Nutella© pastry boats MAKES APPROX. 16 PASTRY BOATS Prep time: 15 minutes + Cooking time: 15 minutes 2 eggs 55g (2oz/¼ cup) caster (superfine) sugar 1 tsp vanilla extract 30g (1oz/3⅔ tbsp) plain (all-purpose) flour 25g (1oz/2 tbsp) potato starch Icing (confectioner’s) sugar, to dust 60g (2oz/¼ cup) NUTELLA®
EQUIPMENT: Piping bag + small nozzle 1. Preheat the oven to 180°C (350°F/Gas 4) and line a baking tray with baking parchment. Separate the eggs. In a bowl, whisk the egg whites until they are frothy. Add the sugar and continue whisking until you have firm peaks. 2. In another bowl, combine the egg yolks and the vanilla extract. Incorporate this with the egg whites, mixing gently. Sift the flour and the potato starch into the batter, then slowly fold everything together using a spatula. 3. Immediately pour the batter into your piping bag, fitted with a small nozzle. Pipe boat shaped bases on the baking tray, then pipe along the two edges of each to create raised sides to hold the filling. Dust with icing sugar and bake for 15 minutes. 4. Once out of the oven, remove the pastry boats from the baking parchment using a spatula and leave to cool. Put the NUTELLA® into a piping bag and pipe into the centre of the pastry boats.

1. A day, or up to a week, before making the cake, soak the dried fruits in the ginger wine or brandy, giving it a stir every now and then. 2. Preheat the oven to 120ºC fan/140ºC/275ºF/gas 1. Grease and line a deep 20cm/8in cake tin with greaseproof paper. 3. In a large bowl, whisk the butter, sugar, treacle and orange juice and zest together. Stir in the flour, ground almonds, spices and nuts. Slowly mix in the milk until you have a thick batter. Lastly, stir in the dried fruit mixture, along with the soaking liquid. 4. Transfer the batter to the cake tin and smooth the top with the back of a spoon. Bake for 2 hours, or until a skewer inserted into the centre of the cake comes out clean. Allow to cool completely before removing from the tin. 5. Store for up to 3 months in an airtight container and brush the top and sides every week with some extra ginger wine or brandy until you are ready to decorate it. 6. To decorate, warm the apricot jam in a small saucepan or in the microwave. Transfer the cake to a cake board and brush the tops and sides with half of the jam. 7. Generously dust a work surface with some icing sugar and roll out the marzipan to a circle at least

Add more icing sugar to the work surface and this time roll out the fondant icing, following the same steps as before, to a circle about 32cm/13in in diameter. Trim the edges neatly and smooth out any marks and bumps with your hands for a smooth finish. Secure the ribbon around the bottom. 9. To crystallize the fruit and the rosemary sprigs, brush each piece with aquafaba and sprinkle with granulated sugar. Set aside to dry thoroughly. Once dry, decorate the top of the cake with the fruit and other toppers. 10. Leave to dry out slightly overnight before serving or keep in an airtight container for up to 6 weeks in advance.
