Fried Rice

Ingredients

2 cups enriched white rice 4 cups water 2/3 cup chopped baby carrots ½ cup frozen green peas 2 tablespoons vegetable oil 2 eggs soy sauce to taste 2 tablespoons sesame oil, to taste

Directions In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.

In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.

Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.

Chicken and Rice Casserole

Ingredients 3 chicken breasts, cut into cubes 2 cups water 2 cups instant white rice 1 (10.75 ounce) can cream of chicken soup 1 (10.75 ounce) can cream of celery soup 1 (10.75 ounce) can cream of mushroom soup salt and ground black pepper to taste ½ cup butter, sliced into pats

Directions Preheat oven to 400 degrees F (200 degrees C). Grease sides and bottom of a casserole dish. Stir chicken, water, rice, cream of chicken soup, cream of celery soup, and cream of mushroom soup together in the prepared casserole dish; season with salt and pepper. Arrange butter evenly over the top of the chicken mixture. Bake in preheated oven until the rice is tender and the chicken is cooked through, 1 hour to 75 minutes. Cool 15 minutes before serving.
