pumpkin felafel with chopped tomato salad This delicious meat-free felafel salad is packed with flavour, perfect for a weeknight dinner.

INGREDIENTS • 200g peeled pumpkin, steamed, mashed • 2 x 400g cans no-added-salt chickpeas, rinsed, drained • 1 1/2 teaspoons ground cumin • 1 teaspoon ground coriander • 1 garlic clove, crushed • 2 tablespoon plain flour • 1/2 cup fresh continental parsley leaves, chopped • 1/2 cup fresh mint leaves, chopped • 1 tablespoon plain flour, extra, to dust • 250g cherry tomatoes, chopped • 2 Lebanese cucumbers, chopped • 2 teaspoons lemon juice • 1 teaspoon olive oil • 2 wholemeal pita bread, halved, grilled, to serve

Serve up these gourmet Brussels sprouts infused with orange juice and topped with toasted hazelnuts. INGREDIENTS • 1/3 cup (45g) hazelnuts • 500g Brussels sprouts, ends trimmed, halved • 2 teaspoons olive oil • 100g shortcut bacon, finely chopped • 1 orange, zested, juiced • 1 tablespoon wholegrain mustard • 1/4 cup coarsely chopped chives • Grilled salmon fillets, to serve METHOD Step 1 Preheat oven to 180C. Spread the hazelnuts over a baking tray. Bake for 5-7 mins or until toasted. Set aside to cool. Rub hazelnuts in a tea towel to remove the skins. Coarsely chop.
