ravioli Anyone can produce their own homemade pasta with this basic ravioli recipe.

INGREDIENTS • 490g plain flour or 400g fine Italian ‘00’ flour • 4 eggs METHOD Step 1 Place flour in a mound on a clean surface. Make a well in the centre. Add eggs. Gently whisk with a fork, using your other hand to secure the walls. Draw in the flour as you go. Step 2 Bring the dough together. Knead for 5 minutes or until elastic and smooth. Sprinkle the dough with flour, wrap in plastic wrap and set aside for 30 minutes to rest. Step 3 Divide the dough into 4 portions. Flatten 1 portion slightly. Set the pasta machine on the widest setting and flour the machine and dough well. Feed through the machine. Step 4 Repeat 6 more times, folding the dough into thirds and turning it 90 degrees until it’s smooth and the same width as the machine (at least 12cm). Halve crossways. Continue to feed each dough half through the machine, separately, without folding, narrowing the machine settings 1 notch at a time, until you

reach the second last setting. The pasta should be about 1mm-thick. Repeat with the remaining 3 dough portions to make another 6 sheets. Step 5 Place one prepared pasta sheet on a well-floured work surface. Place heaped teaspoons of filling (see related recipes) at 5cm intervals, in 2 rows, on the sheet leaving a 2cm border around edges. Step 6 Brush around the filling with water – this helps keep the ravioli sealed. Top with a second pasta sheet and press firmly around the filling to seal and remove air pockets. Step 7 Cut between the filling to make 5cmsquare ravioli. Transfer the ravioli to a tray lined with floured non-stick baking paper. Continue with the remaining pasta and filling. Step 8 Cook half the ravioli in a large saucepan of salted boiling water for 3-4 minutes or until al dente. Use a slotted spoon to transfer to a plate. Repeat with remaining ravioli. METHOD Step 1 Whisk milk, egg and vanilla together in a jug. Sift flour and bicarbonate of soda into a bowl. Stir in sugar. Make a well in centre. Add milk mixture. Whisk until just combined. Step 2 Heat a large non-stick frying pan over medium heat. Brush pan with butter. Using 1/4 cup mixture per pancake, cook 2 pancakes for 3 to 4 minutes or until bubbles appear on surface. Turn and cook for 3 minutes or until cooked through. Transfer to a plate. Cover loosely with foil to keep warm. Repeat with remaining mixture, brushing pan with butter between batches. Serve. STEP 1: BOX FRAME To build your box frame, line up the back piece with your base and screw them together. Then screw in each of the sides to the back and base. When joining each of the pieces together, make sure you

STEP 5: PAINT & DECORATE Once the hamper is complete, you can paint it. White is a great base colour for the whole box. Then use your colour sample pots to paint your target design around the hole.

STEP 2: ATTACH LID HINGES Next screw in the two hinges to your top piece at either end. Then screw the hinge into the top of your back piece to make your lid. STEP 3: CUT OUT TARGET Now take your piece of MDF and trace the outline of a dinner plate onto it. Make sure you position it to make a circle close to the top end of the board. Then draw a second wider circle around the inner circle for your target design. Then cut out the inner circle using a jigsaw. STEP 4: NAIL FRONT PIECE Once your front piece is finished, you are ready to nail it to the front of your box frame.
