Rare Medium, together with the Australian Butcher’s Guild, invites you on a two day Paddock to Plate tour to explore the production processes of lamb and goat meat and see firsthand the factors that affect meat quality.

The tour will travel to Central Western NSW where we will visit the property of The Gourmet Goat lady and her award winning farmed goat meat. We will also be visiting a producer of Border Leicester sheep and discovering the science behind producing MSA graded lamb.

We are always looking at new and innovative ways to use different cuts of beef in recipes and the chef at Lazy River Estate in Dubbo will showcase his Masterpieces for our lunch on Tuesday.

This tour is all about experiencing firsthand the production of quality goat and lamb in NSW and it is your chance to ask questions, talk with other chefs & butchers and get new ideas for your own business. Local producers of beer and dairy products will also showcase their quality products.

6:15 am - Pick-Up Destination 1 – Four Seasons Hotel Sydney (Bus Zone directly behind Four Seasons on Harrington St Sydney) 7am - Pick-Up Destination 2 - Penrith Panthers Leagues Club Car Park (Leagues Club Car park Mulgoa Rd, Penrith 2750) Morning tea at the Mudgee Brewing Co Lunch with local beef, sheep and goat producers at Gilgandra Council Office The Gourmet Goat Lady - Goat Farm visit and Goat Carcass break down 6:15pm - dinner at Collie Hotel

6:30am - Breakfast at motel 7am - MSA Presentation Depart for lamb property 8:30am - Visit to “New Armatree Border Leicester” property Morning tea - The Little Big Dairy Company Lunch at Lazy River Estate, Dubbo 7:30pm - Arrive back to Sydney drop off point

This tour commences from Harrington St (Directly behind Four Seasons Hotel) Bus Zone at 6.15am Sharp & Penrith Panthers Leagues Club at 7.am on Monday 15th of September.

Tour cost of $200 includes: accommodation for 1 night, breakfast, dinner and other meals as per itinerary and bus transfers during tour.
