WINE-FORWARD
EExecutive Chef Sam Hart of Counter-, has brought Charlotte another markedly inventive concept: Biblio.
Now open in West Charlotte, Biblio is a moody, gothic-style wine and tapas bar that describes itself as “the first reverse wine-pairing restaurant in the world.” Guests select a bottle first, and Executive Chef John Cruze then creates plates to complement the varietal selected. The only menu you’ll receive is the wine list, and the price of each bottle has been “inflated” to also include the cost of your meal.
There are 500 wines at Biblo, and all are small-production labels. Bill Cox is the wine director and Elyse Simchik serves as sommelier.
Hart, who was born and raised in the Queen City and has an extensive background in fine dining, opened the sister concept to Biblio in 2020. Counter-, also on the west side, is an intimate, full sensory restaurant experience featuring themed tasting menus paired to music.
“Originally [Biblo] was going to be one of the last concepts we planned to open, but the space lent itself perfectly to it,” Sam says. “Biblio is the opposite of Counter- in almost every single way. From the vibe, to the music, to the way you order. The biggest difference is that you order wine first, and from that order Chef John in the back figures out a few dishes that perfectly go with your wine.”
Along with the signature pairing service, there is also a limited a la carte menu. The offerings at Biblio change with every week, based on the produce the team is able to source from local farms and Freshlist. The proteins are locally sourced, as well. This seasonal dependence, Sam says, allows the chefs to think on their feet, and have a new challenge every day.
Opening two restaurants in three years, and one at the height of a global pandemic, is no small feat. For Hart, however, there’s no other path.
“This is the only industry where you can physically consume a story and art,” he explains. “We are fortunate to have access to all senses with our work. There is a great deal of sacrifice involved with deciding this life path, but it’s worth it every second of the day.” info biblioclt.com
