Milk Free Probiotics - Preparing Water Kefir From Your House I have recently started looking for non-dairy sources of probiotics (the good bacteria), and my searches led me to "water kefir". If you are familiarized with milk kefir grains in any way, these are similar, except you would soak them in water rather than a dairy product. To get going, I got all the required items gathered which includes, a 2L glass jar, some unprocessed healthy sugar, some mineral water, and obviously, water kefir grains. They are accessible on Amazon however I got mine from eBay. If you cannot find the grains on those 2 sites, try searching for 'tibicos' instead because that is the name they are often referred to as. They took almost a week to arrive and at that time I wasn't all set to use them so I preserved them in the refrigerator in a sugar solution. They are able to survive for a couple of weeks in the fridge in sugar water. They probably won't reproduce this way, but they should thrive. If you want more time than that you just have to replace the sugar-water solution. Once I was all set to make some water kefir I got out a basic recipe and started brewing. It's best to keep the grains separate in a cloth bag that will let the sugar solution to penetrate and at the same time not allow it to blend with the other "contents" (for the simple reason that it's just tough to separate them later). As for water, you could boil tap water to eliminate the chlorine (then let cool completely), or purchase (or get) some spring or mineral water. Fill the 2L jar 3/4 of the way and add about 1/2 a cup of sugar. Additionally, add 1 cup of grains to the muslin (or cloth) bag and be prepared for them to multiply so leave them some space to do so! You can add a tea-spoon of blackstrap molasses to include additional vitamins and minerals for the grains to feast on. Also, adding 1/2 teaspoon of baking soda is usually recommended. This may help prevent a film from being formed on the top of the water, as well as help boost the grain growth. Now, you can add any extra flavors by way of fruit, or orange slices, a dried fig or two, a couple raisins, ginger, etc. Cover the container loosely, and let it stand in a dark location (cover with a dish towel if needed) to ferment and brew your kefir water. 24 hours is useful. Try to avoid allowing anything metal to touch the grains or the water (throughout or following the brewing procedure) as it can damage the healthy bacteria. Let it sit for 2 or 3 days, checking the taste once or twice a day. If it's too sweet, let it sit longer, and if it has a vinegary taste it may have sat too long. Fill the rest of the container with some 100% fruit juice if desired. The kefir water may be saved in the refrigerator for a couple of days to a week.
