GOAT CHEESE
Jumpin’ Good Goat Dairy • Colorado
• Featured in Mario Batali’s Farm to Table Cookbook • Produced about 250,000 pounds of cheese this year • Aging caves can store 3,700 wheels of cheese
ABOUT
Jumpin’ Good Goat Dairy is a small, farmstead goat dairy and creamery nestled in the heart of the Rocky Mountains. All of our cheeses are hand-crafted in small batches, ensuring the utmost quality and consistency. We humanely raise our own herd of dairy goats as well as supporting other local goat milk producers throughout the year. Besides producing the best cheeses possible, the dairy also is dedicated to sustainable agriculture and educating the general public on the importance of small family farms, access to local food, and sustainability all via our educational farm tours and year-round country store. OUR MISSION Jumpin’ Good Goat Dairy is dedicated to sustainable agricultural practices, the education of our local and regional community on the function and health of local food systems, the humane treatment of our animals and DARN good cheese-making.
MEET YOUR PRODUCER Dawn Jump began making cheese twentyfour years ago, while recreating pioneer life in the 1800s at a historical museum. Whether it was a love of old world tradition, a kindling of her artistic passion, or the natural outcome of growing up in a family of chefs, bakers and caterers, her artisan farmstead cheese maker’s passion was kindled from that moment on. These days the whole family is involved in dairy operations, joined by a fantastic team of production, craftsmen, packaging, and livestock - all spending their days loving goats, and their nights crafting cheese. Their goal is to create a regional destination for all things wholesome to eat, in support of local producers and talented food purveyors.

SUSTAINABILITY
Jumpin’ Good Goat Dairy strives to foster sustainability on the farm, in the creamery and in our community. As a farmstead cheese producer we raise our own herd of dairy goats. We strongly advocate the humane treatment of all animals and our goats are given the best life possible. Our pastures are maintained and grazed on a rotational schedule and our does are fed an all Non-GMO diet of pasture, local hay and local whole grains. In our creamery, the cheesemaking process produces whey, which we in turn store and give to local hog producers as a rich, sustainable protein source for their animals. We are also looking into alternative uses for whey as it is a constant by-product of all cheesemaking. Outside the creamery we have an underground cave that is a natural

60 degrees Fahrenheit year-round, we take advantage of the passive temperature control to age several varieties of cheese. We are also heavily involved in the economic sustainability of our community. We participate in and with several organizations such as the Chaffee County Economic Development Corporation, Central Colorado Foodshed Alliance, Buena Vista Chamber of Commerce, Salida Chamber of Commerce and the Rocky Mountain Cheese Guild. As a part of the community’s economic landscape we understand the importance of supporting and educating other local businesses and individuals. Our country store on site provides educational farm tours as well as selling other locally crafted foods and products to bring the message of local agriculture and sustainability to the general public.

SHEEP MILK CHEESE
Fruition Cheese • Colorado
• Colorado company • Family-owned • Only sheep’s milk cheese made locally • 1st place winner American Cheese Society Competition
ABOUT
In November of 2009, we ventured out to New York’s Hudson Valley to attend the Dairy Sheep Association of North America’s annual symposium. Regardless of having zero experience in raising sheep or making cheese, we returned with the desire to create Colorado’s first Artisanal Sheep Dairy and Creamery. In September 2010, less than a year later, we welcomed our flock of 40 milking ewes and one ram. Cheese making began three days later. The adventure has only continued from there. On Christmas Eve of 2010, our first lambing season unexpectedly began. Since then, Fruition Farms Dairy & Creamery has grown to include three distinct sheep’s milk cheeses, all of which highlight a different characteristic of the wonderfully rich milk from which they are made. Through all the challenges, failures, and the success of receiving our first cheese award, we have been fueled to continue on our path of learning and the development of our craft.
In May of 2009, Alex Seidel purchased a 10-acre farm just south of Denver in Larkspur, CO. Seidel’s vision was to create a learning center and a sustainable relationship between farm and restaurant. In November 2009, the vision began to grow. Former Fruition Restaurant Sous Chef, Jimmy Warren, joined the “Farm” which helped to solidify the foundation and direction that has taught many in the community and local restaurants the fundamentals of farming produce, animal husbandry, and the creation of artisanal products.

COLORADO HONEY
Bee Squared Honey • Colorado
• Raw honey • Produced in Colorado • Producing honey for over 18 years • President of the Colorado Bee Keepers Association
ABOUT
Bee Squared honey is produced from honey bees that have not been chemically treated. Locally produced honey is better for you and for your environment. Bee Squared offers honey from hives located in Boulder, Larimer, and Weld Counties in Colorado. Trust and support your local beekeeper.
SUSTAINABILITY
Bee Squared honey is produced from honey bees that have not been chemically treated for varroa. Since mites reproduce faster than bees they quickly adapt to chemical controls; bees suffer from this practice. We do not take our bees to California for almond pollination either. Our bee losses exceed the national average of 42%. If 42% is the national average with chemical controls for varroa, that too is unsustainable. Price should be but one consideration in the purchase of food. How that food is raised and prepared should also be part of the purchasing decision. Bee Squared believes it provides the best value for your honey dollar.
MEET YOUR PRODUCER Beth started out like most beekeepers - with 2 hives. She began producing more honey than her family could consume. It was not long, however, before 2 turned into 4 and 4 turned into 10 and 10 to 25. It was time for her to sell honey. Bee Squared now has 60 hives and has expanded our beekeeping and honey distribution operations to provide honey to a host of retail, wholesale and institutional accounts along the Front Range of Colorado.

ITALIAN PASTA
Pappardelle’s • Colorado
• Family owned company • Custom created fresh flavored pasta • Made with “old-world” Italian pasta techniques combined with “newer world” international flavor infusion • Made with all natural high-quality, nutritious herbs & spices, vegetables and cheeses • Handcrafted in small batches • True al dente texture to please the palate
ABOUT
Pappardelle’s is a small family owned company that started in Denver, CO in 1984, custom creating fresh flavored pasta for white tablecloth executive chefs. At that time virtually no one was doing flavor infused pasta. From our humble six flavor start, we now have a portfolio that includes over 120 different varieties of fresh, frozen and dried pasta, ravioli, gnocchi, sauces and pesto.
SOURCING
Papardelle’s sources nearly all of their ingredients from locally owned and operated companies and give preference to local growers whenever possible. They use only the finest durum semolina wheat flour in their pasta, all of which is milled by North Dakota Mills.
SUSTAINABILITY
Pappardelle’s is continually looking to improve our products and offer our customers the healthiest products that we can. As part of that mission, we are constantly looking to increase the number of organic or sustainably grown ingredients in our products. We are committed to doing our part and demanding from our suppliers raw ingredients that are truly natural, organic and free from genetically modified organisms. We want to help grow the roughly 1% of US organic cropland to sustainable levels, so it is accessible to all.

DID YOU KNOW?
Did you know that all of our pasta dough is handmade by six individuals? Each of our master dough makers has gone through a one year apprenticeship to learn their craft. Did you know that we have had one individual who for the past 16 years has hand crafted every one of our ravioli fillings, sauces and pesto? She ensures that all of our filled products and sauces are rich in texture and flavor. Did you know that we slow-dry our pasta in custom created drying rooms with special airflow patterns that mimic Italian method of hanging pasta on clotheslines to dry in the gentle Mediterranean breeze? Unlike larger companies, who in essence bake their pasta at much higher temperatures to dry the same production day, we dry our pasta at lower temperatures over a two to four days, which allows us to preserve the nutritional value of our dry pasta as well as its intense color and flavor.

The Spice Guy is the dedicated to being a best in class company and strives toward 3 pillars when selecting the finest ingredients on Earth; Quality, Sustainability and Social Equity. With their hands on approach and a “this is not your mom’s spice brand” philosophy the sky is the limit for what The Spice Guy can do for the food industry moving forward.

HYBRID STRIPED BASS Colorado Catch • Colorado
• Colorado-farmed • Year-round availability • Consistent sizing • Clean taste
ABOUT
It’s not always necessary to go to the coasts for a great flavored seafood option. Colorado Catch Hybrid Striped Bass is naturally raised from fingerlings to fillets in pure artesian waters flowing from Colorado’s San Luis Valley. This firm yet flaky and moist textured fish is farmed in Alamosa by a familyowned company, Colorado Catch. Co-owner Tyler Faucette says the company produces 350,000 pounds of the bass each year, and nearly half of that stays local, being consumed within the state of Colorado. Colorado Catch’s unique geothermal resources and circular tank system have enabled them to increase growth rates, eliminate off-flavors and sustain yields for yearround production.
SUSTAINABILITY
Hybrid Striped Bass are rated “best choice” (aka green rated) by Monterey Bay Aquarium’s Seafood Watch Program. The fish are fed a chemical-free and growth hormonefree feed that is sourced from Certified Sustainable Fisheries.

AGED CHEDDAR
Grafton Village Cheese Co. • Vermont
• Small batch cheese made with unpasteurized milk • Cheddars made predominantly with Jersey cow milk for a richer, creamier profile • Premium milk from local farms • Handmade by proud cheesemakers • Naturally aged • A mission-driven business of the non-profit Windham Foundation
ABOUT
Our Grafton Village line of aged cheddar is handmade using traditional methods, using primarily Jersey cow’s milk, known for its high protein and butterfat content. Our traditional cheddars are aged from one to five years, sometimes longer. The more the cheese ages, a stronger “bite” is developed. Our flavored cheddars are made only with natural ingredients. Cheesemaking traditions in this historic village date back to the 19th century, where The Grafton Cooperative Cheese Company was founded by dairy farmers who gathered together in a cooperative to make their surplus milk into cheese. Now part of the non-profit Windham Foundation, Grafton Village Cheese continues to produce artisanal cheddar using traditional handmade methods with milk from local family farms. The mission of the Windham Foundation is to promote Vermont’s rural communities through its philanthropic and educational programs.
SUSTAINABILITY
Grafton Village Cheese receives milk from 36 small local family farms, all of which emphasize healthy herds. If their herd is healthier, it’s better economically for them and it produces better milk, which produces better cheese. Grafton Village Cheese even has a premium program, in which farms are rewarded based on their herd’s well-being. This program ensures we sustain the agricultural communities and farms and a continued supply of high quality milk. But what does the company do for the community (besides make delicious cheese)? Our philanthropy is as varied as our history. We host cultural and educational events for the community. Last year we donated 3,000 pounds of cheese to local food banks and $100,000 to our milk suppliers. And they have a grant program for local non-profits.

OIL & VINEGAR
Cibaria International • California
• Olive Oils produced to the International Olive Oil Council Specifications • All products produced in the USA • The highest quality and freshest single and multi-varietal Extra Virgin Olive Oils • True artisan quality product from centuries old recipes
ABOUT
Located in Southern California, Cibaria International has long been a leading supplier of wholesale olive oils and wholesale balsamic vinegars to every segment of the food industry. Kathy Griset, our founder, has traveled the world procuring the very finest products from some of the oldest and the most traditional olive oil and balsamic vinegar producing families in the Mediterranean, making them readily available to our customers. A single mom with a vision is unstoppable, and our founder, Kathy Griset is living proof of this. Managing an olive oil company for someone else and feeling restricted in what she could sell, who she could sell to and how she should sell it, Cibaria International started to take shape. It took one year to visualize her concept in completion (along with lots of courage & determination) risking all to bring that vision to life. In 1998 Cibaria International was incorporated and set up a manufacturing facility in the historic Pierre Biane Winery in Rancho Cucamonga, California. Her integrity, honesty, fairness and loyalty has earned her wide trust and great respect among customers, employees and vendors. Kathy built the company on a belief in customer service and has guided the company through good, and some not so good, times by focusing on how best to serve the customer. Our products, brands and services are continually updated to meet the changing needs of those customers. We are proud to say that Cibaria International has grown to over four times the size of the original olive oil company assets purchased and continues to have a valued and significant presence throughout every category of the industry. Today’s team of employees take great pride in the quality and service they consistently bring to the marketplace.

Scallop boats dredge for sea scallops in the MSC Certified USA Fishery. Most scallops are harvested in depths ranging between 200-250 feet deep. Each harvest is pulled into the boat and the dredge is set back out to harvest again. Scallops that have landed on the boat are then moved to the shucking area.

MEAGRE - STONE SEA BASS Adromeda Farm • Greece
• Applications sushi, sashimi, grilled, baked, boiled • Seasonality year-round with consistent pricing
ABOUT
Seattle Fish Co. partnered with Adromeda Farm, which flourishes in the crystal Mediterranean waters of Greece. The partnership allows fish to be flown directly from Greece to Denver, Colorado. The farmers of Adromeda Farm sustainably raise Meagre, a fish also know as “Stone Sea Bass”. This farm is a deep-water, open-ocean system off the coast of Greece. Meagre are raised for 16-20 months in the strong ocean currents. They’re fed a high-quality, GMO-free feed containing more than 50% fishmeal and fish oil harvested from certified fisheries.
Meagre was recently awarded with a “1Star Superior Taste Award” by the renowned International Taste and Quality Institute (iTQi) in Brussels. Meagre is visually similar to the European Sea Bass (aka Branzini), with a pearly-silver colored skin and a yellow-colored mouth. The shiny white, low-fat meat of Meagre offers a protein rich in vitamins and minerals. The taste profile is mild and delicate. Meagre is a moist, but firm in texture and is often compared to Corvina.
SUSTAINABILITY
Adromeda Farm is fully vertically integrated and has obtained the highest productivity rating in the Mediterranean region. With the use of biological filters, they have developed water-recycling systems, which protect the fry from various diseases. This also reduces water consumption and minimizes environmental impact.

SALMON Skuna Bay Salmon • Vancouver Island
• Vancouver Island craft raised salmon • Hand graded – Only top 6% of fish qualify • Full traceability • Mild, tender, and buttery flavor with a firm texture
ABOUT
Skuna Bay salmon are raised in a natural ocean environment off the coast of Vancouver Island in the Nootka Sound. This area is the perfect environment to raise salmon given its glacier-fed waters from the Gold River, which flow into the Pacific Ocean and provide fast-flowing tides, cold, clear water and perfect salinity. Skuna Bay’s Craftsman farmers live on the farm 24/7 and work daily to ensure the natural waters stay as pristine as when the farm was first established. Their farmers are wonderful stewards of the ocean; once fish are harvested from a Skuna site, that ocean location is allowed to rest and regenerate before being restocked. 33% of Skuna Bay’s farm sites are always in fallow, meaning farmers intentionally sacrifice potential farm use to protect the ocean environment.
SUSTAINABILITY
Skuna Bay salmon exists entirely to reduce pressure on wild stocks. They are the first salmon farmer in the world to have multiple farms awarded with the Best Aquaculture Practices certification by the Global Aquaculture Alliance and has now added a second “star” certification for its processing operations. Skuna Bay salmon’s feed conversion ratio is low at 1.2 to 1. Additionally, for US consumers, it is the most locally raised farmed Atlantic salmon. Because of this, its carbon footprint is lower than other options as it is trucked rather than flown. SFC CODE

CAVIAR & ROE Calvisius • Europe
• Family owned • Only hand packed and inspected • Only use White Sturgeon (the “Prince Fish”)
ABOUT
The values, our history, what we believe in. The values of our history. Each single gesture or deed we make has always been guided by concepts such as Quality, Craftsmanship and Sustainability. These daily guidelines are inspiring values and ongoing objectives of our efforts. We consider that the value of our products depends entirely on sturgeons’ well-being. This is why we employ only spring water and fist rate fodder for our breeding tanks. Since ours is both a farming and processing company, we have direct control over each phase in the sturgeon’s life cycle. This allows us to trace the history and origins of every sold package.
SFC CODE
SUSTAINABILITY
Since 1992, Calvisius Tradition is the first brand of sustainable caviar worldwide. Today, as in the past, it is made using only the roe of white sturgeon. At least 12 years are required for these precious black pearls to mature. Even now, the unique characteristics of this tradition are considered the benchmark in the world of fresh caviar. Ever since 1998, most of the known varieties of sturgeon were included in the Washington Convention’s endangered species’ list. Calvisius have been fighting for decades to safeguard this threatened breed. Our sustainable methods have awarded us with the Friends of the Sea certification. Plus our facilities have been granted the “BRC” and “IFS high level” certifications, rarely given to fish breeders and caviar manufacturers.

SARDINES
Blue Galleon • Portugal
• Fresh from the sea, never frozen • MSC-certified • Packed within hours of catch • Wild caught • All natural
ABOUT
Bela Sardines are sourced from traditional Portuguese fisheries along the non-industrial coastline, which have existed for centuries. These sardines are from the Algarve region of Portugal, which is the most southern coast stretching 100 miles from Cape St. Vincent to Vila Real de Santo Antonio on the Spanish border. The sardine is the staple dish of the Algarve. The large, juicy, Portuguese sardines have been the main cash crop in this region for years. Bela sardines are caught by local Portuguese fishermen and packed fresh within hours resulting in a product that is healthier, looks better, has less smell, and tastes far better than other brands and varieties.

After losing everything in WWII, the Dukcevich family was forced to flee its native home of Croatia and take refuge in Trieste, a multicultural port city in Northeastern Italy. This area, in the region of Friuli Venezia Giulia, is located on the Austro-Hungarian border and is enveloped by the Alps. Noticing the unique culture and eating habits of their new home city, the Dukcevich family began producing and selling traditional recipe frankfurters and cooked and roasted hams to the locals, and the rest, as they say, is history!

PROSCIUTTO
Bresola
Prosciutto is one of the most natural products that humans can make. It requires only 3 ingredients: the hind legs of carefully selected and raised Italian pigs, sea salt and clean mountain breezes (to “prosciugare,” or “thoroughly dry,” the meat). Very few products in the world reflect the natural relationship between the land and its inhabitants as directly as prosciutto does.
Regional Origin: Lombardia (Valtellina) / Production: One of the few Italian salumi made from beef! As per U.S. regulations, all imported Bresaola is made in Uruguay. Principe Bresaola differentiates itself by exclusively utilizing the “punta d’anca” cut or top round, in its recipe. Pepper, cinnamon, cloves and other spices are used to produce this air-dried, single cut of lean beef.
Prosciutto di San Daniele can only be made in the small town of San Daniele del Friuli, close to the city of Udine. This tiny town, with little over 8,000 inhabitants, is nestled between the Dolomite mountains and fertile low-lying pastures. The unique combination of strong, cold alpine winds and warm marine breezes from the Adriatic Sea, create the incredible micro-climate for air drying and aging the famous Prosciutto di San Daniele: low humidity, excellent ventilation and cool breezes. Due to its small size and geography, very limited production is available worldwide.
Characteristics: Meat tends to be a darker, rich color, with succulent, lean and tender texture.
As Principe’s signature item, our Prosciutto di San Daniele is so unique in many ways: • The Beginning: we start with the animals! Principe’s proprietary farm-to-field breeding program ensures world class animal welfare standards, with the lowest impact on nature, and the healthiest impact on the animals! Our pigs (Large Whites, Landraces and Durocs) enjoy less stress, excellent nutrition and a natural environment, leading to superior quality and better tasting meat;
Flavor: Sweet and musty with mild/delicate spices, slightly aromatic.
Mortadella Regional Origin: Emilia-Romagna (Bologna) / Production: Principe Mortadella is made from 100% select pure pork meat. According to Bologna tradition, it is ground and blended with cubes of top quality bacon fat, fresh spices and natural flavors, then carefully cooked in humidity ovens. Characteristics: Unique, homogenous smoothness and delicate taste.
• The Selection: even with an excellent upbringing, not all animals qualify to be a Principe branded Prosciutto di San Daniele. In fact, close to 20% of legs are rejected by our rigid Principe Quality Control team. Principe hand selects only the finest legs available, as they mature more gradually and hence develop a well-balanced, sophisticated taste;
Speck Ham Regional Origin: Trentino Alto Adige / Production: Principe Speck is a dry-cured smoked ham that has been lightly seasoned for a minimum of 22 weeks with delicate hints of flavor and spices.

GRASS FED BEEF Crystal River Meats
• Colorado-Raised • 100 % grass fed and finished, USDA and AGA certified. • Verified Non-GMO by The Non-GMO Project. • Beef is aged for 15-21 days to add tenderness and flavor. • 28-day shelf life
ABOUT
Crystal River Meats owns and controls every animal that it puts through their various programs. All of their animals are born, raised, finished, and processed in the U.S.A. They take great pride in insuring that each animal is finished to their standards, which are the highest in the grass fed industry. Each cowboy and range ecologist in their company is trained to monitor the forage and grass growth stages to be sure the cattle are getting the very best diet. All the while a trained nutritionist is regularly getting feedstuff samples and evaluating the quality. Every single animal is hand selected and individually weighed by our cowboys at time of harvest. This careful care and full control results in the finest grass fed beef available. Their secret to raising a consistent grass-fed product is by crossing Hereford with Angus. When these two breeds are crossed you get the best of both the Hereford and Angus traits. These genetic strengths compounded by the effects of hybrid vigor thru cross-breeding create the ultimate grass fed beef cow.
Vision: Play an active role in the preservation and stewardship of land located in the Rocky Mountains. Mission: Dedication to the supply of healthy and sustainable food, while improving the local economy, maintaining excellent land stewardship and animal well-being practices.
