Serves: 12

Ingredients: 1 medium size onion 1 medium size tomato 1 lb. ground turkey 1 can low sodium black beans 1 medium size jalapeno, sliced small sprig of cilantro for garnish 1 small can or reduced sodium chopped tomatoes with onions & green chilies 1 small package of whole wheat tortillas 1/2 cup low fat cheddar cheese, shredded

Instructions: 1. Chop onion and brown in medium saucepan on medium heat with ground turkey until turkey is cooked thoroughly and reaches 165 degrees F. 2. Chop tomato and set aside. 3. Drain beans and set aside. 4. Add Rotel to onion and cooked ground turkey and mix until combined. 5. Fill each tortilla with ground turkey mixture, chopped tomatoes, black beans, and shredded cheese. 6. Garnish with jalapeno slices, cilantro and shredded cheddar cheese.
