Omamoodi ja põnevalt! Ka nobedaid ja tublisid hoidistajaid võib hooajal tabada ideede kriis. Justkui on kõike juba tehtud ja proovitud, aga tahaks midagi uut katsetada. Soovin selles raamatus lisaks harjumuspärastele maitsetele pakkuda ideid, kuidas esmapilgul üsna erinevaid tooraineid oma­vahel sobitada ning saada tulemuseks väga suupäraseid h ­ oidiseid. Esiotsa ei tuleks näiteks selle peale, et rabarbereid täiendada porganditega või et ühte purki panna sõstrad ja porgandid. Julgelt võib magusates hoidistes kasutada ka maitsetaimi. Näiteks sõstraid rikastada estragoniga või õunamoosi vürtsitada piparmündilehtedega. Tähtaniis ja tüümian aga annavad moosile hoopis põneva maitsevarjundi. Ploomimoosi on ikka tehtud, kuid proovi seekord miksida seda kiiviga. Kollastest ploomidest võid valmistada vale-aprikoosimoosi. Sind aitavad selles ingver ja kaneel. Maitsele panevad punkti ploomi­ kivide hakitud tuumad. Ketšupit oleme harjunud valmistama tomatitest. Kuid vürtse ja aroome täis ketšupi põhikomponendiks võib olla hoopis banaan. Ja kas teadsid, et isegi kukeseened sobivad moosiks teha? Proovi julgesti uusi maitseid. Algav hoidistamishooaeg tuleb sel aastal veidi teistmoodi. Margit Aedla

Magusad hoidised

Magusa mekiga porgandirabarbrimoos 500 g porgandeid 1 dl vett 500 g rabarbreid 500 g moosisuhkrut

Koori porgandid ja lõika ­väikesteks tükkideks, pane potti, lisa vesi ja keeda 10 minutit. Puhasta ja tükelda rabarbrid, lisa potti ja keeda 5 minutit. Sega saumikseriga ühtlaseks püreeks. Lisa suhkur samal ajal segades. Keeda 5 minutit. Pane ettevalmistatud klaas­ purkidesse ja sulge. Lase jahtuda.

Kollase paprika vürtsmoos tüümianiga

1 kg kollaseid paprikaid 85 g jalapenot 350 g sibulat 20 g küüslauku 12 sl punase veini äädikat 130 g suhkrut kivisoola veskis valget pipart (võib olla ka must pipar) kimp tüümiani

Lõika aedviljad kuubikuteks.

Tõsta kõik koostisosad potti, ­kuumuta keemiseni, vähenda kuumust ja hauta 45 minutit.

Püreesta saumikseriga ja maitsesta soola, tüümiani ning valge pipraga. Kuumuta keemiseni, vala hoidis kuumadesse puhastesse purkidesse ja sule õhukindlalt.

Põnev küüslaugumoos 200 g küüslauku 1 dl õli 1 dl suhkrut 1 dl mett 2 sl veiniäädikat 1 tl soola

Purusta küüslauk.

Sega kõik ained kokku ja lase vähemalt üks päev seista. Säilita külmkapis.
