Working in publishing, inspiration for the ME Team usually means a sudden moment of creativity, the stimulation coming from the amazing ME people, clients and products. In this issue, how could we not be creatively extended from our experiences with such luminaries as Josh Emett, Ali Williams, Vaughan Schwass, and Mianette Broekman? At a more personal level though, how we motivate ourselves to be the best we can be as individuals is an ongoing path of development and learning experiences. Many people come into our lives, some having monumental effects and changing our destinies in ways we could never have imagined. The term, ‘everything happens for a reason’, often gives me pause for thought. Sometimes it is hard to see the positiveness in events and, perhaps this leads to my next observation that spirituality is a concept many of us discover due to adverse occurrences. is a goal we all aim to achieve, how do we go about finding the key to that lock? Following the powerful wisdom of close friends, I discovered I had the capability to turn, what seemed at the time, a terrible adversity into an opportunity. Put simply, I opened my mind to new concepts. I allowed myself to be inspired by the world and universe around me and now, healthier in body and soul than I have ever been and ingeniously encouraged, I find myself writing my first Editor’s and Publisher’s note for ME Magazine. ME MAN Rings are HOT!!! At a friend’s recent wedding, we watched the bride slip a Huffer ring onto her groom’s finger. Noticing how stylish it was, not at all like the simple gold bands we usually see men wearing, we were noticeably impressed. The King of
Josh Emett Drives ME to the bach for lunch in the latest Range Rover Evoque Coupe. Michelin starred chefs are not often stumbled upon in Europe, let alone Parnell, New Zealand. So, luck was definitely on my side when I walked into
Kitchen Cool this MasterChef judge. Josh Emett is, however, affably charming and approachable and we chatted easily about what he is up to now he’s back home. Leaving the shop, I was left with one thought: I must have another opportunity to find out more about this King of the Kitchen.
one of my favourite foodie spots, Neat Meat, and saw a tall and willowy figure cooking in the shop’s demonstration kitchen. A man wielding a knife is never easy to approach and I felt more than a little nervous to strike up conversation with 10

While at Neat Meat, Josh had explained the concept behind his ‘Chef Series’ range of prepared meals he was devising in collaboration with the boys from Neat Meat. Pondering on this for some time, I masterminded a plan which eventually morphed into sourcing a fabulous bach,
luxury vehicles, a helicopter and an All Black. The concept of Josh’s Chef Series meals is exactly what I and, I suspect, you will find very exciting. Every one of us has days when we simply run out of time and energy to prepare the type of meals we like to eat. Perhaps you are heading off to the bach in search of relaxation, or have a few extra unexpected mouths to feed, or maybe you’re just not a terribly good cook and want a decent restaurant quality meal without the restaurant. If you said yes to one or more of these situations, Josh has conveniently whipped up six meals to
solve your culinary desires, ambitions and dreams. The lingering memories of Josh’s divine duck meal have made me digress from my plot of how six people ended up sitting around the dining room table. The scheme began when the General Manager of Motorcorp fortunately identified with my vision and generously provided ME with two Range Rover Evoque Coupes. Wow, these cars are definitively cool! Driving around Auckland was a real buzz, turning heads wherever I went but opening out the throttle on the motorway was even greater fun. Sleek and sporty, the Evoque Coupe will charge your imagination and, like the ‘Chef Series’ meals, won’t hurt your pocket in running costs. Did I mention a helicopter and an All Black? Helicopter ME, a fortuitously named Dairy Flat helicopter company, offered to fly some of our lunch guests, including Ali Williams and his exceptionally long legs and his lovely wife, Casey Green, to our Omaha destination in their brand new, six-seater Bell 407. Professional and smart, the Helicopter pilots are some of the best you will find. Via a logistical miracle, the two Range Rover Evoque’s and one helicopter arrived in Omaha at the same time! Sotheby’s
agent, Shane Romani, let us into the fabulous bach, situated right on the beach and instantly we were all asking what it would take to own such a fantastic property. Heading straight for the kitchen was Ali whose huge frame looked quite at home in the modern and spacious kitchen. The two chefs soon had the vege prep sorted, entertainingly following the instructions that come with each dish. A smorgasbord of appetising meals was soon laid out on the table for us to enjoy with accompanying wines and beer.

As we all know, the depth of flavours in restaurant meals come with hours of preparation. Sauces are reduced, meats are marinated, and slow cooking is essential in developing taste and tenderness. Time is of the essence and is not always available to us at home. Each ‘Chef Series’ meal has the taste of time and is ready to serve within minutes. Reheated by either placing the unopened bag into boiling water or by pouring the contents into a pan, the meals are an ideal solution for a number of occasions: • Impress your friends at a dinner party • Hearty meals make great dishes for any family meal

Josh Emett ‘Chef ’s Series’ and beverage matches
Coq au vin (French Chicken with wine) French braise of chicken cooked with red wine, lardoons and mushrooms. We matched it with Cuvée No1, highly regarded and well renowned, both throughout New Zealand and Internationally, winning numerous Trophies, Gold Medals and Five Star awards since it’s release. 100% chardonnay (blanc de blancs), a style for which their winemaker has consistently been awarded, presenting a perfect balance between fruit and yeast, the wine was held on lees for two years allowing full autolysis displaying a tiny consistent bead, and firm mousse resulting in a typical, complex, champagne-like character. The palate is intensely flavoured and focused with the good fruit-yeast balance providing elegance and style.
Spiced Duck Leg in Soy & Orange Matched with the exceptional craft beer brewers of Moa, their Five Hop. Moa Five Hop Winter Ale shows the unique signatures of traditional North European bottle conditioning. Displaying a Nelson-dominant hoppy nose with a subtle oak character leaving extra smooth and creamy, honeyed characters on the palate. A well-balanced companion to spiced foods. Traditionally served just below room temperature.
Free Range Chicken in Wholegrain Mustard & Tarragon Matched with the Man O’War Valhalla 2010. The name Valhalla is conferred upon the finest barrels of chardonnay selected by their winemaker each year. The 2010 vintage was superb for this Waiheke vineyard with excellent mid summer heat, little or no rain and relatively cool nights throughout the growing season. The vineyards that make up the 2010 Valhalla Chardonnay are those which are located on the mid slope of the hillsides and are predominantly rich clay based soils with some light volcanic deposits in the top soil. These vineyards produce wines which are full bodied and very textural so the wines are fermented in large oak puncheons and smaller barriques to enhance those characters. 12

Beef Cheek Bourguignon Matched with the MT Difficulty Pinot Noir 2010. A warm, low-yielding vintage has produced a Pinot Noir displaying ripeness concentration and balance; dark fruits of the forest dominate the aroma and these are underpinned by lifted florals and black cherry, balanced with sweet aromatic spice notes. Mt Difficulty Pinot Noir will improve for 7-10 years given optimal vintage and cellaring conditions.
Spiced Caramalised Beef Shortrib Matched with the Moa St Josephs is brewed in the traditional style of a classic Belgian Tripel. Strong spice and clove characters create complex flavours and aromas which are heightened by its extended bottle conditioning, with a combination of malt and candy sugars complimenting the high alcohol content produced by the Belgian ale yeast. Best served at 8°C in a goblet after gently rolling the bottle to distribute the sediment signature.
Lamb Shoulder with Whisky & Prunes Matched with the Man O’ War 2009 Ironclad. Ironclad is full of sweet ripe fruit with lifted aromas of crushed red berries and darker cassis, hints of floral perfume with tobacco and cedar. The palate is vibrant, exuding ripe fruit and a rich texture finishing with supple fine grained tannins. The 2009 Ironclad shows great fruit accessibility with a powerful structure coated in luxuriant fruit, supple yet powerful it is an engaging wine in its youth that will reward patient cellaring revealing a refined structure and greater complexity with age. 5 STARS Gourmet Wine Traveller (Bob Campbell MW) Oct/Nov 2011.

Testament to the moorishness of the meals came when we announced the helicopter had to return to Dairy Flat. Never take a bone from a dog. Ali’s stare of disbelief that he was supposed to leave the table while there was still good food to be had was enough to silence the meanest fullback. Josh’s ‘Chef Series’ dishes obviously make even big men happy! So girls, they say one way to a man’s heart is through his stomach and Ali proves that with Josh’s meals this is so true! The rest of us were able to relax for another hour, talking and soaking in the fabulous ‘Chef Series’ meals. Reluctant to end the convivial afternoon, we did eventually pack up the Range Rovers and head to the Leigh Sawmill Café for the night. Having fallen in love with the white Evoque, Josh drove the windy roads from Omaha to Leigh, chatting about the vehicles he had previously owned, Range Rover being one of them, and about how a vehicle needs to fit his purposes – the Evoque looked as though it was a natural fit.

We arrived in great ME style at the Leigh Sawmill, adding a real panache to their car park with the Evoques. After dinner their young chef came out to ask Josh what he thought of the bellissimo pizzas he had prepared for us and Josh was happy to share his wealth of cooking knowledge with the younger man. The warmth of hospitality in the Leigh Sawmill is always evident and it felt like we were all family by the end of the evening. It was a fantastic early autumn day, made more perfect by two of the nicest guys, Ali and Josh, combined with the beautiful Range Rover Evoque Coupes, the good people of Moa Beer, Man O War, Mt Difficulty and No 1 Family Estate wines, and six of the best meat dishes I have tasted made for a fantastic 24 hours in bach country. With great reluctance we returned the Evoque’s to Range Rover headquarters. A huge and heartfelt ME thanks to Josh and Ali, two of New Zealand’s greatest exports and both totally cool to have in our kitchen!! The ‘Chef Series’ will be launched exclusively into selected New World stores nationally on May 14th.

The Perfect Ending – Country Culinaire At ME we are great dessert girls and while planning our amazing Omaha lunch, we couldn’t help but think about what would come after our meal! We had very specific dessert requirements: it must taste delicious, be innovative, not too calorie-loaded and, most importantly, require minimal preparation effort!
as the roulades do require 3-4 hours to defrost. Packed with the sunshine of the Hawke’s Bay, we weren’t disappointed as our spoons slipped through the velvety eggs of the pavlova, hit the perfectly crisp meringue and tasted the freshness of the generous amount of fruit. Accompanied by a slice of ice cream, we all had smiles on our faces.
We went to New World in search of the perfect dessert and were immediately drawn to the attractive packaging and tempting names of the Country Culinaire range in the freezer section. We wanted to buy every flavour of the pavlova roulade and ice cream – see below for the choices and you’ll understand why it took us over ten minutes to choose!
A little investigating and we discovered Country Culinaire is a Hawke’s Bay based company inspired by Trish Gibson, a proud mother, grandmother and farmer’s wife. We weren’t at all surprised that her small business has blossomed from its initial days at the local Farmer’s Market to an international supplier.

Vaughan Schwass Enterprising CEO
Les Mills International was founded by Les Mills, four-time Olympian and founder of the Les Mills World of Fitness chain of gyms in Auckland, New Zealand. His son, Phillip Mills, developed a series of exercise-to-music programmes that would later become the Les Mills programmes in current release. Their success led Phillip to release them internationally. After a successful debut in Australia, the programmes have expanded to more than 14,000 gyms and health clubs in 75 countries, with approximately 70,000 Les Mills Instructors worldwide and an estimated 5 million participants every week attending a Les Mills class. 20

In 2005 Vaughan Schwass joined Les Mills International as Marketing Director. Vaughan gained enviable international marketing experience as Tourism New Zealand’s USA and Canadian Marketing Manager before returning to New Zealand and the role of leading Tourism New Zealand’s product development unit. As Marketing Director in 2005, Vaughan lead the Les Mills marketing team to win a series of awards including an EFFIE, the coveted Supreme Award at the 2009 Marketing Awards and, most recently, the Export Award. After six years as Marketing Director, Vaughan accepted the role as CEO of Les Mills Enterprises. In this role, Vaughan now heads a growing team focused on business development, including expanding the Les Mills clothing and merchandise business, managing strategic commercial partnerships and developing key profit centres for the company. ME interviews Chief Executive Officer, Les Mills Enterprises, Mr Vaughan Schwass. How old are you? 43 What was the first business you owned and/or the first job you ever had? My first proper job was working for TVNZ at Avalon Studios in Wellington, I dropped out of Polytech as after studying quantity surveying for 5 years I realised I wasn’t particularly interested in it. The job at Avalon used my quantity surveying skills for carrying out costings on set designs. The first major project was a movie, ‘Secrets’ about the Beatles Tour to Australia, where I met Dannii Minogue before she was really famous - she was lovely! Les Mills International Ltd is the first business I have been a shareholder in. In 2000, right before the dot.com crash, I started playing with some USA shares, Apple being my most fruitful purchase and Nokia losing me the most to date. How many people are in your operation? In Les Mills International Head Office in Auckland we have a team of 85, and within that a core team of 10 who are Les Mills Enterprises. Offshore we have Les Mills Clothing designers in Portland and Les Mills Equipment Manufacturers in China and New Zealand. Les Mills Enterprises, which I head, leverages the Les Mills Brand into new non-core business areas. We have and currently
develop clothing and equipment. There is potential for us to develop nutritional products and we have just launched a new exercise equipment product: SMARTBAR™ which is a revolutionary new barbell weights system. Barbell systems hadn’t changed much in decades and fastening weight plates onto a bar can be cumbersome, so we looked at the whole system and developed a cuttingedge ergonomic design that speeds up plate transitions and helps people maximise their workout. Do you feel pressure to be fit and healthy in your job? No, I love being fit and healthy, once you get a taste for fitness you generally want to stay healthy and fit, I encourage everyone out there to give it a go!

are the core of our business, Body Pump is my favourite, and high-intensity training programs. Who has given you the best advice in your career? My father is an amazing entrepreneur in his own right, he founded a Wellington based building company specialising in residential and light commercial constructions. He taught me that surrounding yourself with good people and taking time to think things through properly would give me a good level of success. Have more or less people taken up gym membership during our recession? Interestingly enough, our experience around the world is that gym memberships don’t suffer during a recession, unlike electronics and travel, there is no difference, just constant growth, although it has not been easy. When Phillip took over the business 18 months ago, we were undergoing some price pressures; therefore, we had to innovate like crazy which has allowed us to remove the price discussion - adding value to our customers is more important than discounting.
What has been your biggest hurdle in business in the last couple of years? As we innovate, new products don’t come to fruition as quickly as I would like. My stakeholders having confidence in me while new products are in development is imperative. What is the key to having a successful business? Finding fantastic people is not an easy task, in every business I have been involved in, this has been difficult. In business we are not necessarily short of ideas, but getting passionate people who can actually bring things to life is difficult. Currently I have a great team, and need to find plenty more business stars to join us. Can anyone be an entrepreneur or are they born? I don’t consider myself to have been born an entrepreneur, I have had the awesome honor of working with amazing entrepreneurs, the latest one being Phillip Mills. He has taught me a lot about how to behave as an entrepreneur, I hope now that I have some basic entrepreneurial skills. I think you can learn to be an entrepreneur if 22

you are surrounded by the right people and have the right mentors. What is the biggest mistake that you see new businesses make? Having travelled substantially throughout my career, I have had the privilege of seeing the massive scale of businesses in places, such as Silicon Valley. They only launch companies based on creating billion dollar profits. In New Zealand I believe we think too small and we could do with having billion dollar companies launching here. If you have the opportunity to spend time in Silicon Valley businesses, it is well worthwhile, their perception of business is big, and getting exposure offshore would open people’s eyes. What do you do in your downtime for entertainment? It is a privilege to travel in my work, but I love being at home in Herne Bay. Socialising with friends over good wine and food and, of course, keeping fit and healthy are my key areas of happiness. I have also been working with a personal trainer doing crazy workouts which are intense, thrashing my body, also doing the standard group exercise classes which
Les Mills has become a global phenomenon since you took on their marketing, what is the craziest thing that has happened to you overseas? The most amazing experience I have had is when Team New Zealand was taking on the world in Valencia at the America’s Cup. We hosted
and had major meetings with our global agents. We put together an amazing week of activities in Valencia, which included hiring an old chapel. Hinewehi Mohi performed opera that night from the chapel parapet with 100 people seated for dinner. It was a stunning week of experiences which cemented relationships and has been my most memorable week during my time with Les Mills. When I was CEO of Destination Queenstown, I spent some time in Aspen and skied with Claudia Riegler, she left me for dust on the ski field, but it was a huge privilege to be able to ski with one of the best in the world. Who is the hottest Les Mills staff member in NZ and why? Emma Barry. Emma is someone I have worked with the entire time at Les Mills, she has the most amazing zest and passion for what we do, she in charge of people and culture and we often say that in another life she would be my wife! What are you reading at the moment? The last book I read was given to me by Phillip Mills, who often refers excellent reads. It is about the power of empathy in business, how to use that in innovation, and looking after your customers.
What is your favorite restaurant at the moment? The French Café in Auckland. It has been in and out of favour over the years, but the five course degustation with matching wines was the best meal I’ve had recently. Also, The Fat Duck Restaurant, Heston Blumenthal’s three Michelin star restaurant in London. It was unbelievable and Ethan Hawke was there the night we dined, a once in a lifetime experience. Any words of advice to people who hesitate to try new things? Don’t get to 45 and not have put yourself out there. As you
get older you think more about what you haven’t yet done, don’t waste your time! You’ve done a lot of different things. Is there a common motivating factor in your endeavors? I have a huge competitive streak and the feeling of succeeding drives me, I am not necessarily motivated by money. Looking back, I only think about the things I have achieved not the money. I believe in what we are doing at Les Mills, we change people’s lives which is powerful and motivates me into going to work everyday.

Miss New Zealand On 28 May, Mianette Brokeman relinquished her crown to the next Miss New Zealand. We discover who exactly is this charming, poised and very lovely young woman who has represented her country in an outstanding manner. This is the first exclusive interview you have given since handing your crown over to the new Miss NZ, how are you feeling? I’m excited to be talking about me, Mianette Broekman, rather than Miss NZ. Now I will focus on my studies and what I want to do. Throughout my reign I stayed true to myself but sometimes I had to put my own feelings and wants aside, but now I can concentrate on me. You’ve never spoken about your four year relationship with your partner, how is this going? He is my best friend and so supportive. No one wants to see Miss NZ with a boyfriend next to her. Farwad has just stepped back and allowed me to do my job and has actually pushed me to do things. He’s let me be my own person. I couldn’t be with someone who didn’t get along with my family and Farwad does. You recently spoke out about your father being gay and family. What has the response been like to the article? I’ve had amazing responses from everyone. I’ve had messages from people saying my family are awesome and that I’m an inspiration to
them. I’ve never been ashamed of it - it’s always been normal to me. Are you still hoping for a career helping children and to stop child trafficking? Next year I’m hoping the political situation in Uganda will be safe enough for me to go and help build schools. It would be great to find a company to sponsor me as at the moment I have no funding. What’s in store for you next year? I want to graduate, I will model and I might want to work in TV or radio. There might be a design line coming through sometime this year. The world is now my oyster. I have a family, friends and someone stronger above who makes anything possible. If it’s meant to be, it will be. I am so excited to see what my next step will be. This year I have new dreams and aspirations. I want it to be an even bigger year than last year. Who knows what will happen but all I know is ... watch this space. Your favourite meal is? I love sticky date pudding from SPQR, Pizza from Prego and I love a good eye fillet from the Angus steak house. Your favourite thing to wear is? Jeans and wedges and a nice big bag. My most recent indulgent purchase was? A designer bag and a trip to
Singapore in two weeks. How do you unwind? My favourite way to relax and unwind is to take a nap. Otherwise reading a good book, although I haven’t done that in a while. Shopping is always good and after a long week our Sunday night scones tradition at Dad’s. What’s your beauty regime? I’m quite lazy and neglect my skin but last year I was scolded by my beautician and now I cleanse, tone and then moisturise and have weekly facial treatments. What are you most proud of? Myself for reaching my personal goals at different stages of my life. I’m proud of my family and I’m proud of my toy poodle for shaking her little paw before she wants a treat. I am one lucky girl. I am surrounded by beautiful people, inside and out.

Funding our Future Olympians ME Magazine bumped into the New Zealand Under 19 Men’s Road Cycling Team at a café, we asked them where they were staying and they mentioned a local Holiday Park, aghast that New Zealand’s future Cycling Olympians were being subjected to staying in camp grounds, we were intrigued to find out more. Here is what we learnt about training and being able to afford to train from one of their young team members Hamish Schreurs. 28

What is the worst fund raising exercise you have put yourself through? I made cycling booties, well my mum did, and I sold them and then we as a family took charge and ran a cycle race which went ahead in any weather and yes sometimes it was snowing and the weather was terrible. The amount of time we put in wasn’t really worth it but it got me to where I wanted to go. Do you shave or wax your legs? I have waxed my legs before and I prefer it, just
because with shaving I always forget to do it. What do you think about when you are cycling? Many different things, it is a good chance to think about life, and conjure up more fundraising ideas. What distance do you cycle each day? Any distance from 30km on a easy day to 180km on a longer day. It depends what cycle of training I am in.
“Road cycling is always a team race and you won’t win a big race without your team.” What are your main dietary needs? Pasta, rice, cous cous, tuna, salad and bread for breakfast. What is more important, the Team or the individual? Road cycling is always a team race and you won’t win a big race without your team. On the track it is a bit different because in some races you don’t have team mates around you. Why have you chosen to stay in a Camp Ground for this trip? The big thing is that we have to pay for it and when you are doing these trips every second weekend then you won’t have any money left for when you go overseas. But then again, if I didn’t have to pay... beggars cant be choosers! If you were able to afford to do every competition in the world that you would like to compete in, how much would the cost be per annum per person and for the coach? This year will be in excess of $30,000, but then again it depends on where we stay.
Do you win money from the events you compete in? Some of them we do but when it is a national champs or similar we don’t. But even when we do get money it doesn’t really mean much compared to the amount we have to pay to get somewhere. Do you have non-cycling clothing sponsors, if you don’t which would be your favourite clothing brand to be sponsored by? I have Benchmark Homes which help me out a lot when I’m on the bike but when I’m off there is nothing, a cool sponsor like Adidas or Nike would be nice! How are your coaches funded? Some of the trips they funds themselves but other trips we personally have to pay for them to come with us. What vehicles and flights are you provided with for travelling round
NZ? We get nothing we have to pay for ourselves everywhere we go. How much time do you spend away from home and how do your partners deal with that? I don’t have a partner at the moment, which is good because this year I will spend around 4-5 months away from my friends and family.
The team are all self funded and consist of, Scott Ambrose, Tayla Harrison, Dylan Kennett, Hayden McCormick, Hamish Schreurs and Tom Vessey. Pretty in Pink An all female law firm in Canterbury shines through the earthquake dust of February 2011. Their brilliant pink branding matched their smiles as we spoke with the two Partners: Ingrid Taylor and Kathryn Dalziel. Until February 22, the Taylor Shaw team was in their much-loved gorgeous pink and white offices in Victoria Street. After the earthquake they lost access to their building, but were lucky during the course of the year to get their files out, “some firms have not been so lucky”, the girls told me. The one item Ingrid grabbed on exiting 30

that fateful day was her grandfather’s barrister’s wig, her grandfather being one of the founding partners of the firm which can trace its history back to 1933. Ingrid’s father was also a partner in the business and now Ingrid carries on the family tradition: providing good quality legal advice to individuals and businesses. As a firm, both Ingrid and Kathryn appreciate their
history but also focus on the future, as was evident in our meeting. Immediately after 22 February, they were “Damsels in Distress”, working from Ingrid’s kitchen, until Peter and Gwyneth McWhirter, of the Jayco Caravan Court, offered them use of their vacant sales rooms.
“We are constantly trying to share our positivity and energy with our clients...” There were other tensions. Kathryn told me she had to urgently put off Court hearings because she was laid up in pain after receiving an injury from a falling filing cabinet during the earthquake, she had no access to her files and she had limited access to email. She let the Court know that she was not available for Court hearings. One senior Auckland lawyer did not accept this, despite the media coverage of the earthquakes, and wrote a letter to the Court, suggesting that in fact, she was available. Kathryn had to urgently write to the Court to defend herself against any suggestion that she was misleading the Court. This was just a one-off situation and Kathryn tells me how wonderful the New Zealand Law Society was during her arduous recovery and how other law firms stepped in with a huge tide of support. Mid-year, Ingrid looked at their now permanent premises. Despite the rubble in Cashel Mall, Ingrid found the offices well preserved and once this part of the Red Zone reopened in November, they moved in immediately. “It has been fantastic to be part of the re-start. We are constantly trying to share our positivity and energy with our clients - to help them move on with their lives,” she says.
Ingrid and Kathryn believe that the pioneering spirit of Christchurch is still alive and that, “pain and positivity are walking hand in hand in the devastation. We have a clean slate in Christchurch, there are going to be opportunities that no one else has ever had in the world, we want to see people who have been paid out, stay, re-invest and group together to make this one amazing city!” With clients in Auckland, Wellington, Nelson, Christchurch and Queenstown, this vibrant law firm says they are ensuring solutions for their clients so they don’t feel bamboozled by the insurance companies. Here is some of their advice: and ready to face the ongoing challenges of the new year. “We still have pink in reception and our famous minty/milkshake lolly jar and there is more pink dotted here and there.” Their whole philosophy is about Team Pink, “we don’t practice law in a beige way!” A common issue talked about elsewhere in the country is people saying things like, “I am sick of hearing about the Christchurch Earthquake”. I asked them about their thoughts on this. Both said that they had been overwhelmed by the support of the rest of New Zealand and wanted to express their thanks. “It has been an unbelievable experience and has brought people together across New Zealand. We are also seeing some companies respond well to the situation such as engaging us to help staff with their EQC and insurance claims.”

What I’m Reading... Nicolet Simon of Chamucos Tequilla I am reading three books at the moment: ‘Things a Woman should know about Style’ – Karen Homer ‘Lonely Planet Guide to France’ - I am travelling there at the moment ‘The Brightest Star in the Sky’ Marian Keyes, a good chic read. The one I have just finished is ‘Shantaram’ by Gregory David Roberts. I chose this book because it was recommended to me by a number of people. I loved it and couldn’t put it down. It is a true story about an Australian who escapes prison and goes to live in Bombay and disappears into the woodwork. The story tells about the network of friends he meets. I found it interesting because he was Australian and at the time he was that country’s
number one fugitive. I found it to be a lesson on human kindness and how the slum dwellers all exist in harmony, without a lot of money. They are happy and contented in what they have and find happiness in the smallest things. Throughout his time in Bombay, the good things he did for people always came back to him, and it was a test of his character, a lesson about appreciating what you have instead of wanting more. A lesson in contentment. There is also an underlying love story. This book is one of the most ‘real’ reads I have had in a long time and has influenced my current life decisions in a big way.

Some of the faces are instantly recognisable, some aren’t – but all the women featured in the NZ Portrait Gallery’s exhibition All Woman have a unique story to tell. Wellington-based photographer Bev Short has spent more than two years travelling the length and breadth of New Zealand capturing images of inspirational women. “The women I met really opened up to me about their lives which I was so grateful to them for,” Short says. “It gives the results more depth and produced images which I hope will in turn inspire those looking at them.” Many of the women featured have had to overcome entrenched genderbiased attitudes as they made their mark in their chosen occupation. Modern and stylish minimalist décor does not detract from the breath-taking views. Floor to ceiling windows make the most of the scenic landscape, even while relaxing in the bath. Each room boasts a ‘secret’ cupboard for breakfast delivery to maintain guests’ privacy in the morning. A much appreciated touch. The historic cottage, an eclectic mix of old and new, is the venue for evening gourmet canapés and refreshments,
including local wines. Joined by Paulette Meikle, responsible for The Arrow’s entertainment and events, guests lounge by the open fire while enjoying the tastes of Tim’s culinary creations. The kitchen is most accommodating when it comes to guests’ dietary requirements and caters to any request. We savoured such treats as blue cheese on gingerbread and freshly barbequed Stewart Island salmon on pumpernickel bread with an avocado and wasabi mousse. With their warm, inviting conversation and knowledge of local wine and food, Tim and Paulette are truly gifted at helping guests relax. Tim suggested several dining options in town and made our reservations. All of

Guests are even offered a ride to and from their chosen restaurant should they wish to partake in the array of world class local wines. Perhaps the most charming of The Arrow’s many wonderful qualities are the personal touches. Listening intently to guests comments, however small, show that The Arrow is truly dedicated to meeting guests
with snow. Knowing that The Arrow is well prepared with heated floors and hot water bottles to warm guests’ toes makes a trip in the winter season even more appealing. And if these reasons weren’t enough, the exceptionally attentive care we received from Tim and Paulette will be more than enough to ensure that we will return sooner, rather than later. Grand Openings Portlander – Wellington Portlander, the recently launched restaurant at Rydges Wellington Hotel, is described as Wellington’s funkiest new grill house. Kit Foe heads the open kitchen which sources only the freshest foods - even the fish will have been caught in the local waters just hours before being served, unexpected for a Hotel kitchen! Enjoying its prime, central downtown location on Featherston Street, with a spectacular harbour view, and within easy distance to many of the city’s attractions, the buffet breakfast at the Portlander is an ideal way to start the day. Returning at
midday, lunch may consist of a juicy steak or cleverly devised burger or salad. Dinner at the Portlander is a main attraction in the city now, with a great variety of produce, from the land and sea on offer. Crispy skin Gurnard, miso carrot, fried onion & cucumber dressing Miso carrot • 4 carrots peeled and finely sliced • 500mls chicken stock • 25ml sunflower oil • 1 tsp white miso paste Put oil into a pot and sweat carrots until lightly coloured and starting to soften. Add chicken stock and simmer until carrots are soft. Drain off and reserve cooking liquid. Blend carrots in kitchen whizz to make a smooth puree, add reserve stock to achieve smooth consistency. Add miso paste and keep warm.
Lava Dining – Auckland Sofitel Auckland Viaduct Harbour, has just opened ‘Lava Dining’, a gorgeous 5 star foodies destination with a culinary team lead by Executive Chef, Scott Brown in Viaduct Harbour, Auckland. Scott brings an impressive history and international flair to the ‘Lava’ kitchen. Scott underwent his apprenticeship and formal training here in New Zealand before heading off overseas in 2000 to cook for top athletes competing in the Sydney Olympic Games. Scott then travelled to London where he worked at Mirabelle and Chez Bruce, both being one Michelin star restaurants. After three years in
London, Scott headed to Sydney to work for the award winning Becasse restaurant before heading home to join the Langham Hotel. Scott has spent the past three years as Executive Sous Chef for the prestigious Huka Lodge before joining Sofitel Auckland Viaduct Harbour. Cucumber dressing • ½ cucumber • ¼ tsp salt • Small bunch of chives • 2T finely chopped chives • 50mls extra virgin olive oil • 25mls sushi vinegar Peel the cucumber and halve lengthways then scrape out and discard the seeds. Finely dice cucumber, sprinkle with salt and place in freezer until frozen. Once frozen place in sieve and run cold water over until defrosted and all salt is washed off. Dry on paper towel. Add cucumber to remaining ingredients. Taste and season with salt and pepper. Reserve. Fried onion • Vegetable oil for frying • 8 shallots with skin on Cut shallots in half and fry in oil in a pan until golden then roast in oven at 160ºC until soft. Once cooked remove skin and set aside. Onion rings • 2 baby onions sliced into rings • 100gm flour • 40gm cornflour • 1tsp baking powder • Cold water Sift the flour, cornflour and baking powder into a bowl. Whisk in enough cold water to make a thin batter. Dip rings into flour then batter and deep fry in oil at 180ºC until golden. For the Fish and to serve • 4 Gurnard fillets • Sunflower oil for frying • Watercress leaves to garnish Pan fry fish in oil skin side down until crispy and golden. Turn fish over to finish the cooking process. Spoon the hot miso carrot onto the plate and place the fish on top. Arrange the roasted shallots and fried onion rings next to the fish. Spoon the dressing over and around the fish. Garnish with watercress leaves. Serve.
