pumpkin felafel with chopped tomato salad This delicious meat-free felafel salad is packed with flavour, perfect for a weeknight dinner.

INGREDIENTS • 200g peeled pumpkin, steamed, mashed • 2 x 400g cans no-added-salt chickpeas, rinsed, drained • 1 1/2 teaspoons ground cumin • 1 teaspoon ground coriander • 1 garlic clove, crushed • 2 tablespoon plain flour • 1/2 cup fresh continental parsley leaves, chopped • 1/2 cup fresh mint leaves, chopped • 1 tablespoon plain flour, extra, to dust • 250g cherry tomatoes, chopped • 2 Lebanese cucumbers, chopped • 2 teaspoons lemon juice • 1 teaspoon olive oil • 2 wholemeal pita bread, halved, grilled, to serve

• 1 lemon, cut into wedges, to serve METHOD Step 1 Place the pumpkin, chickpeas, cumin, coriander, garlic, flour and half the parsley and mint in a food processor and process until finely chopped. Season. Shape the mixture into 24 oval patties. Place the extra flour on a plate. Dust the felafel lightly in the flour, shaking off any excess. Step 2 Place the tomato, cucumber and the remaining herbs in a bowl. Add the lemon juice and olive oil and stir to combine. Step 3 Spray a large non-stick frying pan with oil and heat over a medium-high heat. Cook the felafel for 2-3 minutes each side or until golden brown. brussels sprouts with orange and hazelnuts

Serve up these gourmet Brussels sprouts infused with orange juice and topped with toasted hazelnuts. INGREDIENTS • 1/3 cup (45g) hazelnuts • 500g Brussels sprouts, ends trimmed, halved • 2 teaspoons olive oil • 100g shortcut bacon, finely chopped • 1 orange, zested, juiced • 1 tablespoon wholegrain mustard • 1/4 cup coarsely chopped chives • Grilled salmon fillets, to serve METHOD Step 1 Preheat oven to 180C. Spread the hazelnuts over a baking tray. Bake for 5-7 mins or until toasted. Set aside to cool. Rub hazelnuts in a tea towel to remove the skins. Coarsely chop. Step 2 Meanwhile, cook the Brussels sprouts

in a large saucepan of boiling water for 2 mins or until almost tender. Drain well. Step 3 Heat the oil in a large frying pan over high heat. Cook the bacon, stirring, for 5 mins or until golden brown. Add the Brussels sprouts and cook, tossing, for 2 mins or until golden. Add the orange zest, orange juice and mustard. sticky Asian pumpkin & red rice salad Lemongrass paste adds zing to the pumpkin in this healthy vegetarian main. INGREDIENTS • 160g (3/4 cup) red rice, rinsed • 375ml (1 1/2 cups) water • 1.2kg Kent pumpkin, cut into 8 wedges • 1 tbs coconut oil, melted • 1 1/2 tbs finely grated palm sugar • 1 tbs lemongrass paste • 60ml (1/4 cup) lime juice • 1/2 cup fresh coriander leaves, chopped • 1 fresh long green chilli, chopped • 170g ctn no-fat Greek yoghurt • 1/2 cup fresh Thai basil leaves • 1/2 cup fresh mint leaves • 2 tbs fried shallots METHOD Step 1 Preheat oven to 200C/180C fan forced. Line 2 baking trays with baking paper. Place rice and water in a small saucepan over high heat. Bring to the boil. Reduce heat to low. Cook, covered, for 35 minutes or until tender. Stand covered for 5 minutes. Transfer

to a colander to drain. Cool. Step 2 Meanwhile, place the pumpkin wedges on prepared trays. Drizzle with the oil. Season. Roast, turning halfway through cooking, for 20 minutes or until golden. Step 3 Combine palm sugar, lemongrass and 2 tbs of the lime juice in a small bowl. Season well. Drizzle over pumpkin. Roast for a further 10-15 minutes or until pumpkin is tender and lightly caramelised. Step 4 Process the coriander and chilli in a food processor until finely chopped. Add the yoghurt and remaining lime juice. Process until well combined. Season. Step 5 Combine the rice, basil leaves and mint leaves in a bowl. Arrange the pumpkin and rice mixture on a serving plate. Drizzle with the yoghurt dressing and sprinkle with the fried shallots.

This low-cal, low-fat vegetarian curry is bursting with vibrant flavour, perfect for a cooler night! INGREDIENTS • 2 teaspoons olive oil • 1 red onion, finely chopped • 2 garlic cloves, crushed • 2 teaspoons finely grated • fresh ginger • 1 long green chilli, deseeded, finely chopped • 2 teaspoons brown mustard seeds • 2 teaspoons curry powder • 10 fresh curry leaves • 375ml (1 1/2 cups) homemade or • salt-reduced vegetable stock • 125ml (1/2 cup) reduced-fat coconut milk • 300g carrots, peeled, cut into 1cm pieces • 400g can chickpeas, rinsed, drained • 350g broccoli, trimmed, cut into florets • 150g (1 cup) frozen peas

• 2 cups steamed quinoa, to serve • 1/4 cup natural yoghurt, to serve • 4 pappadums, microwaved, to serve • Fresh coriander leaves, to serve METHOD Step 1 Heat oil in a saucepan over high heat. Add onion. Cook, stirring, for 5 minutes or until soft. Add garlic, ginger, chilli, spices and curry leaves. Cook, stirring, for 1 minute. Step 2 Add stock and milk. Bring to boil. Add carrot and chickpeas. Reduce heat to low. Cover. Simmer, stirring occasionally, for 10 minutes. Step 3 Add broccoli and peas. Simmer, covered, for 5 minutes or until vegies are just tender. what to do in the garden in september September is the time of year when the garden experiences a revival, and as the weather warms up, there are more gardening days. This is the time to start planting your summer crops, mulching in preparation for summer, planting edible annuals, and doing a general clean-up to get your yard in top shape. WHAT TO PLANT While the transition from winter to spring can bring with it unstable weather, now is the time to prepare your summer veggie patch. Start by planting basil, corn, climbing beans, zucchini and tomatoes. Keep in mind that if you are planting seeds, they will require warm soil to start growing. For temperate climates, you can sow seeds for broccoli, beetroot, spring onion, carrot, lettuce, potato, silverbeet, tomatoes and peas to name a few. And almost all veggie seedlings can be planted now. Consider planting popular natives bottlebrush and correa for a splash of colour. Roses, lavenders and a large array of annuals, such as snapdragons and petunias, are available as seedlings. Another favourite is potted colour (including impatiens) for a quick spring display in the garden, pots or hanging baskets.

To work out what’s best to plant based on your climate, ask your local Bunnings team for advice, as they can help you plan to plant while taking frost, salt winds, soils and humidity into consideration. WHAT TO PICK A range of camellias, cyclamen, and agapanthus, are in bloom. It’s also the perfect time to harvest asparagus, celery and dill. Raid the veggie patch as Asian greens, lettuce, chicory, English spinach, mustard lime streaks, broad beans, cabbage, leek, parsnip, pineapple, star fruit and a variety of citrus are also in season. WHAT TO DO Divide and conquer September is the time to divide plants such as rhubarb, horseradish, artichoke, ginger and arrowroot.

Fertilise Give your perennials a head start with liquid fertiliser every fortnight, as well as general fertilising for garden beds and lawns before you start mulching in October. Cover up Keep an eye on the weather forecast in temperate climates as a late frost can wipe out an entire crop. The best way to combat this is using hessian or gardening shade cloth to cover your seedlings so they have the best chance of survival. Clean up If you have a chook shed, now is the best time to give the enclosure a thorough clean out. You can also use dynamic lifter on your citrus trees now.
