 2 ½ dl flour ½ tsp baking powder 2 tbsp milk 3-4 apples 1-2 tbsp sugar (1 tsp cinnamon)
Apple cake Grease a round baking pan approx. 24 centimeters. Melt the butter and let it cool down, then add the sugar stirring well. Add the eggs, one at a time. Add the flour, baking powder and the milk. Pour the dough into the baking pan. Peel the apples and cut them in thin slices. Arrange the slices in the dough. Strew the cinnamon over the cake. Bake the cake near the bottom of the oven for 30-40 minutes at 175°C (160 °C in a hot air oven).
