sweet barbecued chicken kebabs with spring salad
Show off the best of spring produce in this vibrant snow pea, zucchini and radish salad served with marinated kebabs. INGREDIENTS • 2 x 450g Coles Grill Sweet BBQ Chicken Kebab • 100g snow peas, trimmed • 2 medium zucchini, cut into ribbons • 1 bunch radishes, trimmed, thinly sliced • 1 lemon, zested and juiced • 2 tablespoons olive oil • 2 teaspoons wholegrain mustard • 2 teaspoons tarragon, chopped • Lemon wedges, to serve
METHOD Step 1 Heat a barbecue grill or chargrill on medium. Cook kebabs on grill, turning occasionally, for 10-15 mins or until cooked through. Step 2 Meanwhile, place the snow peas in a heatproof bowl, cover with boiling water and stand for 2 mins. Drain and rinse under cold water. Step 3 Arrange snow peas, zucchini, radish and lemon zest on serving plates. Whisk the lemon juice, oil, mustard and tarragon in a bowl and season. Drizzle over salad. INGREDIENTS • 2 bunches asparagus, woody ends trimmed • 4 bagels, split • 125g haloumi, cut into slices crossways Avocado hummus • 1/2 teaspoon ground cumin • 1/2 teaspoon smoked paprika • 1 large ripe avocado, peeled, stoned • 400g can chickpeas, rinsed, drained • 2 tablespoon lemon juice • 1 tablespoon tahini Chermoula • 1/4 cup coriander, finely chopped • 1/4 cup flat-leaf parsley, finely chopped • 2 tablespoons olive oil • 1 tablespoon lemon juice • 1 garlic clove, crushed • 1 teaspoon Moroccan seasoning METHOD Step 1 To make the avocado hummus, toast the cumin and paprika in a small frying pan
