Crustless Pumpkin Pie By: Tripp Runnels - Swisher County 4-H
Serves: 8
Ingredients: 2 large eggs 1/2 cup sugar 1 1/2 teaspoons pumpkin pie spice 1/4 teaspoon salt 1 can pumpkin (15 ounce) 1 can fat free evaporated milk (5 oz) 1 teaspoon vanilla
Instructions: 1. Preheat oven to 350F. 2. Lightly grease or spray a 9-inch pie plate; set aside. 3. Place eggs in a large bowl and beat with a fork or whisk. 4. Add sugar, pumpkin pie spice, vanilla and salt. Stir until well mixed. 5. Stir in pumpkin and evaporated milk. 6. Pour into prepared pie plate. 7. Bake for 40-45 minutes until center is set. Remove from oven and cool on wire rack. Serve immediately or refrigerate until serving time.
