how to maintain your lawnmower You can do your own regular maintenance work to keep your lawnmower performing at its best. It’s always a good idea to service your mower at least once or twice a year. RemembeR Safety fiRSt Before you service your lawnmower, remember to take these simple safety precautions. Disconnect the spark plug, especially when you’re tipping it on its side. Make sure the throttle is in the off position. Only work on it when the lawnmower is cold. CheCk youR aiR filteR Replacing the air filter can avoid starting difficulties and engine problems. If it is a paper filter, gently tap it on the ground to remove blockages or replace it with a new one. The end with the hole goes in first. If it is a sponge filter, wash it in kerosene, squeeze it out, soak it in oil and put it back. Change youR oil RegulaRly It’s important to drain or replace old or contaminated oil. To change the oil, remove the drain plug underneath the mower and allow it to drain completely. Replace it with the right type of oil for your lawnmower. Clean and oil moving PaRtS Check that your blade height adjuster and front wheels are moving freely. If they aren’t, clean any grass or dirt
away from them and spray them with lubricant. Spray lubricant on the throttle mechanism to make sure it moves freely. Pulling the throttle several times helps the lubricant to reach the cable. Use a wire brush to scrape grass clippings and dirt from the undercarriage to prevent clogging the mower’s discharge chute. CheCk youR SPaRk PlugS Two stroke mowers should have their spark plugs replaced twice every summer and four stroke mowers every 12-18 months. Remove the old plug with
a spark plug wrench. When installing the new plug, don’t over tighten it because it could stop the mower from starting. ShaRPen youR bladeS Mower blades can get damaged by rocks and branches. If you have a vice and a metal file you can sharpen them yourself, but it’s better to get a professional to do this for you. After replacing the blades, move them around to make sure they don’t touch the mower cover. Also check that there is enough clearance between the blades and the ground.

limbing up the walls of the Woolworths Fresh Food Dome, the District Exhibits are one of the Show’s iconic displays, featuring creative and artistic installations assembled from 14

outstanding quality grain, wool, fruit and vegetables. Each display consists of more than 10,000 pieces of the best quality fresh produce from five agricultural districts throughout NSW and South East Queensland. Each display is a labour of love from the five agricultural districts and is the work of months planning, sourcing produce from local farmers, designing and piecing together the incredible artworks. The five districts undergo five days of judging to compete for a prize that reflects the skills of professional designers, farmers and volunteers. Judging of the competition takes place over six days before the Show commences with close to 50 judges awarding points based on produce and display.

T
he Woodchopping & Sawing Competition has been a feature of the Sydney Royal Easter Show for over a century. www.homesguide.com.au
Attracting about 200 male and female competitors from Australia and overseas who compete in 65 different classes, this is the only Show Competition that is also a World Titles event. It is for this reason that the Sydney Royal Woodchop Competition is widely recognised as the ‘Wimbledon of Woodchopping’.

The new Natural Fibre Showcase will tell the field to fibre story by displaying the supply chain in front of the eyes of showgoers. Fibres including alpaca fleece and mohair will be pulled from spools into the loom and woven to create a rug. Pitt town Road BRidge PRoject neaRing comPletion Work is nearing completion on the replacement of two, old timber bridges on Pitt Town Road, Maraylya. The major infrastructure project has required the closure of Pitt Town Rd for several months but Infrastructure Projects Manager Ken Willimott said the end is near and will be well worth the wait. “This project has certainly been one of the bigger projects we’ve completed over the last few years and it’s one that will safeguard motorists and pedestrians using these bridges for generations to come,” Mr Willimott said. “The excessive rain throughout the month of February has slightly delayed the project, but we’re working hard with the contractors to get the job finished as soon as possible.” Mr Willimott said that reinforced concrete planks had been installed at both bridge sites. “Getting those planks to the site was quite challenging. It required a special permit for an oversized truck and all of the planks had to be driven down from the Lake Macquarie region. We also had delays obtaining the permit because the approving authority changed from the NSW Government to the Federal Government in the middle of the process. We have utilised very high strength steel tendons in the planks, allowing them to span longer distances much more efficiently.” “What we’re now doing is widening the approach roads and putting the finishing touches on the bridge decks, so we’re hoping to have the project complete by mid to late April.” 24

An extensive amount of environmental work had also been done around the site. “We lined the creek with rocks to stop erosion and protect the bridges – but they also provide a habitat for native, aquatic species.” “We’re also planting around 6000 native plants around the site.” Hills Shire Mayor Dr Michelle Byrne said that the replacement of timber bridges was a priority for councils throughout NSW. “It’s important that councils around the state replace these old timber bridges once and for all. The safety of motorists and pedestrians is paramount,” Mayor Byrne said. “Our strategic theme at Council revolves around three words; rejuvenation, infrastructure and connectivity. This project speaks to all three.” “We’ve been rated as having sound finances, a positive financial outlook and strong asset management. We want to maintain and improve on those high standards and this project is something to be proud of.” “I want to thank residents and motorists for their patience during this time. I’m sure they’ll be very happy with the end result – a higher, wider, safer bridge which is less prone to flooding and guaranteed to last for many years to come.”

That’s the message from Hills Shire Mayor Dr Michelle Byrne and Deputy Mayor Clr Andrew Jefferies. Mayor Byrne said the fact that Carlingford was currently split into three local government areas, four state electorates and three federal divisions often resulted in the suburb being left out of the planning process. “Carlingford isn’t wholly represented by one council, state member or one federal member. The population of Carlingford will rise by 46% by 2031 - therefore action needs to be taken now.” Carlingford resident Clr Jefferies said that suburbs that are already well-serviced by public transport should not be receiving new rail infrastructure ahead of Carlingford. “We support the concept of the Western Sydney Light Rail but Carlingford needs to be included along a future route of the line,” Clr Jefferies said. “The proposal from Parramatta Council seeks to run a line to Macquarie Park via Eastwood, which is more expensive and an unnecessary duplication of existing heavy rail infrastructure.” “Our Council’s preference has always been to see the completion of the Parramatta to Chatswood heavy rail link through to Epping via Carlingford, however we will support the light rail proposal if Parramatta Council are prepared to amend their preferred route.” Mayor Byrne said that she would request a meeting with NSW Transport Minister Gladys Berejiklian to make the case for Carlingford residents, seeking further analysis to deliver a revised route utilising the existing Carlingford Rail Line corridor. “The current proposal from Parramatta City Council is highly concerning to us and I’m sure it’s a concern to Carlingford residents also,” Mayor Byrne said. “If the NSW Government want us to accommodate growth and sell the idea of increased densities to our residents, then they must provide the public transport options to support that growth.”

slow-roasted pork belly INGREDIENTS
METHOD
2kg piece boneless pork belly (skin on) 2 garlic cloves Pinch of ground cloves 1/2 teaspoon caraway seeds 1/2 teaspoon dried chilli flakes 2 tablespoons thyme leaves 2 tablespoons olive oil 1 tablespoon lemon juice 2 onions, sliced Salad and mashed potato, to serve
Using a sharp knife, score the pork belly skin and fat in a criss-cross pattern, without cutting into the meat. Set aside. Place garlic, ground cloves, caraway seeds, chilli, thyme and sea salt in a mortar and pestle and crush to a paste. Stir in the olive oil and lemon juice. Rub the marinade over the pork and stand at room temperature for 30 mins.
Preheat the oven to 220째C. Arrange the onion slices in a roasting pan and sit the pork on top. Roast for 30 minutes. Reduce oven temperature to 170째C, then roast for a further 3 hours or until the pork is tender and cooked through, and the skin is crisp. Rest the pork belly, uncovered, for 20 minutes, then cut into slices and serve with the salad and mashed potato.

banana fritters with caramel sauce INGREDIENTS 3/4 cup (185ml) buttermilk Large pinch ground cinnamon 1/3 cup (30g) multigrain breadcrumbs 1/3 cup (30g) desiccated coconut 4 ripe lady finger bananas, peeled 2/3 cup (160g) caster sugar 1/3 cup (80ml) cream 1 cup (250ml) vegetable oil Vanilla ice cream squares, to serve
METHOD Whisk the buttermilk and cinnamon together until combined. Combine the breadcrumbs and coconut in a separate shallow bowl. Dip a banana into the buttermilk to coat well, then roll in the breadcrumb mixture to coat well. Transfer to a plate or tray. Repeat with remaining bananas. Refrigerate until required. Stir the sugar and 1/3 cup (80ml) water in a saucepan over a low heat until the sugar dissolves.
Simmer for 8 minutes or until golden. Reduce the heat to low and carefully whisk in the cream until combined. Heat the vegetable oil in a 22cm frying pan over a medium heat. Cook the bananas, turning, for 2-3 minutes until golden. Transfer to a plate lined with a paper towel. Reheat the caramel sauce if necessary. Serve the fritters with the ice cream squares and caramel sauce.

white chocolate and almond macarons
Master the art of these delicate delights and whip up heavenly, airy desserts like a pro - it’s surprisingly simple.
INGREDIENTS 2 cups (300g) pure icing sugar 3 cups (300g) almond meal 5 eggwhites (from 59g eggs) A pinch of cream of tartar 1/3 cup (70g) caster sugar 1-2 drops each green and pink liquid food colouring White chocolate ganache 180g good-quality white chocolate, finely chopped 1/3 cup (80ml) thickened cream 20g butter, chopped METHOD Sift the icing sugar and almond meal through a fine sieve into a large bowl. Use an electric mixer to whisk eggwhites and cream of tartar in a clean, dry bowl until firm peaks form. Gradually add caster sugar,1 tablespoon at a time, 32

whisking constantly until mixture is thick and glossy. Add the eggwhite mixture to the almond-meal mixture and stir to combine. Divide mixture into 2 even portions. Add the green colouring to one portion and stir to combine. Repeat with the pink colouring and remaining portion. Line 4 oven trays with baking paper. Spoon the green mixture into a large piping bag fitted with a 5mm round nozzle. Pipe 4cm discs onto the lined trays, allowing room for spreading. Repeat with the pink mixture. Use a slightly wet finger to smooth the top of each macaron. Set aside on trays for 30 minutes (this helps form a crust). Preheat oven to 150°C. Bake half the macarons in preheated oven, swapping www.homesguide.com.au
trays’ positions halfway through cooking, for 20 minutes or until macarons are dry to touch. Set aside on trays to cool completely. Repeat with remaining macarons. Meanwhile, to make ganache, place chocolate in a large heatproof bowl. Combine cream and butter in a small saucepan over high heat. Bring to the boil. Remove from heat and immediately pour over the chocolate. Use a metal spoon to stir until chocolate melts and mixture is smooth. Place in fridge for 20 minutes or until almost firm. Gently spread ganache onto the base of a macaron and sandwich with another. Repeat with remaining macarons and white chocolate ganache. Serve or store in an airtight container for up to 3 days.
spaghetti marinara INGREDIENTS 1/4 cup (60ml) olive oil, plus extra to toss 4 garlic cloves, finely chopped 6 anchovy fillets 2 x 400g can chopped tomatoes 200ml dry white wine 500g spaghetti 300g mussels, scrubbed, debearded 800g good-quality marinara mix 200g peeled green prawns Torn flat-leaf parsley leaves, to serve
METHOD Heat 2 tablespoons of oil in a large frypan over medium-low heat and add garlic and anchovies. Cook, stirring, for 1-2 minutes until anchovies have melted. Add tomatoes and wine and bring to a simmer, then reduce the heat to low and cook for 20 minutes until slightly reduced. Meanwhile, cook the pasta in a large pan of boiling salted water according to packet instructions. Drain, then return to the pan and toss in a little olive oil.
Add the mussels to the pan of sauce, cover and cook for 1 minute, shaking the pan occasionally. Add the remaining seafood and cook for a further 2-3 minutes until the marinara mix and prawns are cooked through and the mussels have opened (discard any that haven’t opened after this time). Season to taste with sea salt and freshly ground black pepper. Add the drained pasta, toss to combine, then divide among bowls and serve garnished with parsley leaves. moroccan lamb sausage rolls INGREDIENTS 400g lamb mince 2/3 cup fresh breadcrumbs 2 tablespoons Gourmet Garden Moroccan Seasoning 2 sheets frozen puff pastry, partially thawed Olive oil cooking spray 1/2 cup plain yoghurt 100g baby spinach
METHOD Preheat oven to 220°C/200°C fanforced. Line a large baking tray with baking paper. Place mince, breadcrumbs and seasoning in a large bowl. Season with salt and pepper. Using clean hands, mix until well combined. Place 1 pastry sheet on a flat surface. Shape half the mixture into a 25cm-long log. Place along the edge of pastry sheet. Roll pastry up to enclose filling. Cut in half. Place, seamside down, on prepared baking tray.
Serve with yoghurt sauce for extra flavour.

delightful seafood GREEN CURRY SALMON WITH NOODLE SALAD INGREDIENTS 4 (about 200g each) salmon fillets 2 1/2 tablespoons Ayam Thai green curry paste 125ml (1/2 cup) light coconut cream Juice of 1 lime 1 cup Rainbow salad 3/4 cup fresh coriander leaves 100g bean thread vermicelli noodles METHOD Preheat oven to 200C. Place the salmon fillets in a baking dish. Combine curry paste, coconut cream and half the lime juice in a jug. Pour over salmon and bake
for 16-18 minutes for medium or until cooked to your liking. Place noodles in a bowl. Cover with boiling water and stand for 3-4 minutes or until tender. Refresh and drain. Toss with the rainbow salad, coriander and the remaining lime juice. Divide salmon among plates. Serve with noodle salad.

While NEWM has been around for half a decade in the United States, employee wellness programs have never gotten more attention than they have in the last few months within Australia. Much of this spotlight stems from debates about political issues such as privacy and discrimination. Starting in 2014, American employers will be able to reward employees for practicing healthy behaviors (such as quitting smoking or losing weight). Most media coverage

T
he Cool Hunter has discovered Australian artist CJ Hendry through her Instagram account. TCH were immediately blown away by her work. Armed with only paper and pen, she creates magnificent, photorealistic black-and-white images in large format. Her subjects are generally high-end fashion objects, such as a Hermes scarf or a Louis Vuitton horse head, but they can also be other inanimate objects including sculls and guns. The pieces are mesmerizing visual objects in their own right, but once you realize they are created by just pen and ink, you really start to appreciate the skill and patience

involved. The Cool Hunter are very happy to be the first to introduce her work to the world at large. They are usually pretty good at knowing when they have found a winner, and she’s one. All six of CJ Hendry’s pieces were sold prior to the opening of “The Art Hunter” in Sydney and all via Instagram. CJ Hendry’s creative process starts with selecting an object, or in some cases the objects selects her and she becomes obsessed with it to the point of having to create an image of it in ink. She then photographs the object in different positions and lighting, sometimes taking more than 100 images. She looks for a strong contrast with negative space that then draws the focus onto the object itself. www.homesguide.com.au
She selects the image that evokes a sense of simplicity and balance, or that in her words “shows off” the item the best. She then prints a black-and-white image and creates a grid on a large sheet of Arches paper. CJ spends sometimes more than 200 hours painstakingly creating the final piece using only black UniPin pens. Having dropped out of two university programs, the former almost-Olympic-level swimmer (she just missed the Athens Olympics and left full-time swimming after that) has now found a satisfying life to channel her creativity, mental endurance and obsession with fashion. CJ explains: “The main reason I am so obsessed with expansive white
backgrounds and highly detailed objects was through my early years of studying architecture. I was completely obsessed with the large plans with perfect lines, and this is where I was introduced to the
