chilli beef and bean tortilla wraps Roll up these tortillas with their spicy mince and bean filling for a simple meal that will have the family licking their lips in anticipation.

INGREDIENTS • 80ml (1/3 cup) Campbell’s Real Stock Beef • 1 large brown onion, chopped • 3 garlic cloves, crushed • 250g Heart Smart beef mince • 1 425g can crushed tomatoes • 1 300g can red kidney beans (Edgell brand), rinsed, drained • 2 tablespoons tomato paste • 2 teaspoons medium Mexican chilli powder blend (MasterFoods brand) • 1 teaspoon sugar • Salt & freshly ground black pepper • 8-12 20cm diameter Mexican tortillas (Buttercup brand), to serve • 3 tablespoons extra lite sour cream, to serve • Shredded lettuce, to serve • Chopped green shallots, to serve
METHOD Step 1 Place the stock, onion and garlic in a medium saucepan. Bring to a simmer over medium heat. Reduce heat to low and cook, covered, for 10 minutes or until the onion softens. Increase heat to high, add the mince and cook, breaking up the mince with a wooden spoon, for 10 minutes or until mince changes colour. Step 2 Stir in the undrained tomatoes, kidney beans, tomato paste, chilli powder blend and sugar, and bring to the boil over medium-high heat. Reduce heat to low and cook, partially covered, for 25 minutes or until the mixture is thick. Taste and season with salt and pepper. Step 3 To serve, spoon the mince mixture onto the tortillas, top with a dollop of sour cream, some lettuce and green shallots, and roll up firmly. Source: www.taste.com.au
vegetarian chilli beans This protein-packed vegetarian chilli is a hearty and delicious meat free alternative. INGREDIENTS • 1 tablespoon olive oil • 1 brown onion, finely chopped • 1 red capsicum, deseeded, coarsely chopped • 1 x 435g can refried beans • 1 x 420g can Mexican Chilli Beans • 1 x 420g can red kidney beans, rinsed, drained • 1 x 400g can diced Italian tomatoes • 90g (1/3 cup) light sour cream • 1 bunch coriander, leaves picked • Mixed salad leaves, to serve • Flour tortillas, to serve (optional) Photography by Ben Dearnley
METHOD Step 1 Heat the oil in a large non-stick frying pan over medium heat. Add onion and capsicum and cook, uncovered, stirring, for 3 minutes or until the onion softens. Step 2 Add the combined beans and tomato to the pan and stir until well combined. Increase heat to high and bring to the boil. Reduce heat to medium and simmer for 5 minutes. Step 3 Divide the bean mixture among serving bowls. Top with sour cream and coriander. Serve with mixed salad leaves and tortillas, if desired. Source: www.taste.com.au

how to plant fruit trees Fruit trees not only look great, they can be a productive part of your garden. We’ll take you through the steps to plant a fruit tree and have it thriving in no time. Remember to select a site that gets plenty of sun, is well drained and has good quality soil for best results. STEP 1 STEP 1. DIG YOUR HOLE Citrus trees grow best in areas with plenty of sunlight. When digging your hole for the tree, make sure it is twice the size of the root base. It’s also good idea to give your tree some room to grow, so leave a clear area around the base. STEP 2. PLANT THE TREE Remove the tree from the pot by giving it a little tap on the edge. Tease out the roots of the tree and then place the tree in the middle of the hole. Backfill the hole with your existing soil so it just covers the potting mix. Then compact your soil so there aren’t any air pockets within the hole. STEP 3. FERTILISE AND MULCH Following the instructions on the pack, add seaweed fertiliser to your watering can and drizzle on the plant. This will help the tree as it moves from the pot to the garden bed. Then spread 5-10cm of mulch around the base of the tree. This will help it retain water and help the tree retain heat in winter.

The award was won in the best residential construction project -$75,000 - $150,000 category for a Hamptons inspired courtyard in Blaxland. The awards were hosted at Doltone House last Saturday and saw over 450 landscape professionals gather to celebrate the years best landscapes in NSW and the ACT.
