editor’s note

Greet each day like a new year.

25

How will you wake up to the new year? The same person as before, right? Sometimes how you choose to wake up can actually change your day, your week and your year. I teach Monday morning yoga. It’s become a ritual for me to lead students with a slower practice and lots of breathing. We take the time to center and be in a place that feels good. As the week builds to more of a frenzy with responsibilities to meet, we often forget what we wanted to do in our lives on Monday. But then there’s another day, another week, another year.

DECEMBER | JANUARY 2012-13

We can start over every day. The ancient East Indian poet Rumi says: Today, like every other day, We wake up empty and frightened. Don’t open the door of the study and Begin reading a book. Instead, take down the dulcimer.

Let the beauty of what we Love be what we do. There are hundreds of ways To kneel and kiss the earth.

Today, consider: How would you like to honor the earth and your place in it, every day, in some small way? How will you grow? How can you be more whole and more of a healer to others in your life? The answers come when taking time “not doing” rather than doing. What is your dulcimer? How will you start your day each day of the new year? Can you let the beauty of what you love be what you do? Quick and Fun Holiday Table Decorating Make a festive display with everyday items

7

redouxhome.com DECEMBER | JANUARY 2012-13

By Roger Malloy

Everyone wants to prepare great holiday food for family and friends, and also set a fun and festive table without much extra work. Here are some ideas to create a festive holiday table without spending a lot of time or money.

1.

Turn a wine glass upside down placing a sprig of holly, or an ornament under it. Place a tea light, votive candle or small cylindrical candle on top, and you have a great decoration. Line several of them down the center of the table, or place one at each guest’s setting.

2..

You can usually find sets of 12 white votive candles in holders at your local craft store. Get one or two sets, and run them down the center of your table. You can also place small white votives in small mason jars. Surround them with greens, ornaments or artificial snow for a special holiday look.

3.

For a simple holiday dinner, fill mason jars, clear glass cylinders or a large clear vase with mini Christmas ball ornaments. You can tie a ribbon around the neck of the jars or vases for a quick, simple centerpiece.

Most of us have a collection of candleholders in various designs, shapes and finishes. Gather them up (the more the merrier) line them down the center of your table and same-color candles, such as all white, red, green or gold to tie the look together. Add ball ornaments in the color you’ve chosen along with greens at the base of the candles.

5.

For a spectacular holiday brunch centerpiece, pile fresh fruit—apples, pears, oranges, pineapple, grapes, for example—on a footed cake holder, pedestal base bowl or large decorative bowl. After arranging the fruit, add some small ball ornaments into the pineapple top and lightly dust with powdered sugar to give the effect of a light snowfall. This is guaranteed to get “oohhs and aahhs.”

6.

Some final suggestions: Adding greenery or artificial snow to your table setting always is a nice addition. Battery operated Christmas string lights add a unique and surprising touch to a setting. Battery operated candles not only look good, but are safe because of there are no flames. Don’t be afraid to go overboard with your look—it’s festive holiday fun time. Weaving Cultures By Linda Day dunlap

If I were blindfolded and you were to spin me in any of the three rooms of the shop Cultural Cloth (not too fast) and I were to head toward any item there knowing that I could keep that item, I would love whatever it was and treasure it forever. The wealth of beauty in this space is absolutely amazing. Last April, textile artists Mary Anne Wise and Jody Slocum opened Cultural Cloth along the Great River Road in Maiden Rock, Wisconsin. The shop is a venue to help women artisans from around the world market their work.

10

The idea for the shop grew out of Wise and Slocum’s experiences teaching rug hooking to Mayan women in Guatemala. Although rug hooking is not a traditional skill in Guatemala, Wise and Slocum hoped that it would give Mayan women an opportunity to expand their earning capacity and incorporate their own designs into hand-hooked rugs. They began a three-year program teaching Mayan women to be teachers in their own communities. It turned out to be a wonderful complement to the traditional weaving of Guatemala.

Another goal is to encourage artisans to do more than create cheaper “tourist trade” items – to help them find a market for more detailed work that carries on the textile traditions of the Mayan people and allows them to support themselves in an area where there are few opportunities for women.

Folk art, jewelry, hand carved figures from Guatemala and more fill every wall of the store. Everywhere you look you will find something amazing, skillfully done and one of a kind. The seasonal retail store is open Fridays through Sundays, 10AM to 5PM each day through December 23. You may also shop online year-round at culturalcloth.com.

Although the owners of Cultural Cloth began their work in Guatemala, they now work in 15 countries, oftentimes partnering with women’s cooperatives to help bring saleable products to market here and to enable women to make a decent living carrying on the traditions of their country. Cultural Cloth carries rugs and textiles from Morocco, Kyrgyzstan, India, Afghanistan, Bolivia, Peru and others in addition to the “country of origin” – Guatemala. Knowledgeable salespeople – most likely Wise and Slocum – provide more information about the traditions, the area where pieces were created, or even something personal about the individual artists. I was especially drawn to some beautiful hand-woven scarves from India, with sequins woven inside the fine cloth for a wonderful subtle effect.

Bring Spoonriver to Your Dining Room Table By Elizabeth Child

When Brenda Langton was growing up, her favorite meal was boiled dinner – a one-pot stew of ham, cabbage, potatoes and onions. It was not the ham she loved, but the vegetables. Today, her Minneapolis restaurant Spoonriver, which opened after she closed the doors on the award-winning Café Brenda, puts meat in its place as just one of the ingredients among the vegetables, grains and herbs. Often meat is not called for at all. Locally-sourced fresh vegetarian ingredients are her stars. Her new cookbook, The Spoonriver Cookbook, shows just why Langton has made a name for herself in her 40 years as a restaurateur. As a teen she educated herself on plant-based proteins like whole grains, nuts and legumes while working at a veggie joint we’d call “crunchy” today. In her own restaurants she has elevated crunchy into healthful, fresh and flavorful, drawing inspiration from worldwide cuisine. Local cooks will appreciate that most spices are easily found in mainstream coops or markets. She lets fresh foods shine by refusing to bury them under complex sauces. They are enhanced, not overpowered. Langton followers can source foods like she does, at their local market or the Mill City Farmers Market, which she founded next to her restaurant and the Guthrie Theater on Washington Avenue. In winter you can visit the market (millcityfarmersmarket.org) the second Saturday of the month from 10AM to 1PM inside the Mill City Museum.

Warming Vegetable Soups & Stews From The Spoonriver Cookbook

Black-Eyed Pea Soup with Greens Serves 4 to 6

Ingredients 2 tablespoons olive oil or vegetable oil 1 medium onion, chopped 4 cloves garlic, chopped 1 cup dried black-eyed peas 1 teaspoon dried thyme 1 teaspoon ground cumin ½ teaspoon red pepper flakes or smoked paprika 10 cups vegetable stock or water 1 red bell pepper, diced 1 stalk celery, chopped 1 large carrot chopped 1 teaspoon salt ½ bunch kale or chard or 1 bunch spinach stemmed and chopped (2 cups lightly packed)

Directions Heat 1 teaspoon of the vegetable oil in a soup pot. When it is hot, add the onions and garlic, and sauté over medium heat for 4 or 5 minutes. Add the black-eyed peas, thyme, cumin, red pepper flakes and stock and bring it to a boil. Cover and simmer for 30 minutes. In a separate pan, heat the remaining 1 tablespoon of oil and sauté the red bell pepper, celery and carrots for 6 to 8 minutes, stirring occasionally. Add the sautéed vegetables and salt to the soup pot. Simmer for 15 minutes. Add the greens to the pot just before serving, allowing 4 to 5 minutes for the kale to cook or 2 minutes for chard or spinach to cook.

East Indian Curry with Red Lentils

Directions Sort lentils to make sure there are no stones then rinse them several times with water. Put the lentils and 3 cups of water in a small saucepan and bring to a boil; turn down heat and simmer, uncovered, until the lentils are soft, about 15 minutes. Heat the oil in a large soup pot. Sauté the onion over medium heat until soft. Add the peppers, squash, tomatoes, stock, and salt and stir. Simmer until squash is tender, approximately 10 to 12 minutes. Place a few tablespoons of coconut milk in a small bowl and stir in the red curry paste. Add this mixture to the stew. Add the rest of the coconut milk along with the cauliflower and green beans. Bring the stew to a low boil and then turn down the heat, stir in the lentils and simmer for 5 minutes.

18

Rinse the rice until the water is clear. Combine with 3 cups of water in a saucepan with 1 teaspoon salt. Bring the water to a boil, then simmer the rice, covered, over low heat for 12 minutes. Turn off the heat and let the rice sit, still covered, for 5 minutes before serving it. Serve with rice and garnish with cilantro.

Smalley’s Caribbean Barbecue offers an interesting take on traditional Caribbeanstyle cuisine, tailored to please an American palette. Owner Shawn Smalley and business partner restaurateur Tim McKee decided that if they wanted to open a true Jamaican Jerk restaurant, they needed to travel to Jamaica and learn from the natives. After courting the man everyone directed them to for the best BBQ on the island, they finally convinced him to teach them his secrets. Jamaican Jerk is made by treating meat with an allspice-heavy marinade then grilling it over hardwood oak logs that have been embellished with lots of pimento wood chips, which they import from Jamaica. In May, Guy Fieri featured Smalley’s on the Food Network’s Diners, Drive-ins and Dives. They asked Smalley to cook his jerk pork tacos and a couple varieties of chicken wings. One of the more memorable moments was when Guy and crew bit into the ultra-hot 666 wings (made from ghost peppers–one of the hottest peppers in the world) which left Fieri frantically downing some blue cheese dressing for relief. “We take a bunch of scotch bonnet (pepper) juice and reduce it to a half gallon,” says Smalley. “Then we cook all the ghost peppers in that liquid. It just concentrates and makes it mean. One day, I put my face over the pot to smell it, and it seemed fine until I was driving home... then, it was like my face was on fire, like I was sunburned really bad.” Aside from a full menu, Smalley’s has the largest rum list in the Midwest (currently at 150 rums and counting). They even boast their own house-made rum, “Kill Devil” with a dangerously high proofing, which, coupled with its sweet flavor, will either begin or end your evening. HOW HOT IS A GHOST PEPPER?

Peppers are ranked by Scoville units–the measurement used to size up a pepper’s hotness. A jalapeno is about 5,000 Scovilles but ghost peppers can hit 1 million.

DECEMBER | JANUARY 2012-13

The body (and face) of your dreams may be as easy to achieve as a few zaps and some radio waves. Today’s laser technology is better than ever at targeting cellulite, smoothing and erasing scars and stretch marks, reversing aging and sun damage and literally blasting away the bulges. by nichole day diggins Finding a woman (or a man, for that matter) who has no complaints about her (or his) body is

about as likely as finding a Renoir painting at a flea market. Young or old, ask someone which body problem plagues them most and chances are you’ll hear a whole host of complaints. And for every

person who can improve that trouble spot through diet and exercise, there are many more who will never make it go away, no matter how self-disciplined they are.

And it’s not just our bodies. Our faces are even harder to hide. If you’ve ever dealt with acne or rosacea, you know how that can affect your entire outlook. And then there are the wrinkles and sagging and folds… (oh my!).

At Transcend Medi Spa in Hudson, the lasers are busy all day every day. Owner Laurie Wall

says it’s not just women who frequent her Medi Spa. “We see all types of clients. Those who,

like me, are thrilled that there are things we can do to keep us looking young, and those who

have issues that have chiseled away at their self-confidence, like acne, port wine stains, facial hair, hyperpigmentation, scars, tattoos and rosacea to name a few. Our lasers can help take care of these things.”

scarring and sunspots - before and after fraxel / pixel treatments.

Laurie Wall, owner of Transcend Medi Spa in Hudson.

At Transcend, no matter what your complaint, there is a laser for that (breakouts, acne, sunspots, wrinkles, cellulite, scars, stretch marks, discoloration, excess volume, sagging skin – not a problem). The newest laser is the Fraxel or Pixel, short for

“fractional photothermolysis,” a revolutionary technology in which

thousands of microscopic laser columns – each one just one-tenth of the diameter of a hair follicle – treat a fraction of the skin at a time without affecting the surrounding tissue. These laser columns

stimulate the production of younger, smoother, healthier skin to The Fraxel/Pixel laser can be used on fine lines and wrinkles, stretch marks, acne and other scarring, pigmentation (to minimize

age spots), sun damage and actinic keratosis (a precancerous skin condition). Transcend started using this laser technology in 2007

and was the first facility in the Midwest to offer the newest version of Fraxel/Pixel lasers from Alma Lasers (Harmony XL platform).

How is a Fraxel treatment different from other laser skin rejuvenation procedures?

22

Fraxel laser treatment delivers the potency of ablative treatments with the gentle safety of non-ablative lasers. So you get the best of both worlds: dramatic results and less downtime.

redouxhome.com

Traditionally, two kinds of laser treatment have been available for cosmetic skin treatment: ablative and non-ablative. Typical ablative treatments, which use a high temperature to vaporize unwanted tissue, can be effective—but with significant side effects and several weeks of recovery time. Non-ablative treatments, meanwhile, have very few side effects and low downtime, but they commonly require numerous treatments to produce more modest results.

Another laser that gets a lot of use at Transcend is the Accent XL machine which tones, tightens and reduces with

truly amazing results. The first device of its kind, Accent XL bills itself as “a unique, multi-application, radio frequencybased platform for the non-invasive treatment of cellulite, skin tightening and body shaping that is virtually painless.”

Most people say the results are undeniable after just one

before after Accent treatments

treatment and even better after three or more.

“The Accent works using two different technologies,”

explains Wall. “The first is radio frequency, which causes

the fat cells to split open and the byproduct to be flushed out via the lymphatic system over several days. The second is thermal heat, which helps to regenerate collagen

and tighten the skin while tightening the fibers of muscle and fascia.”

The Accent laser can be used in conjunction with the Fraxel

laser; the Fraxel is used first to smooth the surface and the Accent to tighten and firm skin.

The Accent treatments can be done anywhere on the body but frequently are used to tone skin on the face, jaw and neck, under the upper arms, around the abdomen and the hips and thighs. Before your treatment, a technician will measure you so that afterward you know exactly how many inches you’ve lost. The treatments last about 40 minutes and allow you to resume normal activities immediately. Results are immediate, though for best results, three to six treatments may be needed.

Transcend Medi Spa client before and after acne laser treatments.

While the majority of Wall’s patients want to reduce, firm and

smooth their faces and bodies, she still treats a large number of people for acne and facial breakouts. Acne, while common

with teens, can plague anyone from puberty to middle age and beyond. Studies show acne can actually diminish a person’s quality of life and lead to depression and anxiety.

Wall says she didn’t fully realize just how profound an effect

it has on people’s lives and self-confidence until she started treating patients. “A couple years ago we ran a segment on

Twin Cities Live that featured a young woman with moderate acne and scarring whom we’d treated for a six-month period.

She underwent four photo facials and four pixel treatments, and after all eight treatments, with a clear complexion and no visible scarring, our phones rang off the hook!”

This holiday season, smooth, radiant, lit-from-within skin can

be yours. But if your holiday plans call for squeezing in a last-

minute facial at the salon, you may want to consider a trip to a Medi Spa instead. Thanks to the latest technology, a remedy is within reach.

Cure the Resolution Hiccups Hate New Year’s resolutions? Try a new approach. By Elizabeth Child

“It’s not your position but your disposition that matters,” says the fortune cookie fortune I have lying on my dresser. I haven’t been able to throw away the crumpled, discolored paper that came with last summer’s moo goo gai pan. The words remind me that we have abundance but don’t appreciate it, and that no matter how I assess each day, attitude is everything. The glass half empty can be half full if I tilt my gaze. I am always energized to make changes in the new year. My goals are typically refinements and not new. But I understand if you’re not with me. Resolutions are a turn-off for many. So I’m offering a grab bag of holistic ways to help you on your path – old or new. The practices are simple ones that everyone can fit into their day without adding the stress of a daunting goal. Don’t make another resolution that ends up in a heap with the abandoned home exercise equipment and self-improvement books. Appreciate yourself for trying When you finally get the guts to open a door to change, self-judgment comes wheeling in. It says, “I am not capable.” Or “I don’t have time for goals; I have responsibilities.” Free yourself of self-judgment on the way to a goal with one or more of these practices.

The Practice: Say to yourself: “I am attempting something difficult and I appreciate myself for trying. “ Pay close attention to your internal dialog as you engage in the challenge you’ve set forth. Do you hear internal criticism? Is the voice you hear your own or someone else’s – a parent’s? A teacher’s? What do you say to yourself when you fail? When you succeed? Can you just “do” without judging. Can you say to yourself, “I have tried something difficult and I appreciate myself for trying?”

-- From Living Your Yoga, by Judith Lasater, Ph.D, P.T. Three breaths to be present When we are trying to make changes our minds spin off into the future. Sometimes planning ahead is exciting. Sometimes it’s scary. Sometimes we lose our resolve when we think too much. Ezra Bayda offers a practice of meditative awareness anyone can do to be present – without a major time commitment. The three-breath practice helps us calm down and quells our anxiety. In truth, there is nothing but the present moment. So why not experience your life starting now?

The Practice: Allow your mind to roam. Remember a time, place or activity that generated a feeling of wonder. Returning to childhood can help. Remember where you did somersaults, pretended to be a mermaid or Davy Crockett, fished at a lake or hiked in the woods. Or remember the simplest things – watching a particular moonrise, planting tulip bulbs or watching them blossom in the spring, horseback riding, apple picking on a crisp fall day, listening to a favorite musician or poet. What are the smells, tastes, textures and sounds? Stay with the memory for several minutes. Watch your emotion shift as the energetic switch to your creative current is turned on.

From Positive Energy by Judith Orloff, M.D.

The Practice: Close your eyes or gaze softly. Take three slow breaths. With each one, feel the cooling sensation of air entering your nostrils. Sense the room around you noticing the temperature, the smell, the sounds, the feel of the cushion or mat underneath you. Bring your awareness to your whole body. Now stay with this attention and just be. – Based on the article, Three Breaths at a Time, Shabala Sun, May 2005 Recover wonder Live with appreciation for the world rather than living in fear. Cultivating a positive attitude is a conscious decision – just as choosing to dwell on fears like: I’ll never find meaningful work, I am unlovable, I am alone. When your creative mind soars, it is happy and excited. Here’s an exercise to recover wonder that can amp up your creativity.

Balance your body It’s now well accepted that our body affects our mind, emotions and spirit. When we are ill at ease in our bodies we may not feel like doing much of anything. Achieving balance in your body may need to be a priority before setting a bigger goal. Try something new to inspire you to get your physical house in order to prepare for the rest of your life!

Practices: • T’ai Chi Chih is a simple, accessible form of T’ai Chi with just 20 postures that can be done in comfortable clothing and produce a sense of serenity. • Qigong, like T’ai Chi, is calming. Studies of both show they may help improve physical function, reduce blood pressure, decrease fall risk and mitigate depression and anxiety, according to The Fundamentals of Complementary and Alternative Medicine by Marc Micozzi. • Yoga is my passion to relieve tension, stay centered and move energy. There is a yoga style for nearly everybody – whether you are overweight, have a chronic condition like arthritis or MS, suffer from anxiety or depression, or are just stiff as a board. Therapeutic yoga is the hottest trend in yoga, so if you have limitations, there is a teacher waiting to help you. Studies of its many medicinal properties are also found in the text, The Fundamentals of Complementary and Alternative Medicine. • Take a walk. Dr. Andrew Weil, celebrated health guru, suggests walking for 10 minutes a day to start – even if you have another exercise program. Walking soothes the soul and the weight bearing exercise is a great way to get your heart pumping while preventing osteoporosis for those starting an exercise program. • Take Vitamin D3. Being outdoors all day long naked in Minnesota’s dark season (all six months of it) will not produce the Vitamin D you need, said my physician recently, with a wry smile. She recommends taking at least 2,000 mg a day and getting outside every day to keep up your energy. • Don’t diet; enjoy what you’re eating instead. Do you eat unconsciously? Try eating mindfully by really tasting your food. Appreciate the colors, textures and flavors of the crisp carrot, the meaty squash, the tender slice of sustainably grown chicken, the sweet and bitter bite of dark chocolate. Slowing down the time it takes you to eat can also help you cut down the amount you eat if you’re trying to lose weight. It takes 20 minutes to register that you are full, so stretch your meal to at least 20 minutes so you don’t overeat. Elizabeth Child is a yoga instructor and communications professional in Northfield.

21 Days to Change You’ve heard that it takes 21 days to make a lifestyle change. But that can seem like an eternity, say local health and fitness teachers. They offer a few quick tips to get there a day at a time. “Walking through the door of the fitness center is the hardest part of a workout. Once you’re inside, you will do your workout. Assess whether you need the social aspect of a class, an exercise buddy or alone time as the carrot to get yourself through the door.” – Bronco Lemke, owner/trainer, SNAP Fitness and Training Center “Twenty-one days is too overwhelming to think about. Are you trying to go gluten-free? Say to yourself, ‘I can eat gluten free for just this meal.’ Are you working in a walk each day? Say, ‘I will go for a walk just today’ and when you do that each day you will get to the place where it becomes your norm.” – Amy Etzell, owner of Heartwork Yoga “It helps greatly if the rest of the family is working with you or understands what you’re working toward. I began my diet cleanup with a grocery trip with family. Everyone helped to make choices for the food in the house. In addition, it is very important to take a moment each day to consider how you feel. This is far more important than a waist measurement or a pound lost on the scale.” _ Therese Smiens, fitness trainer
