COMMUNITY FISHING Tuesday 18 October, every week on Tuesday until Tue 27 Dec 2016 Be part of the Community ‘catch and release’ fishing program at Sydney International Regatta Centre. Supervised by NSW Department of Primary Industries Fish Care volunteers, it’s a great way to learn about responsible catch and release practices, as well as the rules and regulations of inland fishing, fishing conservation, ethics and the environment. You’ll also learn about the adaptive management plan of Penrith Lakes, including the importance of native fish communities for thriving ecosystems and recreational fishing. There are currently nine species of freshwater fish in Penrith Lakes, including Australian bass, freshwater catfish and long finned eel. chicken chilli con carne Here’s a super-smart dish that keeps on giving — a delicious meal one night, with leftovers and a recipe for the next night. INGREDIENTS • 2 tablespoons olive oil • 800g chicken mince • 2 medium brown onions, finely chopped • 1 medium red capsicum, diced • 3 garlic cloves, crushed • 1 1/2 tablespoons ground cumin • 1 1/2 tablespoons ground coriander • 2 x 400g cans red kidney beans, drained, rinsed • 3 x 400g cans diced tomatoes • 1 tablespoon dried oregano • 1 teaspoon dried chilli flakes (optional) • Steamed SunRice White Medium Grain Rice and fresh coriander leaves, to serve METHOD Step 1 Heat half the oil in a large, heavybased saucepan over medium-high heat.

Cook mince in 2 batches, stirring with a wooden spoon to break up mince, for 8 to 10 minutes or until browned. Transfer to a bowl. Step 2 Heat remaining oil in pan. Add onion and capsicum. Cook, stirring, for 5 minutes or until softened. Add garlic, cumin and coriander. Cook, stirring, for 1 minute or until fragrant. Return mince to pan. Stir to coat. Add beans, tomato, oregano, chilli, if using, and 1/2 cup cold water. Cover. Bring to the boil. Reduce heat to low. Simmer for 30 minutes. Remove lid. Simmer for 15 minutes or until sauce has thickened. Step 3 Serve half the chilli con carne with rice, sprinkled with coriander. Cover and refrigerate remaining chilli con carne. chilli beef on avocado Spice up your week with this easy chilli dish which contains a secret ingredient - cocoa! INGREDIENTS • 1 tablespoon olive oil • 1 large onion, finely chopped • 500g beef mince • 400g can chopped tomatoes • 1/2 cup (125ml) Campbell’s Real Stock Beef or water • 2 tablespoons tomato paste • 1 tablespoon cocoa powder • 1 teaspoon chilli powder • 1 teaspoon dried oregano • 420g can red kidney beans, rinsed, drained • 2 avocados • Steamed SunRice White Long Grain Rice, thinly sliced red onion, coriander sprigs and corn chips, to serve

METHOD Step 1 Heat olive oil in a large frypan over medium-high heat. Add onion and cook for 2-3 minutes until soft. Increase heat to high, then add beef mince and cook, stirring, for 4-5 minutes until browned. Reduce heat to medium, then stir in the tomato, stock, tomato paste, cocoa, chilli powder and oregano, and simmer for 15 minutes. Add kidney beans and cook for 5 minutes or until heated through. Step 2 Meanwhile, halve the avocados, remove the stones and peel. Step 3 Divide the rice among serving bowls and top with avocado halves. Top with chilli beef, and garnish with onion and coriander.
