Seattle Fish Co. has been a supplier of high-quality seafood to restaurants, hotels, caterers, and grocers throughout Denver and the Rocky Mountain area. Jumpin’ Good Goat Dairy is a small, farmstead goat dairy and creamery nestled in the heart of the Rocky Mountains. All of their cheeses are hand-crafted in small batches, ensuring the utmost quality and consistency. They humanely raise their own herd of dairy goats as well as supporting other local goat milk producers throughout the year. Besides producing the best cheeses possible, they are also dedicated to sustainable agriculture and educating the general public on the importance of small family farms, access to local food, and sustainability all via their educational farm tours and year-round country store. THEIR MISSION Jumpin’ Good Goat Dairy is dedicated to sustainable agricultural practices, the education of their local and regional community on the function and health of local food systems, the humane treatment of their animals and DARN good cheese-making.
MEET YOUR PRODUCER Dawn Jump began making cheese twentyfour years ago, while recreating pioneer life in the 1800s at a historical museum. Whether it was a love of old world tradition, a kindling of her artistic passion, or the natural outcome of growing up in a family of chefs, bakers and caterers, her artisan farmstead cheese maker’s passion was kindled from that moment on. These days the whole family is involved in dairy operations, joined by a fantastic team of production, craftsmen, packaging, and livestock - all spending their days loving goats, and their nights crafting cheese. Their goal is to create a regional destination for all things wholesome to eat, in support of local producers and talented food purveyors.

2104 6-year Goat Parmesan Jumpin’ Good Goat Dairy strives to foster sustainability on the farm, in the creamery and in their community. As a farmstead cheese producer they raise their own herd of dairy goats. They strongly advocate the humane treatment of all animals and their goats are given the best life possible. Their pastures are maintained and grazed on a rotational schedule and their does are fed an all Non-GMO diet of pasture, local hay and local whole grains.
SUSTAINABILITY
In their creamery, the cheesemaking process produces whey, which they in turn store and give to local hog producers as a rich, sustainable protein source for their animals. They are also looking into alternative uses for whey as it is a constant by-product of all cheesemaking. Outside the creamery they have an underground cave that is a natural 60 degrees Fahrenheit year-round, they take advantage of the passive temperature control to age several varieties of cheese.

In November of 2009, Fruition Farms ventured out to New York’s Hudson Valley to attend the Dairy Sheep Association of North America’s annual symposium. Regardless of having zero experience in raising sheep or making cheese, they returned with the desire to create Colorado’s first Artisanal Sheep Dairy and Creamery. In September 2010, less than a year later, they welcomed their flock of 40 milking ewes and one ram. Cheese making began three days later. The adventure has only continued from there. On Christmas Eve of 2010, their first lambing season unexpectedly began. Since then, Fruition Farms Dairy & Creamery has grown to include three distinct sheep’s milk cheeses, all of which highlight a different characteristic of the wonderfully rich milk from which they are made. Through all the challenges, failures, and the success of receiving their first cheese award, they have been fueled to continue on their path of
learning and the development of their craft. In May of 2009, Alex Seidel purchased a 10-acre farm just south of Denver in Larkspur, CO. Seidel’s vision was to create a learning center and a sustainable relationship between farm and restaurant. In November 2009, the vision began to grow. Former Fruition Restaurant Sous Chef, Jimmy Warren, joined the “Farm” which helped to solidify the foundation and direction that has taught many in the community and local restaurants the fundamentals of farming produce, animal husbandry, and the creation of artisanal products.

ABOUT
The Grafton Village line of aged cheddar is handmade using traditional methods, using primarily Jersey cow’s milk, known for its high protein and butterfat content. Their traditional cheddars are aged from one to five years, sometimes longer. The more the cheese ages, a stronger “bite” is developed. Their flavored cheddars are made only with natural ingredients. Cheesemaking traditions in this historic village date back to the 19th century, where The Grafton Cooperative Cheese Company was founded by dairy farmers who gathered together in a cooperative to make their surplus milk into cheese. Now part of the non-profit Windham Foundation, Grafton Village Cheese continues to produce artisanal cheddar using traditional handmade methods with milk from local family farms. The mission of the Windham Foundation is to promote Vermont’s rural communities through its philanthropic and educational programs.
SUSTAINABILITY
Grafton Village Cheese receives milk from 36 small local family farms, all of which emphasize healthy herds. If their herd is healthier, it’s better economically for them and it produces better milk, which produces better cheese. Grafton Village Cheese even has a premium program, in which farms are rewarded based on their herd’s well-being. This program ensures they sustain the agricultural communities and farms and a continued supply of high quality milk. But what does the company do for the community (besides make delicious cheese)? Their philanthropy is as varied as their history. They host cultural and educational events for the community. Last year they donated 3,000 pounds of cheese to local food banks and $100,000 to their milk suppliers. And they have a grant program for local non-profits.

ABOUT
Haystack is an independentlyowned creamery that produces a diverse line of award-winning, artisan goat’s and cow’s milk cheeses. They source their highquality milk from their partner goat dairy at the Skyline Correctional Center in Cañon City and from the family-owned and –operated Longmont Dairy in Boulder County. The only other thing you’ll find in their cheese are pure, clean flavors, and ingredients you can pronounce.
SUSTAINABILITY
They are committed to an integrated farming system and strong community ties. All of their whey discarded in the cheese making process is picked up by local farmers to use on compost distributed in Boulder County or fed to their pigs. They source their goat’s milk from the agricultural program within the Colorado Correctional Industries. This is a model correctional program that equips non violent offenders with a High School GED, welding and machinery certificates as well as an earned wage. This program is voluntary and lowers state recidivism rates as well as gives inmates life and work skills applied once released.

Bee Squared honey is produced from honey bees that have not been chemically treated for varroa. Since mites reproduce faster than bees they quickly adapt to chemical controls; bees suffer from this practice. They do not take their bees to California for almond pollination either. Their bee losses exceed the national average of 42%. If 42% is the national average with chemical controls for varroa, that too is unsustainable. Price should be but one consideration in the purchase of food. How that food is raised and prepared should also be part of the purchasing decision. Bee Squared believes it provides the best value for your honey dollar.
Beth started out like most beekeepers - with 2 hives. She began producing more honey than her family could consume. It was not long, however, before 2 turned into 4 and 4 turned into 10 and 10 to 25. Red Camper Picnic Supply celebrates the roadside stands, painted picnic tables and packed ice chests of summertime adventures with their line of handcrafted saucy jams called Deliciousness and a spicy charcuterie accompaniment called Mostarda. It all started with a backyard overflowing peach tree that begged for peach jamming. For years I made my famous Whiskey Peach Deliciousness for friends and family. “Deliciousness” because it wasn’t quite jam, and it wasn’t quite syrup, but it sure was delicious. 10 years later, I entered Deliciousness into the Denver County Fair and won first place! In the spring of 2013 they officially launched Deliciousness at the local farmers market with 2 flavors. 4 years later Red Camper cooks up 7 different flavors of Deliciousness and 1 flavor of Mostarda for the still hungry fans.

Being raised off the grid by homesteaders in an arid environment where every drop of water was precious, and every scrap of litter had to be consciously handled, created a sense of responsibly to resources and a genuine understanding of stewardship of the environment for owner Maura Gramzinski. Packaging, marketing materials and sampling utensils are always recyclable, recycled and/ or compostable. When possible they work with local farmers for fruit procurement, minimizing their transportation carbon footprint. As their line of products grows and their standards increase they move closer and closer to a fully seasonal model for all flavors which means a higher quality, more regionally sourced, ethical product is achieved more efficiently which creates a more sustainable food for all.

All scallops are shucked by hand and the mussels are removed. The shells are discarded and thrown overboard to serve as future habitats for the next generation of scallops. The scallops are roughly graded for size at this point.

Scallop boats dredge for sea scallops in the MSC Certified USA Fishery. Most scallops are harvested in depths ranging between 200-250 feet deep. Each harvest is pulled into the boat and the dredge is set back out to harvest again. Scallops that have landed on the boat are then moved to the shucking area.

RINSING The scallops are placed in a “washer” and rinsed with sea water (no additives or chemicals). They are then bagged and placed on ice until the boat returns to port.
QUALITY CONTROL & GRADING Upon returning from sea, the boats are unloaded and the scallops are packed on ice. At this point, the final grading and quality control checks are made. The scallops are packed in the cans according to Seattle Fish Co.’s specifications.
TRUCKED TO SEATTLE FISH CO. A temperature-controlled truck leaving Boston, MA makes it to Denver, CO within 30 hours. The scallops are then packed and delivered exclusively to Seattle Fish Co. customers.

From Northern Argyll on the west coast of Scotland, you will find Loch Etive Steelhead. These fish are raised in a remote pristine environment with pure waters and fast flowing currents that provide the ideal conditions for growing a superior product. Loch Etive Steelhead is high in Omega-3 oils and is an efficient converter of feed. This sashimi grade fish is ideally suited for cooked applications as well as crudo, carpaccio, tartare, and sushi. Loch Etive is available year-round with and has a mild with clean ocean taste and firm yet buttery texture.
SUSTAINABILITY
Loch Etive’s feed conversion ratio have an average of 1.2:1. This means it take just over one pound of wild bait fish to grow one pound of Loch Etive Steelhead. Additionally, these fish have plenty of room to grow. The average stocking density below 17 kg per cubic meter, which is about 98% water and 2% fish. This is one of the lowest stocking densities of any trout farm in the world. Loch Etive’s sea farm sites are allowed to rest for about 8-13 weeks after harvest and also benefit from very high tidal exchanges in these areas. The high exchanges naturally disperse any nutrients from the farm over a wider area.

The farmers of Adromeda Farm sustainably raise Meagre, a fish also know as “Stone Sea Bass”. This farm is a deep-water, open-ocean system off the coast of Greece. Meagre are raised for 16-20 months in the strong ocean currents. They’re fed a high-quality, GMO-free feed containing more than 50% fishmeal and fish oil harvested from certified fisheries.
Meagre was recently awarded with a “1Star Superior Taste Award” by the renowned International Taste and Quality Institute (iTQi) in Brussels. Meagre is visually similar to the European Sea Bass (aka Branzini), with a pearly-silver colored skin and a yellow-colored mouth. The shiny white, low-fat meat of Meagre offers a protein rich in vitamins and minerals. The taste profile is mild and delicate. Meagre is a moist, but firm in texture and is often compared to Corvina.

Bresola
Prosciutto is one of the most natural products that humans can make. It requires only 3 ingredients: the hind legs of carefully selected and raised Italian pigs, sea salt and clean mountain breezes (to “prosciugare,” or “thoroughly dry,” the meat). Very few products in the world reflect the natural relationship between the land and its inhabitants as directly as prosciutto does.
Regional Origin: Lombardia (Valtellina) / Production: One of the few Italian salumi made from beef! As per U.S. regulations, all imported Bresaola is made in Uruguay. Principe Bresaola differentiates itself by exclusively utilizing the “punta d’anca” cut or top round, in its recipe. Pepper, cinnamon, cloves and other spices are used to produce this air-dried, single cut of lean beef.
Prosciutto di San Daniele can only be made in the small town of San Daniele del Friuli, close to the city of Udine. This tiny town, with little over 8,000 inhabitants, is nestled between the Dolomite mountains and fertile low-lying pastures. The unique combination of strong, cold alpine winds and warm marine breezes from the Adriatic Sea, create the incredible micro-climate for air drying and aging the famous Prosciutto di San Daniele: low humidity, excellent ventilation and cool breezes. Due to its small size and geography, very limited production is available worldwide.
Characteristics: Meat tends to be a darker, rich color, with succulent, lean and tender texture.
As Principe’s signature item, their Prosciutto di San Daniele is so unique in many ways: • The Beginning: they start with the animals! Principe’s proprietary farm-to-field breeding program ensures world class animal welfare standards, with the lowest impact on nature, and the healthiest impact on the animals! Their pigs (Large Whites, Landraces and Durocs) enjoy less stress, excellent nutrition and a natural environment, leading to superior quality and better tasting meat;

Mortadella Regional Origin: Emilia-Romagna (Bologna) / Production: Principe Mortadella is made from 100% select pure pork meat.
