We received several entries in our contest to name the Club’s newsletter and we must say all of them had tremendous merit. We would like to especially thank Edwin Koh, Fok Kar Kee and Daniel Sim for their creative submissions. We decided to go with one of Goh Hoi Lai’s submissions. Hoi Lai suggested that we call the newsletter Raffles Connection. The Corporate & Communications Sub-Committee felt that this best reflects what we hope the newsletter essentially stands for – a platform to build personal and golfing connections at the Club. We also hope that the name of the newsletter reminds golfers of all levels to connect with and respect the game many of us love. As you have seen, we have already incorporated Raffles Connection into the masthead of this newsletter. It also coincides with the commission of a new designer for the newsletter. So, we have a brand new look to go with the brand new name. We hope members start calling our newsletter by its name from now on. “Have you seen the Raffles Connection?” should be a common refrain around the club going forward. Finally, we would like to reiterate that we appreciate all the submissions in our contest to name the newsletter. For his winning submission, Hoi Lai wins a free golf flight at the Club for himself and three of his friends, who don’t have to be members. 0b

6 green lemons for the juice. 1 liter coconut milk. 30 to 40 grams of orange leaves, which you can easily buy at the market, comes up to 20 over leaves. 8 table spoons of fish sauce. Let’s start cooking! - First of all, get the blender out and pour in your dried red chili, lemon grass and blue ginger. Switch on the blender and bring the ingredients down to a smooth paste. - Do the same for your red shallots and fresh red chili. - Then mix both sets of ingredients together. - Heat up a pot, slow fire and put in 4 tablespoons of extra virgin olive oil, then add in the paste that you have prepared and on a slow fire stir it for 2 minutes, then add in the chicken.
Recipe for Thai Red Curry Chicken Ingredients 2 kilos of chicken – Deboned but leaving the skin, and cut into slices of 1 inch thick and 3 inches in length pieces. 60 grams of dried red chili – soaked in a bowl of hot water till soft and ready for the blender. Do not drain out the water as it will help the blending process to be smoother. 15 sticks of lemon grass - peel off the outer layer of the lemon grass and then chop them up fine. 150 grams of red shallots – peeled and chopped finely. 120 grams of fresh red chili – chopped into smaller pieces. 50 grams of blue ginger (langkua) – cut into small pieces for blending with the above ingredients.

- Mix the chicken and paste well, then bring the fire up to medium heat and keep stirring for 5 minutes. - When you see your raw chicken looking a little pale in color, add in your 8 tablespoons of fish sauce. Remember not to add salt or pepper in this dish, the taste comes from your fragrant spices and fish sauce. - Bring the medium heat up a little more and stir it for another 2 minutes, then add in the liter of coconut milk and stir well, after 1 minute more of stirring, bring the fire down to medium again. - Now add in the juice of your lemons and stir well, then add in your orange leaves. Crush or break the leaves by hand and smell the beautiful aroma. Add it all into the curry. - Stir and taste your curry, it should be ready. It takes you only half an hour to prepare this dish.
During the July to August period, the Golfers’ Terrace has lined up three specials for you – one Daily Special and two Evening Specials. The Daily Special is Braised Beancurd in Claypot with Rice. As we all know, claypot dishes are very popular whether its claypot bak kut teh or claypot chicken rice. Food cooked in claypot always has a homely, natural taste. The braised beancurd is cooked in the claypot with vegetables, mushrooms, prawns and other ingredients. A delicious gravy that mixes nicely with rice is also created in the process to add to your culinary pleasure. Priced at $7.50 per claypot, this is a dish that will satisfy many a hungry golfer. The first Evening Special on the menu is a tasty dish of Deep Fried Prawn Fritters. Excellent to munch on with your drinks after a gruelling afternoon of golf, the prawn fritters are fried to perfection and not overly oily. A plate of eight fritters is priced at $10. Keeping with the deep fried theme, the second Evening Special is the Deep Fried Wanton. The ingredients in the wanton include ground pork, and chopped green onions and water chestnuts. It is another great accompaniment to your beverage as you sit in the Golfers’ Terrace with your buddies after a game. A plate of eight pieces is priced at $8.

As a new course, the conditions of the Meilan club’s fairways and greens are obviously pristine. It is characterised by its wetlands, rolling fairways, dynamic bunkers and sandy surrounds all constructed round a large lake that resembles the shape of an Oriental Dragon.

1. Applicable only to green fees (cannot be used to offset buggy fees) 2. Will be issued only when the golf course is closed for the session by the Club due to inclement weather 3. Issued with a value that is 50% of the green fees paid - including GST 4. Not transferable (can be used to offset green fees for one round of golf only 9 or 18 holes) 5. Valid only for 1 month from date of issue 6. Issued only to golfers who have not teed off for the 2nd nine of their 18hole round 7. Can be used on any day subject to the prevailing timesheet booking procedures and availability of slots 8. Cannot be exchanged for cash 9. When the green fee payable for the 2nd game is more than the value of the raincheck given, the golfer must pay the difference. However, if the green fee payable is less than the value indicated on the raincheck, there will be no refund of the difference.

Requests received on working days can be processed within one or two hours. Requests on nonworking days will be processed by the next working day. When a lost card is replaced, the new card becomes active and the lost card is deactivated. As such, even if you find the lost card later, it cannot be used.
