Gatheryouringredients,makingsureyourbutterissoftened,andyoureggsare roomtemperature.

Preheattheovento350degreesF(175degreesC).Beatbutter,whitesugar,and brownsugarwithanelectricmixerinalargebowluntilsmooth.

Beatineggs,oneatatime,thenstirinvanilla

Dissolvebakingsodainhotwater.Addtobatteralongwithsalt.

Stirinflour,chocolatechips,andwalnuts.

Dropspoonfulsofdough2inchesapartontoungreasedbakingsheets.

Bakeinthepreheatedovenuntiledgesarenicelybrowned,about10minutes.

Coolonthebakingsheetsbrieflybeforeremovingtoawireracktocool completely.

Preheatyourovento350°F(175°C).Lineabakingsheetwithparchmentpaper orlightlygreaseit.

Inamixingbowl,creamtogetherthesoftenedbutterandgranulatedsugaruntil smoothandfluffy.

Mixintheeggyolkandvanillaextractuntilfullyincorporated.Graduallyaddthe flourandsalt,mixinguntilasoftdoughforms.

Rolltablespoon-sizedportionsofdoughintoballsandplacethemontheprepared bakingsheet,spacedabout2inchesapart.

Pressyourthumborthebackofaspoon intothecenterofeachballtocreateawellforthefilling

Combinethebrownsugar,cornsyrup(ormaplesyrup),meltedbutter,chopped pecans,andvanillaextractinasmallbowl.Mixuntilwellcombined.

Spoonabout1/2teaspoonofthepecanmixtureintothecenterofeachcookie.

1 ½ teaspoons Vanilla (Madagascar vanilla boosts the flavor)

½CupWalnuts(Ipreferlargepiecesandchoppingthembyhand)

¼VanillaBakingChips(notwhitechocolate)

½ tsp each of ground ginger, ground nutmeg and groundcloves

½cupmolasses

¾cupsfirmlypackedlightbrownsugar

2tbsp.water

Siftflour,spices,andbakingsodainmediumbowl;setaside

Beattogethermargarine,molassesbrownsugar,andwaterinlargebowlwith mixeruntilcombined.

Graduallyaddflourmixturewithmixeronlowspeed.Scrapesidestoincorporate allingredients.

Dividedoughintoquartersthenwrapinplasticwrap.Flattendoughinto rectangles.

Refrigeratefor2hoursorovernight

Onaflouredsurfaceremoveplasticwrapfromdoughandrolloutdoughinto¼ inchthickpieces.

Use3½inchcookiecutterstocreategingerbreadoranyfunshapes!

Arrangeonnonstickbakingsheet,1inchapart.

2 bars margarine or oleo (1/2 lb.) Don’t use real butter, it melts

3 cans Solo Pie & Cake Filling (my family likes the apricot, almond and cherry fillings, Nut and Poppyseed aretraditionaltomyItalianGreatGrandma)

2Tbsp.milk

Roll out mixture

Cutdoughinto2inchesby2inchsquares

Dabalittlemilkonoppositecornersandpinchtogether.

Bakeonungreasedcookiesheetinpreheatedovenfor20minutes. Addfilling,about½teaspoonto1teaspoontocenterofeachsquare.

Oncebaked,removefromcookiesheetandletcoolonwirerack.

Inastandmixerbowlorverylargebowlwithanelectricmixer,addallthe ingredients,leavingoutthefoodcoloringandmilk. Mixwelladdingalittlebitofmilkatatimeuntilthefrostingisthickbut spreadable.Besuretoscrapethebowlwitharubberspatulaandgetthevery bottomsoallsugarismixedin.

Separatethefrostingintobowlsforeachcolor.

Addfoodcoloringtoeachbowlandmixthoroughlywithaspoonorrubber spatula.

Oncethecookiesarecooltothetouch,spreadfrostingusingabutterknifeoroff setspatula Youcanalsousepipingbagstogetfrostingontothecookiesandthen smoothoutusingaknife.

Addcoloredsugaranddecorations.Iliketoaddsugartoallthecookiesasitwill hardenupthefrostingalittlebit,tomakethemeasiertostore.

Cookiesshouldbestoredinairtightcontainersorwrappedwithplasticwrap.

Part 2: The Frosting
