RECIPES
METHOD Step 1 Preheat oven to 160°C. Line 2 baking trays with non-stick baking paper.
INGREDIENTS • 150g (1 cup) plain flour • 90g (1 cup) rolled oats (see Notes) • 85g (1 cup) desiccated coconut
Step 2 Combine flour, oats, coconut and combined sugar in a large bowl.
• 100g (1/2 cup, firmly packed) brown sugar • 55g (1/4 cup) caster sugar
Step 3 Stir the butter, golden syrup and water in a small saucepan over medium heat until the butter melts and the mixture is smooth. Stir in the bicarbonate of soda. Add to the oat mixture and stir until well combined. Step 4 Roll level tablespoonfuls of the oat mixture into balls and place, about 5cm apart, on the prepared trays. Flatten until about 1cm thick. Bake, swapping trays halfway through cooking, for 15 minutes or until light golden. Set aside for 10 minutes to cool slightly before transferring to wire racks to cool completely

ANZAC DAY - SYDNEY When: Wednesday 25th April 2018 Dawn Service: The Cenotaph 4.30am Martin Place, Sydney The ANZAC Day thousands gather in the predawn darkness to honour fallen soldiers. The dawn service includes a catafalque contingent, an Ode of Remembrance, Last Post bugle call, a minute’s silence, a Reveille played on a bugle and the laying of wreaths. The Ode of Remembrance (below) is taken from a poem written by the English poet Laurence Binyon. It was first published in The Times (London) on 21 September 1914 and has been recited at commemorative services since 1919. “They shall grow not old, as we that are left grow old; Age shall not weary them, nor the years condemn. At the going down of the sun and in the morning We will remember them.” The audience then responds: “We will remember them.” ANZAC DAY MARCH – 9.00AM TO 12.30PM The march begins at 9am at the intersection of Martin Place and Elizabeth Street. It travels down Elizabeth Street and finishes at the end of Hyde Park at Liverpool Street. At the conclusion of the parade, at approximately 12.30pm, a commemoration service is held next to The Pool of Remembrance at the ANZAC War Memorial in Hyde Park South. Sydney’s ANZAC Day March gives participating veterans and the general public an opportunity to honour those who served in the defence of Australia or its interests, especially remembering those who paid the supreme sacrifice or otherwise suffered as a result of their service. The Order of March will be WWII veterans followed by Navy/Army/Air Force (in conflict order), civilians in support of Australian Troops, descendants of Australian veterans, Commonwealth and allies.

ANZAC COMMEMORATION SERVICE – 12.30 The is held at the ANZAC Memorial, Hyde Park, adjacent to the Pool of Remembrance, commencing at 12.30pm. The service has developed into an impressive dedication to ANZAC, usually attended by His Excellency the Governor, Premier of New South Wales, Leader of the Opposition, senior service representatives, invited guests and members of the community. In recent years a United Drumhead Service has been introduced. This year support is to be provided by cadets from The Scots College and a choir accompanied by the NSW Police Concert Band. NSW Police Concert Band and the Scots College Massed Pipe Band traditionally provide music for the Commemoration Service and take post in the band bay and pool surrounds as directed

It was the start of a campaign that lasted eight months and resulted in some 25,000 Australian casualties, including 8,700 killed or subsequently died of wounds or disease. The men who served on the Gallipoli Peninsula created a legend, adding the word ‘Anzac’ to our vocabulary and creating the notion of the Anzac spirit. In 1916, the first anniversary of the landing was observed in Australia, New Zealand and England and by troops in Egypt. That year, 25 April was officially named ‘Anzac Day’ by the Acting Prime Minister, George Pearce. By the 1920s, Anzac Day ceremonies were held throughout Australia. All States had designated Anzac Day as a public holiday. In the 1940s, Second World War veterans joined parades around the country. In the ensuing decades, returned servicemen and women from the conflicts in Korea, Malaysia, Indonesia, Vietnam, Afghanistan and Iraq, plus veterans from allied countries and peacekeepers, joined the parades. During the 1960s and 1970s, the number of people attending the ceremonies fell as Australians questioned the relevance of Anzac Day. However, in the 1990s there was a resurgence of interest in Anzac Day, with attendances, particularly by young people, increasing across Australia and with many making the pilgrimage to Gallipoli to attend the Dawn Service.
