poached lamb with spring vegetables

This recipe traditionally uses beef, but Valli Little has used new-season lamb. The meat is thinly sliced and gently poached in hot stock just before serving. INGREDIENTS • 2 cups (500ml) Campbell’s Real Stock Beef • 1 bunch baby (Dutch) carrots, trimmed • 1 bunch baby turnips (see notes), trimmed • 8 kipfler potatoes, peeled, halved if large • 4 eschalots, halved if large • 1 bunch broccolini, trimmed • 1 cup (150g) podded broad beans • 120g green beans, trimmed • 2 x 270g lamb backstraps, trimmed • Basil pesto, to serve Photography by Jeremy Simons

a simmer, then add the carrot, turnip and potato. Cook for 6-8 minutes until tender. Step 2 Add the eschalot, broccolini, broad beans and green beans, then cook for a further 1-2 minutes until tender. Remove vegetables with a slotted spoon and divide among serving bowls, mashing a little potato against the side of the pan, using a fork, to thicken the stock. Step 3 Slice the lamb as thinly as possible then divide among the bowls. Pour over the hot stock (the stock will gently cook the lamb), drizzle with pesto, then serve. Source: www.taste.com.au

INGREDIENTS • 600g lamb fillets, trimmed of excess fat and sinew • 1/4 cup (60ml) Worcestershire sauce • 1 tablespoon olive oil • 1 bunch asparagus, woody ends trimmed, blanched in boiling water for 1 minute • 85g low-fat feta • 2 cups watercress sprigs • 1/4 cup (40g) toasted blanched almonds • 1/4 cup (50g) black olives • 2 tablespoons lemon juice • METHOD Step 1 Toss the lamb in the Worcestershire sauce, then remove and season lamb well

lamb skewers with pistou, eggplant dip & lebanese bread INGREDIENTS • 4 lamb eye of loin (backstraps), cut in half lengthways, cut into 2cm cubes • Salt & freshly ground black pepper • 1 x 200g ctn eggplant with shallots dip (Savion brand) • 4 rounds Lebanese bread, cut in half • Lemon wedges, to serve Pistou • 2 tablespoons finely grated lemon rind • 1 tablespoon finely chopped fresh continental parsley • 1 tablespoon finely chopped fresh oregano • 1 tablespoon olive oil • 1 garlic clove, finely chopped • Salt & freshly ground black pepper Equipment • You will need 12 bamboo or metal skewers for this recipe.

METHOD Step 1 Thread the lamb evenly among skewers. Season with salt and pepper. Step 2 To make the pistou, whisk together the lemon rind, parsley, oregano, oil and garlic in a small bowl. Taste and season with salt and pepper. Step 3 Heat a barbecue or chargrill on high. Add the lamb and cook for 2 minutes each side for medium-rare or until cooked to your liking. Remove from heat. Step 4 Place the eggplant dip in a serving bowl. Fold the bread into quarters to form triangles. Place on a serving platter with the dip. Arrange lamb skewers on a separate platter. Drizzle with pistou and serve immediately with lemon wedges.

lamb burgers with beetroot salsa If beetroot on a beef burger makes it an Aussie burger, doesn’t beetroot on a lamb burger make it a super Aussie burger? I bet Sam Kekovich thinks so! INGREDIENTS • 500g lamb mince • 1 red onion, finely chopped • 1 garlic clove, chopped • 1/4 cup flat-leaf parsley leaves • 3 teaspoons ground cumin • 1 cup mint leaves, plus extra to garnish • 425g canned baby beetroot, drained • 1 tablespoon finely chopped coriander leaves • 1/4 cup (60ml) lemon juice • 2 tablespoons olive oil • 100g soft goat’s cheese • Toasted hamburger buns and salad leaves, to serve METHOD Step 1 Place the lamb in the bowl of a food processor with half the onion, the garlic, parsley, 2 teaspoons of the cumin and 1/4 cup of the mint. Pulse until the mixture

just comes together. Season with salt and pepper and form into 4 patties. Step 2 Cut beetroot into small cubes. Place in a bowl with the remaining onion, cumin and mint. Add the coriander, lemon juice and oil, then season and set aside. Step 3 Preheat the grill to high. Step 4 Grease a chargrill or frypan and heat over medium-high heat. Cook patties for 3 minutes each side or until cooked to your liking. Crumble cheese on top of each patty. Place under grill for about 1 minute until cheese is bubbling. Step 5 Serve burgers on toasted buns with salad leaves, beetroot salsa and extra mint leaves.

diy wooden bathroom shelves You can never have enough storage space in your bathroom. That’s why these wooden towel shelves are the perfect addition to any bathroom. They’re easy to make and we’ll show you how. STEP 1. HAVE THE WOOD PRE-CUT To make the job even easier, work out the length you want your shelves to be and have timber cut to the right size at selected Bunnings stores. Our shelves are 700mm long. STEP 2. CUT THE TIMBER TO THE CORRECT DEPTH Use the square to measure and mark the depth of the timber, which in our case is 200mm from a 290mmm depth. Use your spirit level to draw the line you’ll be cutting along. Clamp the timber in place and use the jigsaw to cut it to the right width. STEP 3. CUT THE REINFORCING BARS Clamp the reinforcing bars to your workbench. Put on your safety glasses and earmuffs. Use the grinder to cut the 12mm reo bars into the correct length, which in our case is 150mm. You will need six bars, two for each shelf. STEP 4. VARNISH THE SHELVES Use a paint brush to apply a marine grade varnish to the shelves and leave them to dry. This will help protect them from the moisture in the bathroom. STEP 5. FIND THE CENTRE OF THE STUDS Use the stud finder to locate the centre of your studs where you’re going to mount your shelves. You will need to mark two studs per shelf. Because we are making three shelves, we have made six marks.

When measuring and marking, it’s a good idea to use a spirit level between studs to ensure your shelves will be even. STEP 6. DRILL THE HOLES FOR THE REINFORCING BARS Use a 12mm spade bit to drill the six holes in the wall and into your stud, which in our case is a depth of 70mm deep. Use a rubber mallet to insert the reinforcing bar into the holes. Make sure you leave enough of the bars sticking out so you can attach the shelves to them. STEP 7. DRILL THE HOLES IN THE SHELVES Place your shelves on the bars to work out where the holes should be. Make your marks on top of the shelves, and transfer those measurements to the back of each. Clamp the shelves to your workbench and drill in the holes deeper than the wall to fit the bars, which in our case is 80mm. Make sure you drill straight, so that the shelves will sit level. STEP 8. MOUNT THE SHELVES After drilling the holes in the back of the shelves, insert the reinforcing bars into them. If you need to, gently tap the shelves with a rubber mallet so they are flush with the wall. STEP 9. PLACE YOUR ITEMS ON THE SHELVES Now that you’re finished, all you have to do is place your items on the shelves. They’re great for towels, toiletries and even plants.
