For this new work Davies will transform the Turbine Hall by creating five suspended makeshift hospital rooms from handmade silk paper. Representing the merging of public and private spaces, Last Seen investigates
the emotional landscape that carers and visitors have with the hospital environment experience. Fiona Davies is a PhD candidate at the University of Sydney. Davies’ works are multimedia installations encompassing both the real and simulated. She holds a B.Sc (UNSW) and Bachelor of Visual Art (UWS). She was awarded a MFA from Monash University. Her current theoretical practice examines ICU medicalised dying, intertwining emotional knowledge with contemporary medical practices – specifically, definitions of death, the materiality of blood and processes of surveillance. Her ongoing project, Blood on Silk (2009 - ) included working in collaboration with the late physicist Dr Domachuk. She exhibits in both formal institutions and non-traditional spaces nationally and internationally. Campbelltown Arts Centre, Mosman Art Gallery, Peacock Gallery (Auburn), and Museums & Galleries of NSW – present a multi-arts program showcasing the contemporary art and cultural practices of the Philippines. Balik Bayan (7 September – 2 November 2017), Blacktown Arts part of the collaboration, is a multi-art form and community celebration project that will transform the centre into a gathering space of intersecting contemporary art forms: video, installation, painting, performance, film, community activations and events, featuring local and international artists with Filipino ancestry. In Blacktown, 34,000 people have Philippine ancestry, roughly 9% of our community. Literally translated from the Tagalog language, balik means return and bayan means country. Balik Bayan asks a central question: What does a ‘return to country’ mean for one of the world’s largest diaspora? The Bayanihan Philippine Art Project concludes at Blacktown Arts Centre on 2 November 2017, timed during All Souls Day, a significant date in the Filipino cultural calendar. Supervised by NSW Department of Primary Industries Fish Care volunteers, it’s a great way to learn about responsible catch and release practices, as well as the rules and regulations of inland fishing, fishing conservation, ethics and the environment. You’ll also learn about the adaptive management plan of Penrith Lakes, including the importance of native fish communities for thriving ecosystems and recreational fishing. There are currently nine species of freshwater fish in Penrith Lakes, including Australian bass, freshwater catfish and long finned eel. For more information visit bathurstfarmersmarket WILLIAM YANG: SELF PORTRAITS When: Until 8 October 2017 Where: Orange Regional Gallery I have been taking photos in the documentary tradition since the seventies and I started to do my performance pieces in 1989. I called them monologues with image projection and music. The stories were

autobiographical and I used photos to tell my story. When I resumed showing photos in exhibitions in galleries I realized that some photos had a story to them, so I began to write the story directly onto the print. Self Portrait #1 was the first one I did. I took the photo in 1992. I had been telling the story of my Chinese family in Australia, and I had investigated the story of my uncle, William Fang Yuen, who had been murdered at Mourilyan in North Queensland in 1922. This story was the centre piece for my monologue Sadness. When I stood in the cane fields at the place where my uncle had been shot I knew that certain threads of my life had come together at this point, and it was a moment of acknowledging my Chinese heritage, so I made it into a work. Over subsequent years several other Self Portraits have emerged, always when I felt they represented a milestone in my life. In 2009, coinciding with an exhibition The China Project at QAGOMA in Brisbane, I gathered my collection of Self Portraits together, as well as making some new ones to fill in the gaps, and this was the first time they were shown together as a body of work. During the years I had worked in performance I had been developing story telling and I liked the narrative that emerged in these works. Since then I have been consciously adding to the collection. The later works, Three Epiphanies, The Buddhas on My Balcony, Battling Time #2, and Self Portrait with Stars are somewhat philosophical in nature, and I call them the mature works of my old age. The walk into the tunnel follows a disused railway line, which once descended into the Newnes Valley, and was used to transport oil shale. The highlight of a trip to the tunnel is the thousands of Glow Worms visible in the darkness of the tunnel. Sticky Date Pudding Warm sticky date pudding with sweet caramel sauce is the perfect winter dessert. INGREDIENTS
• 200g pitted dried dates, roughly chopped • 1 teaspoon bicarbonate of soda • 1 cup boiling water • 60g butter, softened • 1/2 cup caster sugar • 2 eggs • 1 1/3 cups self-raising flour
Butterscotch sauce • 1 cup firmly packed brown sugar • 1 cup pure cream • 100g butter, chopped

METHOD Step 1 Preheat oven to 180°C/160°C fan-forced. Grease a 6cm-deep, 18cm (base) round cake pan. Line base with baking paper. Step 2 Place dates and bicarbonate of soda in a heatproof bowl. Add boiling water. Stand for 20 minutes or until tender.
Step 3 Using an electric mixer, beat butter and sugar until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, stir in date mixture and flour. Stir to combine. Step 4 Spoon mixture into cake pan. Bake for 40 to 45 minutes or until a skewer inserted into the centre comes out clean. Stand for 10 minutes. Turn out onto a wire rack. Step 5 Meanwhile, make butterscotch sauce: Combine sugar, cream and butter in a saucepan over medium heat. Cook, stirring, for 3 minutes or until boiling. Reduce heat to low. Simmer for 2 minutes. • 3 cups thickened cream • 1 cup milk • 4 cinnamon sticks • 1/4 teaspoon salt • 1/4 cup honey • 1/2 cup caster sugar • 9 large egg yolks • 1/2 cup caster sugar, extra

METHOD Step 1 Bring cream, milk, cinnamon sticks and salt to a simmer in a medium saucepan over medium heat, stirring often. Remove from heat. Set aside for 1 hour to allow flavours to develop. Step 2 Preheat oven to 150°C/130°C fan-forced. Strain milk mixture through a fine sieve over a bowl. Return to pan. Add honey and 1/4 cup sugar. Bring to a simmer, stirring to dissolve sugar. Whisk egg yolks and remaining sugar in a heatproof bowl. Gradually whisk hot milk mixture into egg

mixture. Strain mixture through sieve over a heatproof jug. Step 3 Divide custard evenly between 8 x 3/4-cup (180ml capacity) ramekins. Place in a large roasting pan. Pour enough boiling water into pan to come halfway up sides of dishes. Step 4 Bake for 45 to 50 minutes or until set around the edges, but still wobbly in centres. Carefully remove dishes from water and transfer to a wire rack to cool. Cover with plastic wrap. Refrigerate overnight (or up to 3 days). Step 5 Just before serving, place dishes in freezer for 20 minutes. Using half the extra sugar, sprinkle a thin layer over the top of each custard. Using a kitchen blowtorch or a preheated grill on medium-high, caramelise sugar for 1 to 2 minutes or until golden. Repeat with another layer of remaining sugar. Serve. Source: www.taste.com.au

How to make a towel airer Here’s a great way to recycle an old ladder into a stylish towel airer. You can keep your towels dry and add some character to your bathroom. It’s easy to do, just follow these simple steps. WHAT YOU’LL NEED: • Old Wooden Ladder • Clear Timber Varnish • Brush • Sand Paper • Sanding Block • Varnish Brush • Drop Sheet • Dust Cloth STEP 1: LADDER First, you’re going to need an old wooden ladder. You might have one gathering dust at home or you can pick one up from a second hand shop.
STEP 3: SAND Now sand down the timber with fine-grain sandpaper using your sanding block. Sand with the grain of the wood, not against it. Then wipe the ladder clean with a dust cloth. STEP 4: VARNISH Take your varnish brush and give the ladder a coat of clear timber varnish. Let it dry overnight and sand lightly the next day. Then apply at least one more coat and sand again. Handy Tip: When using varnish, make sure that your workspace is well ventilated.
