apricots in rosewater syrup with cinnamon ricotta Whip up a healthy dessert in less than 30 minutes with this clever apricot and ricotta cheese recipe. INGREDIENTS • 12 just-ripe apricots, halved, stones removed • 100g (1/2 cup) caster sugar • 80ml (1/3 cup) cold water • 1 tablespoon rosewater essence (Queen brand) • 160g fresh ricotta • 60ml (1/4 cup) milk • 1/2 teaspoon ground cinnamon • 50g pistachios, shelled, coarsely chopped

METHOD Step 1 Fill a large heatproof bowl with cold water. Place the apricots, 70g (1/3 cup) sugar, water and rosewater essence in a medium saucepan over medium-high

heat. Bring to the boil. Reduce heat to low and simmer, stirring occasionally, for 12-15 minutes or until apricots soften and the syrup thickens slightly. Remove from heat and place the base of the saucepan in the bowl of cold water. Set aside for 10 minutes to cool. Step 2 Meanwhile, use an electric beater to beat remaining sugar, ricotta, milk and cinnamon in a bowl until smooth. Divide apricots among serving bowls and drizzle with syrup. INGREDIENTS • 2 tablespoons sweet chilli sauce • Pulp of 4 passionfruit • Juice of 1 lime • 2 bananas, halved • 1 tablespoon finely chopped mint, plus extra leaves to garnish • Thick cream or ice-cream and lime wedges, to serve

wholemeal crepes with passionfruit and mint yoghurt

Light and fluffy wholemeal crepes with rich passionfruit and mint yogurt filling - the all-round perfect dessert! INGREDIENTS • 3/4 cup wholemeal plain flour • 2 teaspoons caster sugar • 3 eggs, lightly beaten • 2 tablespoons vegetable oil • 1 cup milk • Canola oil spray • 1 cup vanilla yoghurt • 1 tablespoon shredded fresh mint leaves • 2 passionfruit, halved (see note) • 1/4 cup pistachio kernels, toasted, chopped METHOD Step 1 Sift flour into a bowl. Stir in sugar. Whisk egg, oil and milk together in a large jug. Gradually add egg mixture to flour mixture, whisking until smooth and

combined. Cover. Set aside for 30 minutes. Step 2 Spray an 18cm (base) non-stick frying pan with oil. Heat over medium heat. Pour 1/4 cup batter into pan. Swirl to cover base. Cook for 2 minutes or until light golden. Turn. Cook for 1 minute. Transfer to a plate. Cover to keep warm. Repeat with remaining mixture to make 8 crepes. Step 3 Place yoghurt, mint and half the passionfruit pulp in a bowl. Stir to combine. Step 4 Fold crepes in half. Top each with 1 1/2 tablespoons yoghurt mixture. Fold in half again to enclose filling. Place on plates. Top with pistachios and remaining passionfruit pulp. Serve.

asian fruit salad in ginger syrup Soothe your sweet tooth with an exotic asian fruit dessert starring rambutan and guava. INGREDIENTS • 375ml (1 1/2 cups) paradise punch fruit juice (Just Juice brand) • 2cm-piece fresh ginger, peeled, finely grated • 2 guavas, peeled, halved crossways • 12 rambutans, peeled, halved, deseeded • 2 kiwifruit, peeled, halved lengthways, each half cut into wedges

METHOD Step 1 Fill a large heatproof bowl with iced water. Combine the fruit juice and ginger in a small saucepan over high heat and bring to the boil. Reduce heat to mediumlow and simmer for 15 minutes or until thickened slightly. Remove from heat. Place the base of the saucepan in the bowl of iced water for 10 minutes to cool. Saving Chloe Saxby There was an incredible turnout at this year’s Spring into Corrimal festival, with approximately 60,000 people attending the local event. The Corrimal Chamber of Commerce put together a fantastic event with over 282 stalls featuring local businesses, food and community groups. Spring into Corrimal is now the largest one-day free family festival in regional NSW. The Illawarra’s generosity was evident with the local public and Corrimal businesses coming together to raise money for saving Chloe Saxby and Vanishing White Matter Disease. Chloe is a local girl from Woonona who was diagnosed with an extremely rare, terminal brain disease, called Vanishing White Matter Disease. Over $10,000 was raised on the day, with local real estate One Agency Property Division raising $924, café Hevan Espresso raising over $1,400 and RJ’s Discount Variety store raising $510. An incredible further $8,628 was raised through raffle ticket sales, merchandise and donations.
