Open in West Charlotte, Biblio is Chef Sam Hart’s moody, gothic-style wine and tapas bar that describes itself as “the first reverse wine-pairing restaurant in the world.” Guests select a bottle first, and Chef de Cuisine John Cruz then creates plates to complement the varietal selected. The only menu you’ll receive is the wine list, and the price of each bottle has been “inflated” to also include the cost of your meal.
Here, paired with a glass of bold red, is Cruz’s take on a prime striploin that’s plated with broccoli rabe, an herbaceous mojo verde, and finished with beef jus.
