Scallon and Feta Radish Dip Ingredients • • • • • • •
4 ounces feta cheese 2 tablespoons olive oil 1 scallion 1/2 lemon 1/2 bunch radishes, quartered (about 1/2 cup) 1/4 teaspoon cane sugar 1/4 teaspoon black pepper
Directions 1. Scrub the radishes and scallion with an abrasive plastic pad reserved for vegetables, followed by rinsing. Remove tops and leaves. 2. Remove and discard the green and root of the scallion. 3. In a blender or food processor combine the feta, olive oil, white portion of the scallion, and squeezed lemon. 4. Add the radishes and continue mixing until they’re combined smoothly. 5. Pour into a bowl and stir in the reserved scallion greens, fresh ground black pepper, and cane sugar. 6.
