Smoked Cheddar & Truffle Mash Potato
EXPERT TIP
Yields approximately 4 cups
Ingredients: 2 lbs Yukon gold potato, peeled and cut in half ½ oz roasted garlic, puréed 50 ml 35% cream 1 oz unsalted butter 5 oz smoked cheddar, grated 1 tsp olive oil 1½ tbsp white truffle oil salt and pepper to taste Method: Cook potatoes in boiling salted water until tender. Drain well, then transfer to a small stand mixer with whip. Add cream, butter, garlic, truffle oil and salt and pepper to taste.

Turkey “Porchetta” Serves 8-10 Ingredients: 1 double breast turkey roast boneless with skin or whole bird For the Spiced Fennel Rub: ½ cup fennel seed 2 tbsp dried rosemary 1 tsp chili flakes 1 tbsp ground coriander 2 tbsp ground oregano 2 tbsp granulated garlic 1 tsp black pepper Method: Rub fennel seasoning over turkey along with desired amount of salt. Roast in a pan with raised grill at 3250F uncovered until internal temp of 1650F is reached. Remove from the oven and let rest slightly covered for 15 minutes then serve.

Scalloped Root Vegetables
EXPERT TIPS
Yields approximately 4 cups Ingredients: 4 ¼ cups parsnip, sweet potato, turnip, rutabaga, sliced thinly on the mandolin ¼ lb Vidalia onion, thinly sliced 75 ml 35% cream 2 oz Parmigiano cheese, grated 1 oz unsalted butter salt and pepper to taste Method: Mix all ingredients in a stainless steel bowl and then transfer to a shallow baking dish. The mixture should be slightly higher near the center of the baking dish. Pour remaining liquid from the bowl overtop. Place dish in oven at convection bake for 45 minutes to 1 hour at 3000F. Test vegetables with a toothpick to ensure they are cooked all the way through.

Quinoa & Cornbread Stuffing Ingredients: ½ lb turkey, ground ¼ lb red onion, chopped 1 clove garlic, chopped ¼ cup celery, diced 1 oz fennel, diced ¾ oz fresh sage 1½ tbsp fresh tarragon ¾ tsp dried savory 1½ tbsp unsalted butter 1¼ cups chicken stock ½ lb quinoa 1 Bartlett pear, large dice ¼ lb cornbread, large dice salt and pepper to taste Method: Cook quinoa by placing in a pot of lightly salted boiling water for 12 minutes. Strain and place on sheet tray and chill immediately. Sauté onions, celery, fennel and garlic in butter on low heat. Add ground turkey and sauté until almost cooked. Add all herbs and continue cooking for 2 minutes. Add the pear and continue until it is fully cooked. Add chicken stock and let it come to a boil. Add in quinoa. Remove from heat and add in the cornbread. Season with salt and pepper and serve.

Shortbread, Two Ways Perfecting winter’s most ubiquitous cookie for discerning taste buds.
Thin & Crispy Yields 4 round discs
Ingredients: 195 g granulated sugar (plus more for sprinkling) 335 g soft butter 450 g pastry flour, well sifted 1 tsp vanilla extract cinnamon for sprinkling if desired Method: Using the paddle attachment of your stand mixer, blend the butter, sugar, and vanilla until smooth and homogenous. Sift the pastry flour well and add to the butter mixture. Paddle on low speed until dough is smooth and there are no lumps of dry ingredients. Separate the dough into four equal portions, wrap and refrigerate for about 30 minutes until the dough is no longer very soft or warm. Carefully roll each dough portion into thin flat discs approximately 8 or 9 inches across and place on a prepared baking sheet to bake. Brush each disc with egg wash and sprinkle with cinnamon sugar, then bake at approx. 3750F until light golden brown. Remove the cookie discs from the oven and score like a pizza while it’s still hot. Allow to cool and firm up on the baking tray before attempting to break apart.

Thick and Soft Yields a small batch
Ingredients: 250 g soft butter 125 g icing sugar, well sifted 315 g pastry flour, well sifted a pinch of fine salt 1 tsp vanilla extract 50 g egg yolks (approximately 2.5 yolks) Method: Using the paddle attachment of your stand mixer, blend the sugar, butter, salt, and vanilla extract together until smooth. Add the sifted flour and paddle on low speed until the dough is smooth and homogenous, and just until there are no lumps of dry ingredients or streaks of butter. No need to over mix. Roll the dough out on some parchment paper at approximately ½ an inch thickness and refrigerate for several hours until nice and firm. Slice the shortbread into squares or portion out using a cookie cutter of your choice, and bake at 3500F until the bottoms are showing light golden colour. No need to bake until the tops of the cookies are golden. Remove from the oven and allow the tray to cool for a few minutes before moving to a wire rack to cool to room temperature.
