The Older the Grapes, the Sweeter the Wine

Low alcohol wines are becoming scarce. What’s up? Te temperature! Scorching heat waves and other climatedriven calamities have ruined harvests in Europe, North America, Australia and elsewhere. Parts of Bordeaux are burning, Chile continues to battle devastating wine country fres and it seems California fghts fres in vineyards on a daily basis.

Red wines produced in Bordeaux, Tuscany, Piedmont and California had higher alcohol between 2010 and 2019 than registered in the 1990s. Climate change is the catalyst. Winemakers are trying to harness the alcohol through the timing of the harvest. Te longer the grapes hang on the vines, the more intense the sugar and, hence, the alcohol level. But, winemakers explain, you cannot control the alcohol by simply picking grapes earlier. For example, if you harvest cabernet sauvignon grapes early to achieve a lower alcohol content, you risk producing a tart wine with heavier vegetal favors such as green pepper.

ABV or ALC, indicates alcohol by volume. Te amount of alcohol in a container is shown as a percentage of the overall volume of the drink. And don’t think you can lower the ABV by aging the bottle! ABV is not afected by age as the sugars have already converted to alcohol. But the taste of the alcohol may become smoother and more understated giving the impression that the volume has been reduced. Te percentage of alcohol in a wine bottle is posted on the label, usually marked ALC.

Wines with higher alcohol levels are rounder and richer in texture ofering deeper and more concentrated favors and ofen seem sweeter to the palate. Some wineries aim for this style as these higher alcohol wines tend to score higher points from the critics. Tat said, many wineries, particularly mass produced nationwide brands actually aim for this style! But if this is not the style you want, we can help!

Alois Lageder Schiava is 11.5% alcohol. Tis bottle, due to its versatility and popularity, has been a Tanksgiving tradition at Metro Wines. Schiava is a grape variety native to Trentino-Alto Adige, in northern Italy. Historically known for producing light-bodied and lighter-colored wines, the grape is light and tart with aromas of strawberry, raspberry, rose, lemon and smoke and boasts a spicy black pepper backbone that helps it pair nicely with heavier and spicier foods, even Tai Chili Basil!

Also from Alois Lageder is an organic Pinot Grigio at 12% alcohol. Brilliant straw yellow with a green shimmer in the glass. Te nose has pronounced and expressive aromas with fowery and somewhat spicy notes. And the palate presents rich favors with a slight smokiness and a strong, fresh fnish.

An all around good choice for summer, low alcohol wines have a lower calorie count and tend to pair better with food!

Happy Summer Solstice

The summer solstice, also known as midsummer, is a yearly phenomenon that marks the ofcial start of summer in the Northern Hemisphere. It is the longest day of the year and the shortest night, where the sun reaches its highest point in the sky. With a fascinating history and cultural signifcance, the summer solstice has been celebrated for thousands of years around the world.

In ancient times, the summer solstice was a signifcant event marking the halfway point of the year. It was considered a time to celebrate the growth of crops and honor the sun as a source of fertility and warmth. Te ancient Egyptians, Greeks, and Mayans all recognized this day, constructing impressive monuments and temples to commemorate it.

To this day, cultures around the world continue to celebrate the summer solstice. For example, in Scandinavia, it is known as Midsummer, a time of festivity, dancing, and bonfres. It is said that on this particular day, the earth’s boundaries between our world and the supernatural world become blurred, allowing for spirits to come and go freely.

Another fun fact about the summer solstice is that Stonehenge, a prehistoric monument in England, is beautifully aligned to the summer solstice sunrise. Te

giant stones, weighing around 25 tons each, stand in a circle that perfectly frames the rising sun on this day. People gather from around the world to witness this magical sunrise, where they welcome the new season with music, food, and festivity.

Besides myth and folklore, the summer solstice also has a scientifc signifcance. It marks the exact moment when the Earth’s north pole is tilted towards the sun at its maximum angle, giving us the longest day of the year with up to 24 hours of daylight in some regions.

Tis tilt of Earth’s axis also causes the phenomena of the “midnight sun’’ in high-latitude areas, such as the Arctic Circle. Tere, the sun never sets below the horizon, and people experience unbroken daylight for 24 hours on the summer solstice instead of the usual 12 hours of daylight and 12 hours of darkness.

Te summer solstice occurs around the 20th June every year, although it is subject to slight variations depending on the Earth’s orbit. Tis year it falls on June 21 to be specifc. It is fascinating to note that this position of the Earth during the solstice causes the sun to appear at its highest point in the sky in the Northern Hemisphere and its lowest point in the Southern Hemisphere.

Finally, the summer solstice has also played a signifcant role in modern-day culture. Te day is ofen considered a time for spiritual refection, meditation, and renewal. It is also celebrated by many as International Day of Yoga, a global event that encourages people worldwide to embrace the practice of yoga and celebrate its benefts for the body and the mind.

In conclusion, the summer solstice is a unique and exciting phenomenon celebrated for its cultural and historical signifcance. Today, people across the world gather to celebrate the longest day of the year and welcome the new summer season with festivities, music, and spiritual refection. With its blend of myth, science, and culture, the summer solstice ofers us a time to connect with nature and celebrate the beauty and diversity of our planet.

For the Love of a Chili

Summer is on the horizon. Farmers markets across the country are starting to blossom with seasonal ingredients, ready to wake up our appetites. Peppers might not be what comes to mind, however, the pepper can be the perfect plant pod for your palette to discover.

I lived in Santa Fe for twenty-three years, of the many things I miss are the smell, taste, and sight of Hatch Green Chilies. Tey were roasted at the markets, on the streets, and in parking lots of local favorites. When in season, this intoxicating fragrance was ubiquitous in Santa Fe. I realize we are in Te Appalachian Mountains of North Carolina, not Te Rocky Mountains of New Mexico, where this local tradition is present everywhere. Some things just stay with us, no matter where we plant new roots.

When you have a craving for a dish that cradles you when you most need it, the only course of action is to get some green chiles (even if they are from a can), crank up the oven, and make a Spring variation of this beloved dish of Northern New Mexico.

I was delighted to discover Sleight Family Farm at North Asheville’s Market ofering green peppers. Poblano’s to be exact. Tese beautiful, large, relatively mild cousins of Te Hatch Chili Pepper are what is generally used to make a chile relleno, a classic favorite of Santa Feans. Classically they are stufed with cheese, and fried in a batter. Personally, I love roasting them up on the grill, and turning them into a vibrant late Spring Green Chili Stew. If peppers aren’t your go to at the market, I invite you to open your mind.

Cooking alongside the seasons with new found ingredients, keeps our senses from complacency, and our palettes fresh. Each season has something delectable, colorful, and unique to ofer, not to mention all the health benefts of eating ingredients that are grown locally, naturally, and picked at their peak of favor.

To help start a new tradition to pass down to your family and friends, I ofer my Spring recipe of green chili stew, inspired from my years in Santa Fe, made in my kitchen in Asheville, North Carolina.

I hope you will give this vibrant savory stew a try. I add a dollop of sheep yogurt from Asheville’s amazing Grass Roots Farm & Dairy. Spring Green Chili Stew

Serves 4

Ingredients

4 small cans of Hatch Green Chili

6 cups bone broth, or vegetable broth

4 stalks of green garlic, or 4 cloves, minced

1 cup Spring onions, minced

1 tbsp., chopped chives, blossoms for garnish, or cilantro

2 cups roasted chicken, shredded or tofu, cubed

2 large carrots, small dice

1 bunch of spring spinach, or other green, chopped

1 lime, juiced

1 tsp. sea salt, to taste

1 tsp. ground coriander

1 tsp. ground cumin

1 tsp. dried oregano

2 tbsp. olive oil, or other

2 tsp. of arrowroot, mixed with 2 tsp. cool water, or four to thicken the stew.

1 cup sheep or cow yogurt, or vegan sour cream, to fnish the stew

Method

In a medium saucepan or pot, on medium heat, add the olive oil. Add the chopped onions and saute for 3-4 minutes. Add chopped garlic, with a pinch of salt, and cook for another 3 minutes. Add all the spices, and saute for 1 minute. Add the chopped chilies and saute for 3-4 minutes. Add another pinch of salt, and combine.

Add the chopped carrots, and broth of choice, and simmer for 10 minutes. Add the arrowroot slurry and stir it in. Add the roasted chicken, or tofu cubes, and fold them into the stew. Add the chopped spinach, or whatever greens you are using. Cook until the greens are tender.

Squeeze the lime juice into the stew, and taste for seasoning.

Serving

In four shallow warm bowls, ladle in the stew. Drizzle with yogurt. Add chopped chives, or cilantro.

Alush and vibrant lawn is not only aesthetically pleasing, but it also increases the value of your property. Creating and maintaining the perfect lawn requires dedication, patience, and some know-how. Here are a few tips to help you achieve a better lawn.

Mowing Correctly

Mowing is a crucial part of lawn maintenance. Proper mowing ensures that the grass stays healthy, and it helps keep weeds under control. One common mistake people make is mowing too short. Tis causes stress to the grass, making it more vulnerable to disease and pests.

To properly mow, keep the height of the grass at around three inches. Tis ensures that the root system is healthy, and it helps keep weeds at bay. You should also ensure that your mower blades are sharp so that they cut the grass cleanly, rather than tearing it.

Watering Properly

Watering is another critical part of lawn maintenance. Overwatering can leave your lawn susceptible to disease and can lead to root rot. Underwatering can cause your lawn to turn brown and die.

Te best time to water your lawn is early in the morning or late in the evening when the sun is not as intense. Tis helps to reduce water loss through evaporation. Water should be applied evenly, and the soil should be

Aerating and Overseeding

Over time, soil can become compacted, making it difcult for roots to penetrate the soil and absorb nutrients. Aerating is the process of removing small cores of soil from the lawn to relieve compaction. Tis also allows water and nutrients to penetrate the soil more easily.

Overseeding is the process of adding new grass seed to an existing lawn. Tis helps to fll in bare spots and thicken up the lawn. It is best done immediately following aeration, as the seeds will have better soil contact and will germinate more quickly.

Dealing with Shady Spots

Shady spots can be challenging to maintain because grass thrives in sunlight. In these locations, you may need to consider planting shade-tolerant grass varieties. You can also look into alternatives, such as groundcovers, that require less sunlight.

Mowing frequency should be reduced in shady areas, as shorter grass blades have less surface area for photosynthesis.

Maintaining the perfect lawn takes time, efort, and a little bit of knowledge. By following proper lawn care practices, you can achieve the lush, vibrant lawn you’ve always wanted. Remember to be patient and persistent, and your hard work will pay of in the end.

Spotlight on guitarist,

Jones

It’s a Sunday evening as I write this feature. I’ve just returned home from a brewery gig. Whenever I come home from any gig or show, I experience a wind-down period I refer to as “show aferglow,” especially if the performance was well received and/or well attended. I just spent 3 hours making music with my friend, the superlative guitarist and vocalist and the featured artist this month: Kelly Pierce Jones.

Tere’s no shortage of really, really good guitar players around here. But what separates Jones from others is his stylistic sincerity. Te story of his life is refected in his genuine sensibility.

“I saw the Beatles on Ed Sullivan when I was 8 years old and I got that they were something big. I noticed the girls screaming, the matching suits and the hair, but I wasn’t necessarily turned on by music.”

As a pre-teen, he took guitar lessons and even then he says, “I remember learning to play simple melodies from Hal Leonard music books, and I couldn’t connect with them.”

So he put the guitar in the back of the closet and quit taking lessons.

His older brother bought a membership to Columbia House Record Club a few years later. In the case of Columbia House, its members would receive discounted records or cassettes — ofen up to a dozen for as little as a penny — and in the fne print agree to buy a limited number of items at full list price over a period of time.

His desire to emulate his brother, who obviously enjoyed receiving and listening to records that were packaged and mailed to him personally, Kelly’s fascination triggered his deciding to order Jimi Hendrix’s frst album: “Are You Experienced.”

“Opening that record and just seeing the album cover, I thought oh man! Tis is so cool! I put it on my turntable and I absorbed it. I listened to it every chance I could. It sparked my desire to start playing guitar again.”

He began exploring the language of music using an old gut string acoustic lying around the house. He knew that there was more to it than just a desire to be good at playing. Very soon he became keenly aware that the facility of playing the guitar required the use of his whole body; his arms, his hands, his wrists, his fngers. Once he experienced Hendrix, the juices began to fow.

An increasing desire to want the sound to feel a certain way captivated him. “Te diference between wrong notes and right notes and then adding groove came much later. It takes a long time to get there but I started to realize how important it was that I fnd and bring out my own voice.”

When he was four years old, his family moved from Dimmeydale, WV to the 4-story farmhouse his paternal great grandmother owned and lived in, in Wheeling. So in his pre-pre-teen years he’s learning to ride a bike and roaming free on acres of land, listening to records, experimenting and exploring the idea of learning to play guitar under the roof and sky of his ancestors.

At some point, Kelly explains “my parents started questioning what I call the 50’s family template.” As a result his family home ended up being where friends gathered for regular volley ball and keg parties.

“My mom was liberal and turned my dad onto progressive ideas. He started to grow his hair long; he grew a beard and mustache and started hanging out with people half his age. He was a doctor so in the 60’s he was part of the country club cocktail crowd. But eventually these younger friends opened him up. Tey turned him onto Te Grateful Dead, Waylon and Willie. It informed and infuenced me about life and love watching these people interact with one another.”

It became increasingly apparent to Kelly that pursuing a career in music was something he could manifest and accomplish. He joined the Jazz band in high school and played with his friend, Grant Sinclair who was the brother of his future wife, Debi. Afer high school he attended Berkeley College of Music with a concentration in Jazz guitar.

At Berkeley, Kelly says he compared himself to others too much. “I started to lose my ability to value my own genuinely valid individuality.”

One of his schoolmates was none other than guitar virtuoso, Steve Vie. Afer attending one of his gigs, Kelly began to rethink his approach to playing. “Vie had this aggressive approach to his instrument. He’d play a solo and in the middle of it he’d hold his guitar out in front of him by the strings, shaking it and grabbing the whammy bar. It was no longer just about executing melodic rifs, it was about sheer abandon and ferce expression of feelings.”

So in the decades since Berkeley, Kelly Jones married his drummer pal’s sister and high school girlfriend Debi

Sinclair and they moved from New York to Wheeling to Asheville.

Dedication to his instrument along with tremendous support from his wife and two kids, Jones has parlayed into a career flled with unforgettable experiences.

A few months ago he played Carnegie Hall with Catholic/Christian artist, John Angotti. For more years in a row than he can remember, a West Virginia band he was in, opened for country music icons like Taylor Swif and Brad Paisley at the infamous “Jamboree in the Hills Country Music Festival”, a 28 year long annual event held in Saint Clairsville, Ohio.

I’m a fortunate band leader that Kelly is available for me to hire more these days. He plays regularly with virtuosic versatile vocalist, Blake Elledge, along with special events outft, Emerald Empire. For many years he was Jesse Barry & the Jam’s guitarist. He tells me his future goals include releasing original compositions that he’s held hostage in his basement studio for far too long.

As we wrap things up, Jones adds a fnal thought: “It’s my life’s task to continue to be comfortable in my own skin. Tis gives me permission to embrace other people’s success instead of comparing theirs to mine.”

Sunscreen is an essential part of any skincare regimen, especially during the summer months. Most of us know that it’s important to apply sunscreen before going outside, but many of us don’t know why sunscreen is so important or how to choose the best type to use. In this article, we’ll explore the benefts of sunscreen and provide some tips on how to choose the right kind for your skin.

First and foremost, sunscreen is crucial for protecting your skin from the harmful efects of the sun. Te sun’s rays contain ultraviolet (UV) radiation, which can cause skin damage, aging, and even cancer. Sunscreen can help prevent these negative efects by creating a barrier between your skin and the sun’s rays. Tis barrier comes in the form of either physical or chemical protection.

Physical sunscreens are made with mineral-based ingredients such as zinc oxide or titanium dioxide. Tese minerals sit on the surface of the skin and refect the UV rays away from the body. Te American Academy of Dermatology recommends that everyone use a broad-spectrum sunscreen with an SPF of at least 30, as this will block out 97% of the sun’s UVB rays. However, it’s worth noting that the diference in protection between an SPF 30 and an SPF 50 is minimal (just 1-2% more protection) and may not be worth the extra cost.

Another factor to consider when choosing a sunscreen is water-resistance. If you plan on spending time in the water or sweating, it’s important to choose a sunscreen that is labeled as “water-resistant” or “very waterresistant.” Tese sunscreens have been tested to ensure that they provide protection for a certain amount of time (usually 40-80 minutes) while your skin is wet or sweating.

In addition to regular sunscreen application, there are a few other things you can do to protect your skin from the sun. Wearing protective clothing such as long-sleeved shirts or hats with a wide brim can help shield your skin from the sun’s rays. It’s also important to avoid peak sun hours (typically between 10am and 4pm) and seek shade whenever possible.

To make the Mufns, preheat your oven to 375 degrees Fahrenheit. Line a mufn tin with paper liners or grease well. In a large bowl, whisk two cups of four, 1/2 cup of sugar, two teaspoons of baking powder, 1/2 teaspoon of salt, and 1/4 teaspoon of nutmeg.

In another bowl, whisk together two eggs, 1/2 cup of milk, 1/2 cup of sour cream, and 1/2 cup of melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in one cup of blueberries and 1/2 cup of chopped almonds.

Divide the batter evenly between the mufn cups. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow the mufns to cool for a few minutes in the pan, then transfer them to a wire rack to cool completely.
