Instructions: 1. Preheat the oven to 400 degrees. 2. First, wrap 1 piece of bacon around the inside of each cup of a 12-cup muffin tin to create rings. 3. Then put 1 slice of potato on the bottom of each cup and divide the spinach pieces evenly among the cups. 4. Next, bake until the fat from the bacon starts to bubble in the bottom of each cup, the bacon begins to crisp and turns light brown on the top edges, about 10 to 12 minutes. 5. Remove the tin from the oven and crack an egg into each cup, making sure the yolk is inside the bacon ring. 6. Then continue baking until the bacon is crisp, the egg whites are cooked through, but the eggs are still runny, about 10 minutes longer. If you do not like a runny yolk, you can continue to cook an additional 2-4 minutes until the yolk is done. 7. Then remove tin from oven, run a spatula around the cup edges and remove cups to a platter. 8. Finally, sprinkle with the chives and serve immediately. This dish must be refrigerated within two hours at a temperature of 40 degrees or lower. To make this recipe healthier, you could substitute chopped cauliflower bits for the sliced potatoes or uncured sugar-free turkey bacon for the bacon.
