SYNOPSIS REPORT REDESIGNING THE FOOD COURT AREA IN THE SILVER ARC MALL, LUDHIANA ,PUNJAB SITE OVERVIEW
:- In this project I chose a site (3rd & 4 floor) of Shopping mall located in Ludhiana Punjab :-Name - SILVER ARC :-It is a seven floor building including the ground floor. :- Implementing the idea of redesigning the site into a FOOD COURT & FUN ZONE .
SUBTITLE Redesigning the food court & fun zone.
AIM & OBJECTIVES • To implement the new modern interiors. • To operate not just as a space for everyday urban life but also have a temporal programming to accommodate special events or festivals -Augment an experience centered on food • To create a absorptive urban space that is versatile and inclusive in nature • A space to incubate small food businesses and cultivate both culinary and cultural happenings

Site statement The Silver Arc Global Mall is one of the popular malls in Ludhiana having a good collection of clothing and lifestyle brands and dining options. It is a great place to spend quality time with family and friends. There is a food court where one can choose from a lot of options. RESEARCH STATEMENT Keeping in mind the disconnect that has developed towards our social relationship with food as a result of urbanization, the thesis aims to propose a Social-cultural Hub centered around food. A unique mix of food related activities is to be explored. LIMITATIONS
:-People in hurry cannot visit :- It is on top floor :- Adapting local food over franchise :- They are not connected well 6

A food court is generally an indoor plaza or common area within a facility that is contiguous with the counters of multiple food vendors and provides a common area for self-serve dinner.

Food court •Food court One of the most popular components of a shopping mall, however, is a collection of different restaurants known as a food court. A food court offers mall visitors with a collection of diverse eateries, from local franchises to multinational chains. Venues in a typical food court operate side-byside to each other, with a centralized common dining area to accommodate customers.
Kitchen Layout Components of commercial kitchen ❑ Cleaning/washing - The cleaning and washing section of a commercial kitchen includes appliances and products like sinks, ware washing machines, and drying racks, among others. ❑ Storage - The storage area can be split into non-food storage, cold storage, and dry storage
❑ Food Preparation - he food preparation area has sinks for washing produce, cutting areas, and mixing areas. Typically, the food preparation area is split into a section for processing raw foods (breaking down cuts of beef, for example) and a section for sorting foods into batches. ❑ Meal Cooking - The meal cooking area makes the rest of the kitchen tick. This is where main dishes are finished, so here you will have large pieces of equipment like ranges, ovens, and fryers.

In primary space planning, the general rule of thumb fis determining the area allotted is that the dining area should comprise of most of total area. The kitchen, storage and preparation area should take up the remaining space. These dimensions will have to be adjusted if you plan on having A waiting area or a bar. But those should be the approximate percentages for the total area.
FURNITURE SIZES
The basic components of any restaurant interior are the chair and the table. Depending upon restaurant type, menu, service, table setting, furniture selection, and degree of intimacy required, table size and overall chair space requirements can, and should, vary greatly.
A restaurant that encourages rapid turnover of customers will normally provide smaller table top and chair sizes. On The other hand, those restaurants that encourage limited turnover and emphasize the winning and dining experience will typically provide larger table top sizes and larger, more comfortable chairs, with greater distance between table groupings . There is no agreement among even the most experienced restauranteurs and restaurant designers as to what the optimal table and chair dimensions should be . In addition, many other design factors will influence the final decision, including circulation and egress, accessibility standards, methods of service, and the overall dimensions of 10 any given space.
•Service - The service area is the final section of a commercial kitchen. If you have a serving staff, this is where they will pick up finished dishes to take to Customers a self-service area needs to be located at the very front of the kitchen, just after the meal cooking area, to shorten the distance between completed meals and customers.
For an average range of heights that can help dictate what type of tables you're getting, there are three different categories: dining, counter, and bar. Depending on which you choose, you can change the entire atmosphere of your restaurant and can encourage certain types of customers to come. Each of these types has a standard restaurant table height, which is featured in the chart below. 11
These drawings highlight several critical dimensions that the designer must consider. Aisle circulation must be adequate in width ; other clearances to consider include chair depth from edge of table and clearance between chairs . While laying out chair and table arrangements, a designer must anticipate the potential conflict between a patron leaving a seat and a tray-carrying waiter 12
Restaurant and Dining Room Seating Dispersed seating suitable for guests with restricted mobility should be available in restaurants, coffee shops, and dining facilities . As a guide, the Uniform Federal Accessibility Standards (UFAS) require a minimum of 5 percent of restaurant seating to be accessible . Accessible aisles should connect the entrance to these seating locations, public restrooms, and self-service areas such as salad bars, condiment stands, or buffet tables . Comfortable seating for waiting should be available to customers near the entrance .

Where seating areas are raised on platforms, accessible seating and similar services should be available on the main-floor level or a ramp to the upper level should be provided . Aisles serving accessible seating should be at least 3'0" wide, which typically requires a 6'0" clearance between parallel tables, or 4'6" between rotated tables . (See Fig. 21 .)

Lunch counters
FIG. 31 shows some of the basic clearances required for a typical counter between the front face of the counter and the nearest obstruction. Figure 32 shows a section through the counter and back counter.
The clearance from the top of the seat to the underside of the counter top and the depth of the counter top overhang are extremely important. Buttock-knee length and thigh clearance are the key anthropometric measurements to consider for proper body fit Figure 31
Fig. 32, although higher, only serves a portion of the seated users and is intended primarily for standing patrons. The most logical solution is a separate footrest, integral with the stool

A tilted mirror above the food display at salad bars also aids customers in wheelchairs and children . (See Fig . 35.) For some customers with restricted mobility, poor balance, or limited hand function, it is more difficult to carry a plate . Therefore trays should be available at both salad
Dining Tables and Chairs Accessible seating locations should allow guests with restricted mobility to dine with ambulatory customers. Tables should provide knee space for customers in wheelchairs, and dining chairs should be coordinated to provide comfortable seating at the same table height .
. In this instance, the reach of a customer in a wheelchair is extended if the wheelchair can be angled or positioned perpendicular to the tray slide . This is possible if the lower face of the counter is recessed to provide low kneespace. (See Fig . 34.).

Figure 31 shows some of the basic clearances required for a typical counter: 36 in, or 91 .4 cm, for workspace behind the counter; 18 to 24 in, or 45 .7 to 61 cm, for the counter top ; and 60 to 66 in, or 152 .4 to 167.6 cm, between the front face of the counter and the nearest obstruction. Figure 32 shows a section through the counter and back counter. Most counters are about 42 in, or 106.7 cm, in height .
