This changed the constitution to remove a race clause that excluded Aboriginal and Torres Strait Islander peoples from the census. however, would know that the Roman navy attempted to evacuate people affected by the eruption or its important role in the success of the Roman Empire. The fleet was led by the fleet’s commander Pliny the Elder, who was not a military man – he was famous for his writings, not for any warlike exploits. In 79 AD he had just completed his Natural History, an encyclopedia of how the Romans understood the world around them – a reference work for the masses that would continue to be used for the next 2,000 years. We know of the rescue attempt through the letters of his nephew Pliny the Younger. Around 17 years old at the time of the eruption, he was living with his uncle and his mother at the naval base at Misenum, across the bay from Pompeii. He was asked many years later to write an account of what happened to his uncle on that fateful day – it is the

only surviving firsthand account of the disaster and the attempted rescue of civilians by the Roman navy. The exhibition uncovers the role of the Roman navy and its importance to the Roman Empire. Discover how a nonmilitary man like Pliny the Elder could be its commander, what its ships were like and who crewed them. It looks at Pompeii as a maritime and riverine port, and how it tapped into the trade boom brought about by Rome’s mastery of the sea – thanks to its navy. coconut pudding with golden syrup This warm coconut pudding tastes sensational with a scoop of ice-cream and a drizzle of golden syrup. INGREDIENTS • Melted butter, to grease • 160ml (2/3 cup) golden syrup • 35g (1/3 cup) desiccated coconut • 125g butter, cubed, at room temperature • 115g (1/2 cup) caster sugar • 1 teaspoon vanilla extract • 2 eggs • 190g (1 1/4 cups) self-raising flour • 125ml (1/2 cup) coconut milk • 6 scoops vanilla ice-cream, to serve

METHOD Step 1 Brush a 1L (4-cup) capacity heatproof, microwave-safe pudding bowl with melted butter to lightly grease. Pour 80ml (1/3 cup) of the golden syrup over the base. Step 2 Place the coconut in an oven bag and twist the opening to secure. Cook on High/800watts/100%, gently shaking the bag every minute, for 3 minutes or until the coconut is toasted.

Step 3 Use an electric beater to beat the butter, sugar and vanilla extract in a large bowl until well combined. Add the eggs, 1 at a time, beating well between each addition, until combined. Add the flour and coconut milk and stir until well combined. Use a large metal spoon to gently fold in the toasted coconut. Spoon the mixture over the golden syrup. Step 4 Cover the top of the pudding bowl with a sheet of non-stick baking paper and tie with unwaxed white kitchen string to secure. Place the pudding on a microwave-safe rack or upturned dinner plate and cook on Medium/500watts/50% for 9-11 minutes or until a skewer inserted into the centre comes out clean. Step 5 Remove the pudding from the microwave and set aside for 5 minutes before turning out onto a large serving plate. Drizzle with the remaining golden syrup. Step 6 Cut into wedges and serve hot with vanilla ice-cream. Source: www.taste.com.au

banh gan (coconut creme caramel) This Vietnamese version of creme caramel features the exotic flavours of coconut and lime. INGREDIENTS • 225g (1 cup) white sugar • 80ml (1/3 cup) water • 1 x 400ml can coconut milk • 375ml (1 1/2 cups) milk • 6 eggs, lightly whisked • 100g (1/2 cup, firmly packed) brown sugar • 1 teaspoon vanilla bean paste • Toasted shredded coconut, to serve • Shredded lime rind, to serve

METHOD Step 1 Preheat oven to 160°C. Combine the white sugar and water in a medium saucepan over low heat. Cook, stirring, for 2 minutes or until sugar dissolves. Increase heat to high and bring to the boil. Boil, without stirring, occasionally brushing down side of pan with a pastry brush dipped in water, for 3-4 minutes or until golden. Pour the caramel mixture evenly among eight 160ml (2/3-cup) capacity ovenproof ramekins. Set aside for 5 minutes or

until set. Step 2 Whisk together the coconut milk, milk, egg, brown sugar and vanilla bean paste in a large bowl until well combined. Strain through a fine sieve into a jug. Carefully pour over the caramel mixture in the ramekins. Step 3 Place the ramekins in a large roasting pan. Pour enough boiling water into the pan to reach halfway up the sides of the ramekins. Bake in oven for 35-40 minutes or until the custards are just set. Step 4 Transfer to a baking tray and set aside for 1 hour to cool. Cover the ramekins with plastic wrap and place in the fridge for 6 hours or overnight to chill. Step 5 To serve, run a flat-bladed knife around the inside edge of the ramekins and carefully turn onto serving plates. Sprinkle with shredded coconut and lime rind to serve. how to winterproof your home The average home uses up around 38% of energy consumption just for heating and cooling. Starting with your front door, we’ll show you some simple ways to winter proof your home by keeping the cold out and sealing in the warmth. STEP 1. SEAL AROUND YOUR FRONT DOOR Drafts from your windows and doors can account for 25% of the heat loss in your home. You can use a rubber seal on your windows or doors to fill gaps of 3-5mm. Tear the rubber seal in half and remove the adhesive strip. Stick it onto the inside edge of the door stop, starting at the very bottom, and then work your way up to the top and straight across. STEP 2. INSTALL A STORM PROOF SEAL ON THE BOTTOM OF THE FRONT DOOR Door seals work by pushing the flap down when the door shuts, keeping the wind and the rain out. There are many different sorts of storm seals and adhesives. Make sure you choose the right one for your type of door. STEP 3. LAY DOWN RUGS ON TIMBER FLOORS Hardwood floors and tiles look great but can get very cold. In particular, hardwood floors often have gaps that let in drafts. It’s a good idea to lay down thick rugs on these types of floors. They feel great underfoot and stop the winter chills.

STEP 4. CHECK YOUR WINDOW SEALS AND CLOSE THE BLINDS Make sure your windows are well sealed. Check that the external and internal seals are in good condition and push hard against each other when the window is closed. Closing your blinds and having good quality block-out curtains can reduce heat loss by 10% in your room. STEP 5. USE DOOR SNAKES ON HARDWOOD AND TILED FLOORS Door snakes come in all shapes and sizes. Pick one that is the right width for the door. A double snake goes one inside and one outside. Slide the flat centrepiece under the door and it stops drafts on both sides.

However, it’s important to consider the type of insulation that will best suit your home.
