Seattle Fish Co. has been a supplier of high-quality seafood to restaurants, hotels, caterers, and grocers throughout Denver and the Rocky Mountain area. We are a family-owned, multigenerational company that supplies quality products to more than 1,500 companies regionally, making us one of the largest seafood distributors in the Western United States. Jumpin’ Good Goat Dairy is a small, farmstead goat dairy and creamery nestled in the heart of the Rocky Mountains. All of our cheeses are hand-crafted in small batches, ensuring the utmost quality and consistency. We humanely raise our own herd of dairy goats as well as supporting other local goat milk producers throughout the year. Besides producing the best cheeses possible, the dairy also is dedicated to sustainable agriculture and educating the general public on the importance of small family farms, access to local food, and sustainability all via our educational farm tours and year-round country store. MEET YOUR PRODUCER Dawn Jump began making cheese twentyfour years ago, while recreating pioneer life in the 1800s at a historical museum. Whether it was a love of old world tradition, a kindling of her artistic passion, or the natural outcome of growing up in a family of chefs, bakers and caterers, her artisan farmstead cheese maker’s passion was kindled from that moment on. These days the whole family is involved in dairy operations, joined by a fantastic team of production, craftsmen, packaging, and livestock - all spending their days loving goats, and their nights crafting cheese. Their goal is to create a regional destination for all things wholesome to eat, in support of local producers and talented food purveyors.

Jumpin’ Good Goat Dairy strives to foster sustainability on the farm, in the creamery and in our community. As a farmstead cheese producer we raise our own herd of dairy goats. We strongly advocate the humane treatment of all animals and our goats are given the best life possible. Our pastures are maintained and grazed on a rotational schedule and our does are fed an all Non-GMO diet of pasture, local hay and local whole grains. In our creamery, the cheesemaking process produces whey, which we in turn store and give to local hog producers as a rich, sustainable protein source for their animals. We are also looking into alternative uses for whey as it is a constant by-product of all cheesemaking. Outside the creamery we have an underground cave that is a natural

We are also heavily involved in the economic sustainability of our community. We participate in and with several organizations such as the Chaffee County Economic Development Corporation, Central Colorado Foodshed Alliance, Buena Vista Chamber of Commerce, Salida Chamber of Commerce and the Rocky Mountain Cheese Guild. In November of 2009, we ventured out to New York’s Hudson Valley to attend the Dairy Sheep Association of North America’s annual symposium. Regardless of having zero experience in raising sheep or making cheese, we returned with the desire to create Colorado’s first Artisanal Sheep Dairy and Creamery. In September 2010, less than a year later, we welcomed our flock of 40 milking ewes and one ram. Cheese making began three days later. The adventure has only continued from there. On Christmas Eve of 2010, our first lambing season unexpectedly began. Since then, Fruition Farms Dairy & Creamery has grown to include three distinct sheep’s milk cheeses, all of which highlight a different characteristic of the wonderfully rich milk from which they are made. Through all the challenges, failures, and the success of receiving our first cheese award, we have been fueled to continue on our path of learning and the development of our craft.

In May of 2009, Alex Seidel purchased a 10-acre farm just south of Denver in Larkspur, CO. Seidel’s vision was to create a learning center and a sustainable relationship between farm and restaurant. In November 2009, the vision began to grow. Former Fruition Restaurant Sous Chef, Jimmy Warren, joined the “Farm” which helped to solidify the foundation and direction that has taught many in the community and local restaurants the fundamentals of farming produce, animal husbandry, and the creation of artisanal products.

Bee Squared honey is produced from honey bees that have not been chemically treated for varroa. Since mites reproduce faster than bees they quickly adapt to chemical controls; bees suffer from this practice. We do not take our bees to California for almond pollination either. Our bee losses exceed the national average of 42%. If 42% is the national average with chemical controls for varroa, that too is unsustainable. Price should be but one consideration in the purchase of food. How that food is raised and prepared should also be part of the purchasing decision. MEET YOUR PRODUCER Beth started out like most beekeepers - with 2 hives. She began producing more honey than her family could consume. Pappardelle’s is a small family owned company that started in Denver, CO in 1984, custom creating fresh flavored pasta for white tablecloth executive chefs. At that time virtually no one was doing flavor infused pasta. From our humble six flavor start, we now have a portfolio that includes over 120 different varieties of fresh, frozen and dried pasta, ravioli, gnocchi, sauces and pesto.

SOURCING

Papardelle’s sources nearly all of their ingredients from locally owned and operated companies and give preference to local growers whenever possible. They use only the finest durum semolina wheat flour in their pasta, all of which is milled by North Dakota Mills.

Did you know that all of our pasta dough is handmade by six individuals? Each of our master dough makers has gone through a one year apprenticeship to learn their craft. Did you know that we have had one individual who for the past 16 years has hand crafted every one of our ravioli fillings, sauces and pesto? She ensures that all of our filled products and sauces are rich in texture and flavor. Did you know that we slow-dry our pasta in custom created drying rooms with special airflow patterns that mimic Italian method of hanging pasta on clotheslines to dry in the gentle Mediterranean breeze? Unlike larger companies, who in essence bake their pasta at much higher temperatures to dry the same production day, we dry our pasta at lower temperatures over a two to four days, which allows us to preserve the nutritional value of our dry pasta as well as its intense color and flavor.

This coffee is especially close to our hearts. The Monserrate community used to grow coca, the plant used to manufacture cocaine. Through a group effort between Atlas Coffee Importers, the Colombian government, and buyers like us, the community has switched entirely to farming specialty coffee, and we are now garnering interest from other local communities to do the same. Our pastures are maintained and grazed on a rotational schedule and our does are fed an all Non-GMO diet of pasture, local hay and local whole grains. In our creamery, the cheesemaking process produces whey, which we in turn store and give to local hog producers as a rich, sustainable protein source for their animals. In November of 2009, we ventured out to New York’s Hudson Valley to attend the Dairy Sheep Association of North America’s annual symposium. Regardless of having zero experience in raising sheep or making cheese, we returned with the desire to create Colorado’s first Artisanal Sheep Dairy and Creamery. In September 2010, less than a year later, we welcomed our flock of 40 milking ewes and one ram. Cheese making began three days later. The adventure has only continued from there. On Christmas Eve of 2010, our first lambing season unexpectedly began. Since then, Fruition Farms Dairy & Creamery has grown to include three distinct sheep’s milk cheeses, all of which highlight a different characteristic of the wonderfully rich milk from which they are made. Through all the challenges, failures, and the success of receiving our first cheese award, we have been fueled to continue on our path of learning and the development of our craft.

In May of 2009, Alex Seidel purchased a 10-acre farm just south of Denver in Larkspur, CO. Seidel’s vision was to create a learning center and a sustainable relationship between farm and restaurant. In November 2009, the vision began to grow. Former Fruition Restaurant Sous Chef, Jimmy Warren, joined the “Farm” which helped to solidify the foundation and direction that has taught many in the community and local restaurants the fundamentals of farming produce, animal husbandry, and the creation of artisanal products.

Our Grafton Village line of aged cheddar is handmade using traditional methods, using primarily Jersey cow’s milk, known for its high protein and butterfat content. Our traditional cheddars are aged from one to five years, sometimes longer. The more the cheese ages, a stronger “bite” is developed. Our flavored cheddars are made only with natural ingredients. Cheesemaking traditions in this historic village date back to the 19th century, where The Grafton Cooperative Cheese Company was founded by dairy farmers who gathered together in a cooperative to make their surplus milk into cheese. Now part of the non-profit Windham Foundation, Grafton Village Cheese continues to produce artisanal cheddar using traditional handmade methods with milk from local family farms. The mission of the Windham Foundation is to promote Vermont’s rural communities through its philanthropic and educational programs.

SUSTAINABILITY

Grafton Village Cheese receives milk from 36 small local family farms, all of which emphasize healthy herds. If their herd is healthier, it’s better economically for them and it produces better milk, which produces better cheese. Grafton Village Cheese even has a premium program, in which farms are rewarded based on their herd’s well-being. This program ensures we sustain the agricultural communities and farms and a continued supply of high quality milk. But what does the company do for the community (besides make delicious cheese)? Our philanthropy is as varied as our history. We host cultural and educational events for the community. Our bee losses exceed the national average of 42%. If 42% is the national average with chemical controls for varroa, that too is unsustainable. Price should be but one consideration in the purchase of food. How that food is raised and prepared should also be part of the purchasing decision. MEET YOUR PRODUCER Beth started out like most beekeepers - with 2 hives. She began producing more honey than her family could consume. SOURCING

Papardelle’s sources nearly all of their ingredients from locally owned and operated companies and give preference to local growers whenever possible. They use only the finest durum semolina wheat flour in their pasta, all of which is milled by North Dakota Mills.

Did you know that we slow-dry our pasta in custom created drying rooms with special airflow patterns that mimic Italian method of hanging pasta on clotheslines to dry in the gentle Mediterranean breeze? From Northern Argyll on the west coast of Scotland, you will find Loch Etive Steelhead. These fish are raised in a remote pristine environment with pure waters and fast flowing currents that provide the ideal conditions for growing a superior product. Loch Etive Steelhead is high in Omega-3 oils and is an efficient converter of feed. This sashimi grade fish is ideally suited for cooked applications as well as crudo, carpaccio, tartare, and sushi. Loch Etive is available year-round with and has a mild with clean ocean taste and firm yet buttery texture.

SUSTAINABILITY

Loch Etive’s feed conversion ratio have an average of 1.2:1. This means it take just over one pound of wild bait fish to grow one pound of Loch Etive Steelhead. Additionally, these fish have plenty of room to grow. The average stocking density below 17 kg per cubic meter, which is about 98% water and 2% fish. This is one of the lowest stocking densities of any trout farm in the world. Loch Etive’s sea farm sites are allowed to rest for about 8-13 weeks after harvest and also benefit from very high tidal exchanges in these areas. The high exchanges naturally disperse any nutrients from the farm over a wider area.

All scallops are shucked by hand and the mussels are removed. The shells are discarded and thrown overboard to serve as future habitats for the next generation of scallops. The scallops are roughly graded for size at this point.

Scallop boats dredge for sea scallops in the MSC Certified USA Fishery. Most scallops are harvested in depths ranging between 200-250 feet deep. Each harvest is pulled into the boat and the dredge is set back out to harvest again. Scallops that have landed on the boat are then moved to the shucking area.

RINSING The scallops are placed in a “washer” and rinsed with sea water (no additives or chemicals). They are then bagged and placed on ice until the boat returns to port.

Meagre was recently awarded with a “1Star Superior Taste Award” by the renowned International Taste and Quality Institute (iTQi) in Brussels. SOURCING

American Tuna purchases & processes only MSC certified sustainable pole & line albacore from the American Albacore Fishing Association (AAFA). Bresola

Prosciutto is one of the most natural products that humans can make. It requires only 3 ingredients: the hind legs of carefully selected and raised Italian pigs, sea salt and clean mountain breezes (to “prosciugare,” or “thoroughly dry,” the meat). Very few products in the world reflect the natural relationship between the land and its inhabitants as directly as prosciutto does.

Regional Origin: Lombardia (Valtellina) / Production: One of the few Italian salumi made from beef! As per U.S. regulations, all imported Bresaola is made in Uruguay. Principe Bresaola differentiates itself by exclusively utilizing the “punta d’anca” cut or top round, in its recipe. Pepper, cinnamon, cloves and other spices are used to produce this air-dried, single cut of lean beef.

Prosciutto di San Daniele can only be made in the small town of San Daniele del Friuli, close to the city of Udine. This tiny town, with little over 8,000 inhabitants, is nestled between the Dolomite mountains and fertile low-lying pastures. The unique combination of strong, cold alpine winds and warm marine breezes from the Adriatic Sea, create the incredible micro-climate for air drying and aging the famous Prosciutto di San Daniele: low humidity, excellent ventilation and cool breezes. Due to its small size and geography, very limited production is available worldwide.

Characteristics: Meat tends to be a darker, rich color, with succulent, lean and tender texture.

As Principe’s signature item, our Prosciutto di San Daniele is so unique in many ways: • The Beginning: we start with the animals!
