Gazpacho Soup
Ingredients: n 2 large firm tomatoes, chopped n 1 1/2 cups tomato juice n 1 cup cucumber, seeded and chopped n 1/2 white onion, chopped n 1/4 cup green bell pepper, chopped n 1 clove finely minced fresh garlic n 1 tsp. hot sauce n 2 Tbsp. balsamic vinegar n Salt and pepper to taste
Doris is a vegan chef and longtime resident of West Hollywood. Born in Vienna, Austria, Doris grew up in Ecuador and came to West Hollywood in 1957, and never left! After working in the movie industry for many years, she started a vegan catering company and starred in her own cooking show on the local television station for ten years. Doris’ recipes are easy to follow, and you can find most of the ingredients at the Helen Albert Certified Farmers’ Market on Mondays, from 9:00 am to 2:00 pm.
Directions: Combine all the ingredients in a food processor or blender. Mix at high speed until very smooth. Chill in the refrigerator for at least 4 hours and serve with a little chopped cilantro on top.
Cauliflower Alfredo Sauce Over Fettuccine
Ingredients: n 1 lb. fettucine, cooked al dente n 4 cups cauliflower florets n 2 cloves garlic, smashed n 2 Tbsp. nutritional yeast n 1 1/2 tsp. salt n 1 1/2 tsp. pepper n 1/2 tsp. ground nutmeg n 1 cup unsweetened cashew milk n 1 Tbsp. chopped parsley
Directions: In a large pot, fill with water to cook the fettucine noodles. Once boiling, add the fettucine and cook until al dente. In saucepan, cook the cauliflower in the cashew milk until tender and most of the milk is absorbed. Let cool for five minutes and add the cooked cauliflower and all other ingredients in a blender until creamy. Put the sauce back into a saucepan and heat slightly. Once warm, serve over pasta and sprinkle with the chopped parsley.
